FRANGIPANE-PRUNE TART

Prunes, or dried plums, are a delicious, often underrated baking ingredient in the United States. In France, the fruit is used in sweet and savory recipes, including this one for a popular dessert filled with frangipane, or buttery almond cream, and plenty of plumped fruit, baked together until the filling turns a golden brown on top and the prunes are as sweet and tender as caramels. You could use a store-bought pie or tart shell, slightly parbaked before filling it up, or follow a recipe for an all-butter pie crust.

1 cup Earl Grey tea, hot
9 ounces (250 grams) prunes, pitted and halved
1 1/2 cups (135 grams) sliced almonds, plus 1 tablespoon for garnish
3/4 cup (165 grams) sugar
1/2 teaspoon salt
6 tablespoons (90 grams) butter
2 eggs
1 tablespoon brandy
1/2 teaspoon almond essence (optional)
1 9-inch parcooked tart shell (see recipe)
1 teaspoon icing sugar, for garnish

Steps:

  • Preheat the oven to 375. In a bowl, pour the hot tea over the halved prunes, and let the fruit rehydrate while you make the almond filling.
  • Put almonds, sugar and salt in a food processor, and pulse just until ground (be careful not to overprocess, or the filling will become a hard paste). Add the butter, eggs, brandy and almond essence, if using, and pulse just until smooth.
  • Drain prunes well, pressing out any excess liquid with your hands, and place in the tart shell, more or less in an even layer. Spoon on the almond mixture, smoothing it with the back of the spoon, then sprinkle over remaining sliced almonds. Bake for 25-30 minutes, or until the top is a nice golden brown. Dust with icing sugar, and let cool before serving.

Until my move to France, I really didn't feel one way or the other about prunes. But as I've traveled the country, I've discovered the wonders of this rich dried fruit. Something happens to the prunes in this tart as they bake, turning them into almost a sweet, compact candy. Be sure to make a good, strong tea (I used about one tablespoon of loose Earl Grey tea leaves to the two cups of water) for soaking the prunes.

1 partially prebaked and cooled flaky sweet pastry shell
2 cups strong black tea
1 pound prunes, pitted
1/4 cup whole unblanched almonds
1 large egg, slightly beaten
5 tablespoons granulated sugar
2 tablespoons plum eau-de-vie or brandy
3/4 cup heavy cream
1 tablespoon confectioners' sugar

Steps:

  • At least one hour before preparing the tart, pour the hot tea over the prunes and set aside to marinate.
  • Preheat the oven to 375 degrees.
  • Prepare the cream filling. In a spice grinder or the bowl of a food processor, grind the almonds to a fine powder. Thoroughly blend the almonds with the egg, sugar, brandy and cream. The mixture should be very smooth.
  • Thoroughly drain the prunes, discarding the soaking liquid. Carefully arrange the prunes in the cooled, prebaked tart shell. This will seem like a lot of prunes, and you may have to arrange them in two layers. Pour the cream filling over the prunes and place the tart in the center of the oven.
  • Bake until the cream filling has set and the tart shell is nicely browned, about 45 minutes. Remove from the oven and sprinkle with confectioners' sugar.

250g no-soak prunes , halved
4 tbsp brandy
25g cocoa powder
100g plain chocolate (at least 70% cocoa solids), in pieces
50g butter
175g golden caster sugar
4 large egg whites
85g plain flour
1 tsp ground cinnamon
lightly whipped cream or crème fraîche , to serve

Steps:

  • Put the prunes and brandy in a small bowl and leave to steep for about 30 minutes until most of the brandy has been absorbed.
  • Preheat the oven to 190C/Gas 5/fan oven 170C. Grease a 23cm/9in loose-bottomed cake tin or springform tin. Put the cocoa, chocolate, butter and 140g/5oz of the sugar in a pan, add 100ml/31⁄2fl oz hot water and gently heat until the mixture is smooth. Leave to cool slightly.
  • Whisk the egg whites to soft peaks, then gradually whisk in the remaining sugar. Sift the flour and cinnamon over and gently fold in with a metal spoon, until almost combined. Add the chocolate mix and fold in until evenly combined.
  • Pour the mixture into the tin and arrange the prunes over the top (they will sink into the sponge during baking). Sprinkle over any remaining brandy and bake for about 30 minutes until just firm. Serve with cream or crème fraîche.

1 cup all-purpose flour
1/4 cup toasted ground almonds
1 tablespoon sugar
Dash salt
1/2 cup cold unsalted butter
2 to 4 tablespoons ice water
FILLING:
1-1/2 cups slivered almonds, toasted
2 tablespoons unsalted butter
1 ounce unsweetened chocolate, chopped
2 large eggs, room temperature
1/2 cup sugar
1/3 cup golden syrup or light corn syrup
1-1/2 tablespoons Armagnac or Cognac
1/4 teaspoon vanilla extract
1/8 teaspoon salt

Steps:

  • In a large bowl, mix flour, ground almonds, sugar and salt; cut in butter until crumbly. Gradually add ice water, tossing with a fork until dough holds together when pressed. Shape into a disk; wrap in plastic wrap. Refrigerate 1 hour or overnight., Preheat oven to 350°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; press onto bottom and up sides of an ungreased 9-in. tart pan with removable bottom. Place on a baking sheet. For filling, sprinkle slivered almonds over crust. In top of a double boiler or a metal bowl over hot water, melt butter and chocolate; stir until smooth. Remove from heat. In a large bowl, beat eggs and sugar until thick and lemon-colored. Beat in golden syrup, Armagnac, vanilla and salt until well blended. Gradually beat in chocolate mixture. Slowly spoon filling over almonds. Bake until set, 35-40 minutes. Cool completely on a wire rack.,

  • Using a food processor, almonds and almond flour together until almonds are coarsely chopped. Add the maple syrup and melted coconut oil. Pulse until the mixture is combined and crumbly. See photo above.
  • Using floured fingers or the bottom of a flat and lightly floured measuring cup, press the dough evenly into a 9-inch tart pan. You want it extremely tight in the pan. Set tart pan on a baking sheet and bake for 10-12 minutes or until lightly golden brown. (Pie weights are optional for pre-baking. I don’t use them with this crust, but you absolutely can!)
  • Remove from the oven and place on a wire rack so it can slightly cool as you prepare the filling.

  • For the filling, put the prunes, brandy and vanilla in a bowl. Pour on the boiling water and leave to soak for several hours or overnight.
  • To make the pastry, sift the flour, icing sugar and cocoa together. Add the diced butter and rub it in lightly with your fingertips until the mixture looks like fine breadcrumbs.
  • Mix the egg yolk with the lemon juice and water. Use a table knife to work the liquid into the flour. Add a splash more water if you need to. When the dough begins to stick together, use your hands to gently knead it into a ball.
  • Roll out the pastry on a lightly floured surface large enough to line a 23cm/9in loose-based tart tin, 3.5cm/1½in deep, leaving excess pastry hanging over the edge.
  • Bake blind for 15 minutes, then remove the parchment and baking beans and return to the oven for about eight minutes, or until the pastry looks dry.
  • Use a small, sharp knife to trim away the excess pastry from the edge. Use a tiny bit of the reserved raw pastry to patch any cracks or holes if necessary.
  • For the filling, put the chocolate and cream in a basin over a pan of simmering water, without letting the basin touch the water. Leave it until the chocolate has just melted, stirring from time to time.
  • Pour the chocolate and prune mixture into the tart case. Bake for 20–25 minutes, or until almost set, with a bit of wobble still in the centre. Leave in the tin to cool completely.
