HAROSET FOR PASSOVER



Haroset for Passover image

Sweet and tasty Haroset is made with apples, cinnamon, honey and sweet wine. Serve chilled or at room temperature.

6 apples - peeled, cored and chopped
1 cup finely chopped walnuts
½ teaspoon ground cinnamon
1 teaspoon white sugar
3 ½ teaspoons honey
⅓ cup sweet red wine

Steps:

  • Place the apples and walnuts into a large bowl. Mix together the cinnamon and sugar; sprinkle over the apples. Stir in the honey and sweet wine. Serve immediately, or refrigerate until serving.

Number Of Ingredients 5

2 cups dry red wine
1/2 cup sugar
Grated rind and juice of 1/2 orange
1 pound dried figs
1 1/2 teaspoons ground cardamom

Steps:

  • In a saucepan, bring the wine, sugar and orange rind and juice to a boil over medium heat. Simmer for 10 minutes, uncovered.
  • Add figs, cover and simmer until softened, about 30 minutes. Remove from the heat; cool to room temperature.
  • In a food processor, place the figs, cooking liquid and cardamom. Blend until well ground.

Sweet red wine is not overpowering, it almost adds a light tanginess to the fruit. Walnuts and raisins are the perfect complements to the apples. We tried this with matzo...

6 medium apples (peeled or unpeeled), chopped finely
1 c chopped walnuts, chopped finely
1/2 c raisins
1/3 c sweet red wine (or grape juice)
2-3 tsp honey
1/2 tsp cinnamon

Steps:

  • 1. In a large bowl, combine the apples, walnuts, and raisins.
  • 2. Sprinkle the cinnamon over the apples.
  • 3. Stir in wine (or juice).
  • 4. Stir in the honey.
  • 5. Mix well.
  • 6. Serve immediately or refrigerate until serving. This is great spread on matza or other cracker but can be eaten just as is.

PEAR HAROSETH WITH PECANS AND FIGS

1 cup pecans, toasted and finely chopped
1 cup dried figs, finely chopped
2 cups finely diced just-ripe unpeeled pears
1/2 cup peeled, finely diced, crisp and slightly tart apple
1 teaspoon ground cinnamon
3 tablespoons honey
3 tablespoons Passover sweet wine
Zest and juice of half a lemon

Steps:

  • In a glass or ceramic bowl, lightly toss the pecans, figs, pears and apple.
  • Add the cinnamon, honey, wine, lemon zest and juice. Toss lightly to blend well. Cover and refrigerate for at least 1 hour before serving.
