PUMPERNICKEL BREAD FOR BREAD MACHINE
We love pumpernickel bread. It's great for Rueben sandwiches! You could make this into long hoagie rolls if you use only the dough setting and shape them yourself.

Steps:
- 1. Place ingredients into bread machine pan in the order given. Use basic or whole wheat setting on the machine, and operate according to manufacturer's instructions.
- 2. OR, use dough setting only. Turn dough out on oiled surface and shape your own bread. This would work well in a greased round casserole, let rise 1 hour, (can make cross mark on top after rising to allow escape of steam). Bake at 425 degrees about 25-30 minutes. You can even top with sesame seeds by using an egg wash and pressing the seeds in, as in the picture. (add seeds before baking)
- 3. OR, shape into two regular loaves and place in greased smaller bread pans (8x4 inches). Let rise until double, about 45 minutes, then bake at 375 degrees for 25-30 minutes.

- Dice the onion half into small chunks. Saute the diced onions in a frying pan with a small amount of butter or vegetable oil until golden brown.
- Unplug bread machine & remove bread pan. Pour the milk & softened butter into the bread pan first and then add the other ingredients. Place the bread machine yeast in last and the yeast should not touch the liquid, salt or the hot sautéed onions (until the bread machine is turned on and the ingredients start to be mixed together by the bread machine). You can create a little hole or ditch in the top of the flour and place the yeast in this hole in order to keep the yeast separate for the salt, etc.
