CARROT OATMEAL MUFFINS



Carrot Oatmeal Muffins image

This recipe is from the book, "Devil's Food Cake Murder", by Joanne Fluke.

1 1/2 c flour
1 c oats, quick cooking
1 Tbsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1/2 tsp cardamom
1/2 c brown sugar
3/4 c finely shredded carrots, packed
1/2 c golden raisins
1/2 c milk
1 egg, beaten
5 Tbsp butter, melted
1 tsp vanilla

Steps:

  • 1. Preheat oven to 375*. Prepare a 12-cup muffin pan with food release spray. Set aside.
  • 2. In a large mixing bowl combine the flour and oats. Sprinkle in the baking powder, baking soda, and spices. Mix thoroughly.
  • 3. Stir in the brown sugar, mixing until well blended. Set aside.
  • 4. Shred the carrots -- a fine shred is best. Add the shredded carrots and the raisins to the bowl. Mix thoroughly.
  • 5. In a separate small bowl, combine the milk, beaten egg, melted butter, and vanilla. Stir to combine thoroughly.
  • 6. Add the liquid ingredients to the dry ingredients. Stir gently, just until combined.
  • 7. Fill the muffin cups 3/4 full. Bake at 375* for 20-25 minutes, or until it passes the toothpick test.
  • 8. Allow the muffins to cool on a wire rack for 10 minutes. Slide the blade of a knife around the edge of the cups to loosen the muffins, and gently pry them out. Cool completely on a wire rack.
  • 9. NOTES: 1) I recommend a DeMarle muffin pan! 2) If you don't have cardamom, just use all cinnamon. 3) You can use regular raisins if you don't have golden.

WATERMELON COOKIES

This comes from the book Apple Turnover Murder by Joanne Fluke. It can be adapted to your liking by using any flavor of Kool-Aid.

1 16 oz pkg watermelon kool-aid powder (don't get the kind with sugar or sugar substitute added.)
1 2/3 c sugar
2 1/2 stick butter, softened
2 eggs, beaten
1/2 tsp salt
1 tsp baking soda
3 c flour
1/2 c sugar, in a separate bowl

Steps:

  • 1. Preheat oven to 325 degrees F. Spray cookie sheets with nonstick cooking spray.
  • 2. Mix the watermelon Kool-Aid (or whatever flavor you choose) with the white sugar.
  • 3. Add the softened butter and mix until it's nice and fluffy. Add the eggs and mix well.
  • 4. Mix in the salt and the baking soda. Make sure they're well incorporated. Add the flour in half-cup increments, mixing after each addition.
  • 5. Roll dough balls one inch in diameter with you hands.
  • 6. Roll the cookie balls in the bowl of white sugar and place them on the cookie sheet, 12 to a standard-size sheet.
  • 7. Bake for 10 to 12 minutes or until they are just beginning to tun golden around the edges. Don't over-bake.
  • 8. Let the cookies cool on the cookie sheets for no more than a minute, and then remove them to a wire rack to cool completely.

Number Of Ingredients 4

1-1/2 lb uncooked, lean ground meat (you can use hamburger, pork, chicken, turkey, lean sausage, or venison - any ground meat will do.) (you can also used leftover meat cut in small pieces.)
2 can(s) cream of anything soup (i like cream of mushroom the best.)
1 lb package frozen potato nuggets (i have also used french fries cut into pieces and hash browns. they worked equally well for me.)
1 c shredded cheese (again, i have used several different cheeses, and i sometimes mix the cheeses in the same dish)

Steps:

  • 1. Spray a 9 inch x 13 inch cake pan with non-stick cooking spray. (I have also just lightly greased my pan with cooking oil or shortening.)
  • 2. Put the meat in the bottom of the pan; spread it out as evenly as you can. Spread it out with your hands or the back of a spatula.
  • 3. Add the two cans of cream of anything soup on top of the meat. Spread the soup evenly. (Use the soup fully condensed; DO NOT DILUTE.)
  • 4. Put the frozen potatoes on top of the soup in a single layer and spread out evenly.
  • 5. Spread cheese evenly over the potatoes.
  • 6. Place, uncovered in a 400 degrees F. oven. Bake for 35 - 40 minutes, or until the potatoes on top are browned and crispy. (If you use a glass pan, it may bake a little faster.)
  • 7. NOTE: I season the meat before I add it, and I season my potatoes before adding them. I don't usually add much salt, but I do add a little to the meat and potatoes. We like LOTS of garlic, so I add garlic and onions to the meat.
