Loaded Pub Fries - just like the pub fries from your local pub, just made at home, healthier and yummier.

8 slices turkey bacon (cut in small pieces and cooked crisp)
4 large potatoes (or 6 medium)
1 tablespoon melted butter
1 tablespoon olive oil
1/2 teaspoon garlic powder
1 teaspoon paprika
salt and pepper to taste
1 cup sharp cheddar cheese (shredded)
3 green onions (chopped)
2 tablespoon sour cream

Steps:

  • Preheat oven to 425 degrees.
  • Peel the potatoes, if preferred, and cut into equal size wedges. Wash potato wedges and place them in a bowl. Pour butter and olive over potatoes, add garlic powder, paprika, salt and pepper; toss potatoes with spices and butter. Pour the potatoes to a large baking sheet and bake for about 30 to 45 minutes or until nice and golden and crisp.
  • You can now leave the potatoes on a baking sheet or place them in an oven safe skillet. Top the oven fries with the cheese and place them under the broiler for 2 minutes or until cheese melts.
  • Top oven fries with sour cream, green onions and turkey bacon.

With lots of topping options, crispy chips, and a hearty mushroom-beef blend, these loaded pub chips make any meal a party!

3 large baking potatoes, thinly and evenly sliced
1/2 tsp salt
1/2 tsp paprika
1/4 tsp black pepper
1 garlic clove, minced
1/2 lb ground beef
1 pint cremini mushrooms, finely chopped
2 tbsp olive oil
1 tbsp taco seasoning
salt & pepper

Steps:

  • Preheat oven to 425 degrees. Cover two baking sheets with foil and spray with cooking spray. Set aside.
  • Place sliced potatoes in a single layer, covering the foiled baking sheets. You may have enough slices for a third baking sheet; if so, set those aside and bake them according to the same instructions after the first set are baked.
  • Bake at 425 degrees for about 15-18 minutes or until potatoes are nice and crispy without being burnt. I like to rotate pans halfway through the baking time for even baking.
  • While potatoes are baking, prepare a large skillet with olive oil over medium-high heat. Add garlic, ground beef, and mushrooms. Stir and cook until the meat is fully cooked, which takes about 6-8 minutes. Add taco seasoning once meat is cooked, and stir to coat the blended mixture evenly. Remove from heat and place in a bowl until you're ready to serve.
  • To prepare the Loaded Pub Chips bar, place the crispy potatoes in a serving platter or a baking sheet lined with parchment paper. Place your choice of fixings in separate bowls. I like to gather them together in one place, like on a rimmed baking sheet. Serve immediately.

1 gallon safflower oil
4 large russet potatoes
kosher salt, to taste
2 cups flour
1 tablespoon baking powder
1 teaspoon kosher salt
1/4 teaspoon cayenne pepper
1 dash Old Bay Seasoning
1 (12 ounce) bottle beer, cold
1 1/2 lbs cod, cut into1-ounce strips
2 cups cornstarch (for dredging)

Steps:

  • Directions.
  • Heat oven to 200 degrees F.
  • Heat the safflower oil in a 5-quart Dutch oven over high heat until it reaches 320 degrees.
  • Using a V-slicer with a wide blade, slice the potatoes with the skin on. Place in a large bowl with cold water.
  • In a bowl, whisk together the flour, baking powder, salt, cayenne pepper, and Old Bay seasoning. Whisk in the beer until the batter is completely smooth and free of any lumps. Refrigerate for 15 minutes. Note: The batter can be made up to 1 hour ahead of time.
  • Drain potatoes thoroughly, removing any excess water. When oil reaches 320 degrees, submerge the potatoes in the oil. Working in small batches, fry for 2 to 3 minutes until they are pale and floppy. Remove from oil, drain, and cool to room temperature.
  • Increase the temperature of the oil to 375 degrees. Re-immerse fries and cook until crisp and golden brown, about 2 to 3 minutes. Remove and drain on roasting rack. Season with kosher salt while hot and hold in the oven.
  • Allow oil to return to 350 degrees. Lightly dredge fish strips in cornstarch. Working in small batches, dip the fish into batter and immerse into hot oil. When the batter is set, turn the pieces of fish over and cook until golden brown, about 2 minutes. Drain the fish on the roasting rack. Serve with malt vinegar.

Making homestyle potato chips is fun and easy. Guaranteed they won't last long! A food processor with a slicing attachment is very helpful. Experiment with the thickness; you may like them thicker or thinner. I like to use olive oil because it has less trans fats, but you can use safflower, corn, or peanut oil as well as vegetable oil.

4 medium potatoes, peeled and sliced paper-thin
3 tablespoons salt
1 quart oil for deep frying

Steps:

  • Place potato slices into a large bowl of cold water as you slice. Drain, and rinse, then refill the bowl with water, and add the salt. Let the potatoes soak in the salty water for at least 30 minutes. Drain, then rinse and drain again.
  • Heat oil in a deep-fryer to 365 degrees F (185 degrees C). Fry potato slices in small batches. Once they start turning golden, remove and drain on paper towels. Continue until all of the slices are fried. Season with additional salt if desired.

My husband and I were served this incredible appetizer at an Italian restaurant a few weeks ago. Made with just a few simple ingredients, it packs a huge punch of sweet, salty and savory flavors. We couldn't wait to come home and make it again. What a great addition to your summer grilling menus!

1 - 8 oz. bag of pub chips, kettle cooked chips or your own homemade potato chips (...you need a sturdy potato chip to pick up all of the other ingredients.)
SWEET BALSAMIC DRIZZLE (THIS WILL MAKE MORE THAN YOU NEED. SAVE FOR ANOTHER USE.)
1 - 16 oz. bottle of balsamic vinegar
3/4 - cup white sugar
1 - pinch of salt
TOPPINGS
1/2 - pint (about 1 cup) quartered grape tomatoes
3-4 - oz. crumbled feta cheese
3 - green onions, green tops only, sliced
1/3-1/2 - cup prepared sweet balsamic drizzle (recipe above)

Steps:

  • FOR SWEET BALSAMIC GLAZE/DRIZZLE: Add balsamic vinegar, sugar and salt to a 4 qt. saucepan. (Save balsamic vinegar bottle.) Bring to a low boil while stirring. Continue at a low boil, stirring every few minutes, for 20-30 minutes or until the glaze becomes syrupy and coats the back of a spoon. Allow to cool to room temperature. This recipe will make more glaze than you need, so store cooled balsamic syrup in the balsamic vinegar bottle for up to two weeks.
  • Arrange pub chips on a serving platter. Drizzle with approximately 1/4 cup (...or to taste) of the sweet balsamic glaze over the chips. Top with feta cheese crumbles, then tomatoes, then green onion tops. Drizzle with up to 1/4 cup, or to taste, additional sweet balsamic glaze. Serve immediately. (Refrigerate remaining glaze from recipe for another use. Glaze is wonderful on chicken, steak, shrimp... almost anything.)

Also known as beer cheese, a creamy spreadable cheese often found at bars and casual eateries. It's also a good item to incorporate into a charcuterie or snack board. Serving suggestions are carrots, celery, crackers, crostini, pretzels, or pita chips.

2 fluid ounces lager beer at room temperature, or more if needed
10 ounces freshly grated sharp Cheddar cheese
½ (8 ounce) package cream cheese, at room temperature
½ tablespoon Worcestershire sauce
2 teaspoons dry mustard powder (such as Colman's®)
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon finely chopped fresh chives

Steps:

  • To quickly remove any carbonation, pour the room temperature beer into a bowl, and whisk occasionally for 5 to 10 minutes.
  • Combine Cheddar cheese, cream cheese, Worcestershire, mustard powder, garlic powder, and onion powder in a food processor. Pulse until the ingredients are mixed.
  • Turn food processor to high and slowly pour in beer through the feed tube; blend until smooth. If mixture is too thick, add a bit more beer to reach your desired consistency.
  • Transfer to a serving bowl and sprinkle with chopped chives. Store in the fridge, tightly covered, for up to 10 days.
