3 acorn squash, unpeeled, halved through the stem, and seeded
3 tablespoons unsalted butter, diced
3 tablespoons pure maple syrup, plus extra for serving
Good olive oil
Kosher salt and freshly ground black pepper
Flaked sea salt, such as Maldon, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the squash, cut sides up, on a sheet pan. Place 1/2 tablespoon butter and 1/2 tablespoon maple syrup in the cavity of each squash. Brush the cut sides with olive oil and sprinkle the squash with 3 teaspoons kosher salt and 1 teaspoon pepper. Roast for 40 to 60 minutes, depending on the size of the squash, until tender when pierced with a small knife.
  • Place the squash on a serving platter. If the halves are too large for one serving, cut each piece in half through the stem. Drizzle lightly with extra maple syrup, sprinkle with sea salt, and serve hot.

Bake, uncovered, 10 minutes or until glaze is heated through. ,

We love acorn squash and this is a fantastic way to prepare it. Once baked, the acorn squash is tender and tastes similar to a sweet potato casserole. Dip bites of squash into the sweet and buttery sauce. Yum!

2 medium acorn squash
8 Tbsp butter
8 Tbsp real maple syrup
1 tsp each, salt and pepper

Steps:

  • 1. Wash squash, prick all over with tines of a fork 7 or 8 times. Cook in the microwave until they start to soften. This will speed both prep and baking time.
  • 2. Slice squash lengthwise.
  • 3. Scoop out seeds.
  • 4. Spray a baking pan with nonstick spray and put about 1/2 inch of water in it. Place the squash, cut side up, in a prepared pan. Put 2 tablespoons butter and 2 tablespoons maple syrup in each squash. Sprinkle salt and pepper over all.
  • 5. Bake in a preheated 350 degree oven for about 1 hour 15, minutes, or until fork-tender. Baste squash every 20 minutes.

1 (2 lb) acorn squash, rinsed
2 tablespoons water
2 tablespoons unsalted butter, cut into pieces
2 tablespoons maple syrup
salt, to taste
1/8 teaspoon pepper

Steps:

  • Carefully cut the acorn squash in half lengthwise, and scrape out seeds.
  • Place cut side down in a microwave-safe 10 inch glass pie plate, and add the water.
  • Cover with microwave-safe plastic wrap and vent one side.
  • Microwave on high power for 12 minutes, turning the dish a quarter turn twice, until the squash is tender when pierced with a fork.
  • Let stand, covered for 5 minutes.
  • Protecting your hand with a double thickness of paper toweling, spoon out the softened squash flesh and transfer to a food processor.
  • Add the buttrer and maple syrup and process until the mixture is pureed.
  • Season to taste with salt, and pepper, and serve immediately.

5 pounds butternut squash, peeled, seeded, and cut into 1-inch pieces (10 cups)
2 cups water
1 3/4 teaspoons salt
1/3 cup pure maple syrup
3 tablespoons unsalted butter, cut into tablespoon pieces
1/2 teaspoon black pepper

Steps:

  • Simmer squash in water with 1 teaspoon salt in a 5-quart pot (water will not cover squash), covered, until squash is very tender, about 15 minutes. Reserve 1/2 cup cooking liquid, then drain squash in a colander.
  • Purée squash, syrup, and butter in batches in a food processor until smooth, adding reserved cooking liquid if purée is too thick. Transfer to a serving bowl and stir in pepper and remaining 3/4 teaspoon salt.
  • Variations:
  • • Add crumbled bacon: Cook 6 bacon slices in a 12-inch heavy skillet over moderate heat until crisp. Transfer bacon to paper towels to drain, then crumble and sprinkle over purée.
  • • Add 1 teaspoon finely grated peeled fresh ginger to purée along with pepper and salt.

When I revisited her old method, I found it was just as good as I remembered. The sweet squash filled with a big puddle of melted butter and sweet syrup is so irresistible!

  • Acorn squash is hard to cut. To halve a whole squash, plunge the blade of a large chef's knife into the side of the squash as far as it will go. Holding the handle of the knife, bang the squash (with the knife in it) on the board until the blade cuts all the way through.

2 medium butternut or acorn squash (about 3 1/2 pounds), halved, seeded
1/4 cup (1/2 stick) butter
1/2 cup finely chopped onion
1/4 teaspoon ground nutmeg
1/2 cup canned chicken broth
1/3 cup pure maple syrup

Steps:

  • Preheat oven to 400°F. Place squash halves, cut side up, on large baking sheet. bake until very tender, about 50 minutes. Remove from oven and cool slightly. Using large spoon, scoop out squash flesh and transfer to large bowl.
  • Melt butter in heavy medium saucepan over medium-low heat. Add chopped onion and ground nutmeg and sauté until onion is tender and light brown, about 10 minutes. Transfer to bowl with squash. Add chicken broth and maple syrup. Puree mixture in batches in processor until smooth, occasionally scraping down sides of bowl. Season squash puree with salt and pepper. Return puree to same saucepan. (Can be prepared 4 hours ahead. Cover and let stand at room temperature.) Stir puree over medium heat until heated through. Transfer to bowl and serve.
