SPICY STIR-FRY WITH SCALLOPS



Spicy Stir-Fry with Scallops image

3 tablespoons peanut oil
1/2 cup low-sodium soy sauce
2 tablespoons rice wine vinegar
2 tablespoons packed brown sugar
1 1/2 tablespoons cornstarch
1 tablespoon minced fresh ginger
About 2 teaspoons sriracha (more or less to taste)
1 pound scallops (16/20), cleaned
One 15-ounce can baby corn, cut in half crosswise
1 yellow summer squash, diced
1 head broccoli, cut into florets
8 ounces fresh snow peas, trimmed
1 Fresno or Thai chile, sliced thin
Jasmine rice, for serving
3 scallions, sliced thin
1/4 cup fresh cilantro leaves

Steps:

  • Heat a large nonstick skillet over medium-high heat and add the peanut oil.
  • In a bowl, mix together the soy sauce, vinegar, brown sugar, cornstarch, ginger and sriracha. Set aside.
  • Add the scallops to the skillet and sear until nice and browned, 2 minutes per side. Remove to a plate.
  • Crank up the heat to high. Add the baby corn, squash and broccoli and cook, stirring everything around, for 2 minutes. Then add the snow peas and chile pepper and continue to cook for about 1 minute.
  • Give the reserved sauce a quick stir and add it to the skillet along with 1/2 cup water. Continue to cook until the sauce thickens, about a minute or two. Add the scallops back to the skillet and gently stir to coat them in the sauce.
  • Serve immediately over rice and garnish with the scallions and cilantro.

1 pound fresh asparagus, cut into 2-inch pieces
2 cups sliced fresh mushrooms
1 small onion, sliced
½ pound medium raw shrimp, peeled and deveined
½ pound raw scallops
1 tablespoon dried parsley
2 cloves garlic, minced
½ teaspoon salt
½ teaspoon ground black pepper
3 tablespoons lemon juice

Steps:

  • Melt 1 tablespoon butter in a large skillet over medium heat. Add asparagus, mushrooms, and onion; stir-fry until tender yet still firm to the bite, about 5 minutes. Transfer to a plate.
  • Melt remaining butter in the same skillet. Stir-fry shrimp and scallops until almost opaque, about 2 minutes. Stir in parsley, garlic, salt, and pepper; cook for 1 minute more. Return cooked vegetables to the skillet; stir in lemon juice. Cook and stir until heated through, 2 to 3 minutes.

1 teaspoon garlic clove, chopped
1 lb flank steak, cut into 1-inch peices
1 bunch broccoli, cut into flowerets
1 lb sea scallops
1/4 cup chopped scallion
1 1/2 tablespoons water
2 tablespoons light soy sauce
2 tablespoons hoisin sauce
1/4 teaspoon sugar
1/4-1/2 teaspoon ground ginger
1/8 teaspoon red pepper flakes
1/2-1 teaspoon salt
1/4 teaspoon white pepper

Steps:

  • In a skillet or wok, heat peanut oil on med-high heat until almost smoking. Add garlic, sliced beef and broccoli flowerets; stir fry for 1-2 minutes.
  • Stir in scallops and scallions, and stir-fry for about 1-2 minutes.
  • Add water, soy sauce, hoisin sauce, sugar, ginger, red pepper flakes, salt, and white pepper.
  • Stir-fry for another 2-3 minutes or until scallops are opaque and broccoli is crisp-tender.
  • If desired, serve over hot cooked rice or noodles.

  • RINSE SCALLOPS WELL, PAT DRY.

1 tablespoon cornstarch
1 teaspoon sugar

3 teaspoons canola oil, divided

Steps:

  • If scallops are large, cut in half and set aside. In a small bowl, combine the cornstarch, sugar and salt. My husband makes this for us about once a week. It is so wonderful that I had to post it. We often use chicken instead of scallops and substitute different types of cabbage. It always turns out delicious. The garlic is KEY! :)

2 lbs scallops, quartered
3 cups bok choy, chopped
3 cups broccoli florets
1 cup bell pepper, sliced
1 1/2 cups green onions, chopped
5 garlic cloves, finely chopped
1 cup water chestnut
1 cup bamboo shoot
1/2 cup cashews
1/2 cup olive oil
1/4 cup rice wine vinegar
soy sauce

Steps:

  • Heat half of the olive oil in a large pan over very high heat. Add scallops and cook until just done. Remove and set aside.
  • Add broccoli and bok choy. Saute until they begin to brown and add bell peppers, onions and garlic. Pour in half of the rice wine vinegar, more olive oil and some soy sauce.
  • When vegetables are almost fully cooked, return the scallops to the pan. Add water chestnuts, bamboo shoots, remaining olive oil, rice wine vinegar and soy sauce. before serving add cashews and allow them to cook for a minute.
  • Serve immediately over a bed of white rice.
  • NOTE: The scallops tend to lose a lot of moisture into the pan. It is sometimes necessary to drain off the excess liquid, and return the pan to the stove for a moment before serving.
