GRILLED PRIME RIB BONES WITH DEVILED MUSTARD-HORSERADISH SAUCE
The sauce for this must be made a day ahead and refrigerated overnight to blend flavors, then the ribs have to marinade in the sauce 8-24 hours, so plan a day ahead! This sauce has a definite "kick" to it, but you can adjust the cayenne, hot sauce and horseradish to taste.

Steps:
- Make this sauce a day or even days ahead and cool.
- For the sauce, heat the oil and butter over medium-high heat in a heavy saucepan.
- Saute the onions for about 5 minutes until softened.
- Add in the minced garlic, brown sugar, lemon juice, thyme and cayenne pepper; cook stirring for about 3 minutes.
- In a bowl, whisk together Dijon mustard, yellow mustard, Worcestershire sauce, horseradish, salt, pepper and hot sauce; add into the onion/garlic mixture; mix to combine with a wooden spoon and bring to a simmer.
- Cook/simmer the sauce for about 30 minutes over very low heat to blend flavors, adjusting salt, cayenne pepper and hot sauce.
- Cool the sauce to room temperature then refrigerate overnight to blend the flavors.
- The following day, in a large dish arrange the beef ribs in a single layer.
- Pour the cooled sauce over the ribs and turn to coat on both sides, using clean hands to rub the sauce well over all the meat.
- Cover and refrigerate for a minimum of 8-24 hours.
- When ready to grill reserve the marinade.
- Season the ribs with seasoning salt and pepper.
- Grill over medium heat turning occasionally and brushing with the marinade.
- Delicious!
DEVILED PRIME RIB BONES
I found this recipe while ISO another recipe for "Beef and Barley Soup". I just could not throw out the beautiful ribs from our "Christmas Prime Rib". These sound delicious, but I will have to make them with the ribs from our next Prime Rib. (DH won the coin toss between these or soup) I'm posting it now, knowing there are a lot of beautiful prime rib bones around this time of year. This seems like such a simple way to make use of them, besides throwing them into the garbage or to the dog. "Sorry Rover" You could always mix up the seasonings and use garlic, thyme, rosemary, Dijon, or horseradish; panko instead of breadcrumbs... infinite possibilities

- Preheat the broiler to high.
- Melt the butter in a small saucepan; remove from heat and stir in the mustard, cayenne and Worcestershire; season to taste with salt and pepper.
- Brush the ribs with the melted butter mixture; roll in the bread crumbs, coating well.
- Place on a broiler pan and broil, turning occasionally and basting with remaining butter, until golden brown, 12 to 15 minutes.

- Prepare Mustard Marinade and pour over ribs; turn to coat.
- Cover and let stand for about 2 hours.

ROASTED PRIME RIB BONES OR BEEF SHORT RIBS
I have made this recipe many times using baby back pork ribs, the sauce from this is amazing, I have even added in a bottle of barbecue sauce in with the other ingredients! All ingredients can be doubled and adjusted to suit taste ---I most always serve these ribs with homemade fries or potato pancakes, see my recipe#129156 --- If you prefer a more spicy sauce just increase the cayenne or add in some crushed chili peppers to taste --- make certain to roast the bones in the oven for about 45 minutes before cooking them in the sauce it improves the flavor.

- Prepare and grease a casserole or baking pan (large enough to hold ribs and sauce).
- Season prime rib bones (baby back pork ribs if using) with seasoning salt, pepper and garlic powder.
- Place the ribs in the casserole dish, and bake uncovered in a 350 degree oven for about 45-50 minutes; drain any fat.
- In a bowl mix together the garlic, ketchup vineger, both sugars, chili powder, cayenne pepper and mustard powder; mix well to combine.
- Add in chopped onions; mix well.
- Pour the sauce over ribs, and mix with your hands to coat the ribs.
- Bake uncovered for about 1 - 1-1/2 hours or until the beef (or pork) ribs are tender (baste occasionally, and season sauce salt and pepper if desired).

COTTAGE PIE
When my husband makes mashed potatoes, he makes mashed potatoes - we have them for days on end. I found this recipe in the "Staff Meals from Chanterelle" cookbook and made it my own; it calls for making your own mashed potatoes, but I used the leftover ones. I am not including the instructions for making the mashed potatoes, as I will always be using his own ones (so sub your own recipe). However - this was an absolutely DELICIOUS take on comfort food, perfect for a chilly night. It also went very quickly in terms of prep (no making of mashed potatoes, remember), making it easy for a weeknight meal. We loved it, and I love that I could use ketchup on it. Every time we make mashed potatoes for something else, we're making this the next night (but I would also make mashed potatoes for it, it was that good).

- Have your mashed potatoes prepared, and set aside.
- Heat oil in large skillet over medium heat; add ground beef, breaking up well with spoon and stirring frequently, and cook until meat has lost its color and is beginning to brown.
- Remove skillet from heat, and pour off any fat or juices that have collected. Season beef with ketchup, paprika, salt, and pepper. Transfer to a 13x9 baking dish, and spread meat in an even layer.
- Wipe out skillet and preheat oven to 400 degrees.
- Add peas, corn, and cream to skillet, and bring to a boil over high heat. Cook until cream is reduced and thickened, 3 to 5 minutes. Pour the mixture over the meat in baking dish.

PRIME RIB COTTAGE PIE (AKA PâTé CHINOIS IN QUEBEC)
So here is that start; yesterday I chose the prime rib, bones, mashed potatoes, and mashed sweet potatoes. Here is a transformation to a comfort food that you would not expect from a cut of meat like prime rib. (Hey, you could even do this with a roast if you like, I just happen to have the Lah-ti-Dah prime rib!)

- Sweat the onions, carrots and celery together with a tiny bit of canola oil; cook for 5 minutes until translucent.
- Meanwhile, pick meat off of rib bones; chop into small pieces. I know this is a PIA, but trust me - it is worth it. You can save the bones for your next veal stock exercise. If not - freeze them anyway, because we will do it here one day!
- Remove fat from prime rib; cut the remaining meat into small dice. You can do what you like with the fat - I like to rub it on my face for those creamy looking cheeks. (I am not serious! Give it to your dog if you like.).
- Add meat to the pan; sweat for a minute or two to warm through.
- Add red wine; reduce to 1/10th. Do this gently or risk toughening the meat. That would not be nice, would it?.
- Add jus, reduce until the mixture thickens and coats the prime rib like a gravy. If you do not already love the smells of this dish, go to the doctor now, because something is wrong with you.
- Combine potatoes together, careful not to completely combine the two. You would like to have some interest in the dish, no? Marbled looks better than orange. It might even be a conversation piece. Sure.
- Adjust the seasoning of the potatoes and meat mixture with salt and pepper. No going back now, so get it right. Does it need more salt? Pepper?.
- Ladle the mixture into your serving dishes. You can either go big or you can go individual.
- Cover the meat/gravy mixture with the combined mashed potatoes; smooth to cover the meat.
- Score the top with a fork; brush with melted butter. Don't do it so hard you wreck your rows. Trust me, that sucks.
- Sprinkle paprika on top of potatoes.I said sprinkle, avoid clumps. One way is with a small strainer.
- Bake in 175 °C (350 °F) oven for 35-40 minutes or until the top is browned and the meat mixture is threatening to bubble through.

- Put peeled and quartered potatoes into a medium soup pot and cover with water. Bring to a boil and simmer for 15-20 minutes, until the potatoes are very tender. Drain and add the milk, 1 Tbsp butter, ¾ tsp salt, garlic powder, and black pepper. Beat using an electric hand mixer to achieve very smooth and fluffy mashed potatoes. (If using leftover mashed potatoes, beat them to create a smooth texture, adding a splash of milk if necessary.) Set the potatoes aside.
- In a large skillet, heat 1 Tbsp butter. Add the diced onion and sauté over medium-high heat until the onions are golden, 3-5 minutes. Add the ground beef and brown the beef until it is cooked through. Add the paprika, thyme, and salt. Taste and adjust the seasonings as desired.
- Pour the onion and beef mixture into the bottom of a greased 8x8 baking dish. Evenly distribute the corn over the meat. Finally, dollop the potatoes over the corn, spreading them to create an even top crust.
