PUFF PASTRY CHEESE AND CHIVES BASKETS



Puff Pastry Cheese and Chives Baskets image

Flaky puff pastry baskets with melted cheese filling are fabulous bite-sized appetizers that will dazzle your guests.

6 tablespoons ricotta cheese
6 tablespoons mozzarella cheese, grated
6 tablespoons swiss cheese, grated
1/2 teaspoon sea salt
1 teaspoon pepper
chives, chopped
2 sheets fresh puff pastry (or frozen, thawed)

Steps:

  • In a bowl, mix and combine ricotta, mozzarella, Swiss cheese, sea salt, pepper and chives. Set aside.
  • Cut six circles measuring approximately 7 cm in diameter from each sheet of puff pastry and then line the same number of muffin silicone moulds with the pastry, using your fingers to press the dough up the sides.
  • Fill each basket evenly with the cheese and chive mixture and bake in the oven at 200°C for about 15 minutes, until the pastry is puffed and golden and the filling melts.
  • Allow the basket cool a little, remove them from silicone moulds, sprinkle with chopped chives and serve with cherry tomatoes.

These are quick, fabulous, and definitely a crowd pleaser :) hope you enjoy them! They will keep in a tightly covered container for about 4 days, but they are best served right from the oven. Instead of using the herbs you can also try this recipe using poppy seeds or caraway seeds!

1 cup freshly grated parmesan cheese
2 teaspoons dried oregano
2 teaspoons dried thyme
1 teaspoon garlic powder
1 1/4 teaspoons fresh ground black pepper
2 tablespoons sesame seeds
2 eggs
1 (1 lb) package frozen puff pastry

Steps:

  • Preheat your oven to 400°F.
  • Then take a bowl, and a cheese grater (or food processor) and grate cheese into the bowl, or in the food processor.
  • Add your herbs, garlic powder, pepper and sesame seeds to the cheese, and stir to combine.
  • Beat eggs in a long baking dish.
  • Dip both sides of defrosted dough in the beaten eggs and dredge it lightly in the cheese mixture.
  • Then take the seasoned sheets of dough and place them on sheets of wax paper.
  • Using a pastry wheel, cut dough into 6x1 inch strips.
  • Then take those strips, and twist each of them into spiral shapes and place about 1 inch apart from one another on a foil-lined baking sheet.
  • Bake your cheese sticks in the oven and bake for approximately 15 minutes.
  • Using a wide spatula, carefully remove from pan and serve.
