Steps:
- Mix salt, paprika, garlic powder, onion powder, and pepper in a bowl. Cut chicken into 3- to 4-inch pieces and place in a large resealable plastic bag. Sprinkle the salt mixture over the chicken in the bag. Seal the bag and shake to completely coat the chicken.
- Pour water into a multi-functional pressure cooker (such as Instant Pot®). Place the wire rack into the pot. Arrange chicken on the rack. Close and lock the lid. Select Meat/Poultry function; set timer for 50 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure using the natural-release method according to manufacturer's instructions, about 10 minutes.
- Transfer chicken to a bowl. Shred using 2 forks. Add 1/2 cup of liquid from the pot and liquid smoke; mix well. Serve on buns and top with barbeque sauce.

PULLED CHICKEN
Remake a street-food favourite, pulled pork, with juicy chicken thighs to cut the calories for a healthy taco filling

- Heat oven to 180C/160C fan/gas 4. Rub the chicken thighs with 1 tbsp of the chipotle paste and some seasoning. Mix the remaining chipotle paste with the passata, barbecue sauce, 100ml water and half the onion. Spoon the sauce into a roasting tin that will fit the chicken snugly in a single layer and add the chicken thighs. Cover tightly with foil and bake for 1 hr, then uncover, increase the oven to 200C/180C fan/gas 6 and bake for another 20 mins.
- Meanwhile, mix the remaining onion with the lime juice and some salt, and set aside while the chicken cooks. Mix all the beans in a saucepan with 100ml water and heat, ready to serve.
- When the chicken is really tender, use two forks to shred the meat into the sauce (discard the bones). Keep covered with the foil while you heat the beans for 5-10 mins until piping hot and not too wet, and warm the tacos following pack instructions. Stir the avocado and coriander leaves into the lime-onion mixture.
- Serve the pulled chicken and beans with shredded lettuce and tacos, or rice and lime wedges to squeeze over, if you like. Top with a spoonful of the avocado salsa.

- In a small bowl, mix the first 11 ingredients. Place chicken in a 3-qt. slow cooker. Pour sauce over top., Cook, covered, on low until chicken is tender, 4-5 hours. Remove chicken; cool slightly. - Heat the slow cooker to low and heat 1 tbsp oil in a pan. Brown the chicken in batches, transferring it to the slow cooker as you go. Add the remaining oil to the pan and fry the onions for 5 mins, or until just softened, then stir in the garlic and paprika and cook for another minute. Tip into the slow cooker, then swirl 100ml water around the pan and pour this in as well.
- Add the chipotle, passata, barbecue sauce, sugar and lime juice, then season and stir. Cover and cook for 6-8 hrs until the chicken is really tender. Using two forks, shred the chicken through the sauce. Serve in buns, taco shells, jacket potatoes or over rice, with coriander leaves, chillies and guacamole, if you like.

SLOW COOKER BBQ PULLED CHICKEN
This is a delicious, smoky, slow cooker dish that is easy to make, and it doesn't require a BBQ grill or smoker. My husband and I love this dish and enjoy it on freshly baked or toasted onion rolls but really any bun is fine. I serve it with fries and sometimes coleslaw. Enjoy.

- Spray a slow cooker with nonstick spray.
- Season chicken with smoked paprika, seasoning salt, barbecue seasoning, and pepper; place in the slow cooker.
- Mix barbecue sauce, Worcestershire sauce, and liquid smoke together in a small bowl. Pour over chicken, making sure chicken is completely covered.
- Cover and cook until meat can be shredded with a fork, about 6 hours on Low or 4 hours on High.

BBQ PULLED CHICKEN
In our house, we don't agree on how much barbecue sauce should be added to our pulled chicken. Some like the sauce to be dripping, and I like a minimal amount. This is a simple recipe for pulled chicken, and you may add any amount of barbecue sauce you would like. You could also use this pulled chicken as a protein for a green salad, or a filling for a taco, with a few seasoning tweaks. Or, dice it (instead of pulling it) and use in a mayonnaise-based chicken salad. However you choose to use it, you can start it on the stovetop, finish it in the oven, and have dinner on the table in less than an hour.

- Preheat the oven to 350 degrees F (175 degrees C).
- Pat chicken breasts dry with a paper towel. Season both sides with salt and pepper.
- Heat oil in a 12-inch, nonstick, oven-safe skillet over medium heat. Add chicken, skin-side down, to the hot oil and cook until lightly browned, 2 to 3 minutes. Turn and brown on the other side, 2 to 3 minutes.
- Cover the skillet and transfer to the preheated oven. Bake until an instant-read thermometer inserted near the bone reads 160 degrees F (71 degrees C), 25 to 30 minutes.
- Remove from the oven. Transfer chicken to a cutting board and cover with foil; let sit until cool enough to handle, about 10 minutes. The residual heat will bring the internal temperature to the recommended 165 degrees F (74 degrees C).
- Remove and discard skin and bones. Use 2 forks to shred chicken.
- Serve warm with barbecue sauce.

- Place chicken breasts in a large, shallow pot, and season with salt and pepper. Fill the pot with water until the chicken is just covered.
