For our Sunday roast, we went with a foolproof reverse sear method - cooking the roast low and slow then finishing with an incredibly high heat - to get a juicy, perfectly medium-rare roast from edge to edge. The low heat dries the surface which allows the high heat to crisp it up nicely. And a long cooking time with a low, gentle heat avoids the gray band of overcooked meat that usually happens when you sear first.

One 3-rib standing rib roast (7 to 8 pounds)
2 cloves garlic, thinly sliced
1/4 cup kosher salt
2 tablespoons black or tricolor peppercorns, coarsely ground

Steps:

  • Pat the skin of the roast completely dry and place on a cutting board, fat-side up. Use a paring knife to make small slits all over the fat, and then stud the meat with the garlic slices. Sprinkle all over with the salt and pepper, wrap tightly with plastic wrap and refrigerate for 4 hours and up to overnight.
  • Preheat the oven to 250 degrees F. Unwrap the roast and place fat-side up on a rack set in a roasting pan.
  • Roast the meat until an instant-read thermometer inserted into the center of the meat registers 120 degrees F, about 4 hours. Remove from the oven and let sit for 1 hour. The temperature will continue to rise another 10 to 14 degrees as it sits.
  • Turn the oven to 500 degrees F. Place the roast back in the oven and bake until the fatty skin starts to crisp up and turn golden brown, 10 to 15 minutes. Let rest another 30 minutes before transferring to a cutting board for slicing.

1 (16 ounce) box penne pasta
6 slices bacon
1 c bread crumbs
1/4 c butter,melted
2 Tbsp chopped fresh parsely
3 Tbsp olive oil
6 garlic cloves,finely chopped
3 carrots,finely chopped
2 Tbsp all purpose flour
4 c heavy cream
1 tsp chopped fresh thyme
1 c shredded monterey jack cheese
2 c shredded sharp cheddar cheese
1/2 tsp seasoned pepper
3 c cooked leftover prime rib chunks

Steps:

  • 1. Preheat oven to 350 degrees F.
  • 2. Fill a large pot with lightly salted water and bring to a rolling boil over high heat.Once the water is boiling,stir in the penne,and return to a boil.Cook the pasta uncovered,stirring occasionally,until the pasta has cooked through,but is still firm to the bite,about 11 minutes.Drain well in a colander set in the sink.
  • 3. Place the bacon in a large,deep skillet,and cook medium-high heat,turning occasionally,until evenly browned,about 10 minutes.Drain the bacon slices on a paper towel-lined plate,and reserve the remaining bacon dripping in a small bowl.Crumble the bacon into a bowl,then mix in the bread crumbs,butter,and chopped parsley,Set aside.
  • 4. Heat the olive oil in a skillet over medium heat.Stir in the garlic and carrots;about 5 minutes.Stir in the bacon drippings and flour.Cook and stir for 1 minute,then whisk in the heavy cream and thyme.Continue to cook and stir until reduced by 1/3.Add monterey jack and cheddar cheese,stirring until cheeses have melted.Season with seasoned pepper.Stir in prime rib chunks and penne pasta.Transfer the prime rib-pasta mixture to a 9x13-inch baking dish.Sprinkle with bread crumb mixture.
  • 5. Bake in the preheated oven until bread crumbs have browned and the sauce is bubbly,about 25 minutes.

2 tablespoons Dijon mustard
2 tablespoons blackstrap molasses
1 1/2 tablespoons Chinese five-spice powder
1 teaspoon smoked salt or sea salt
2 1/2-3 pounds pork spare ribs rack
1 small head of red cabbage (about 2 pounds), shredded
2 unpeeled Fuji apples, cut into 1/2-inch cubes
6-8 green onions, diced
1/4 cup dried unsweetened cherries (optional)
1/4 cup apple cider vinegar
1/4 cup ghee or lard, melted
1/2 tablespoon sea salt
Special Equipment:
6-quart Dutch oven or a large casserole with lid

Steps:

  • Preheat the oven to 400°F.
  • In a medium bowl, make the marinade by whisking together the mustard, molasses, five-spice powder, and salt.
  • Pat the ribs dry, remove the membrane, and cut the rack in half. Place the ribs in a baking pan and rub with the marinade on both sides.
  • In the Dutch oven, toss the cabbage, apples, green onions, cherries, cider vinegar, ghee, and salt.
  • Place the ribs on top of the vegetables, meaty side up, cover, and cook for 1 hour.
  • Carefully remove the lid so the steam does not burn you, and switch the oven to broil; broil the ribs for another 10 minutes or until they are brown. Remove from the oven and let the ribs rest for 10 minutes before serving.
  • Keeps well in the refrigerator for up to 5 days or in the freezer for up to 3 months.

This is an old Southern recipe my mother passed on to me many, many years ago. It's especially good for a Saturday night supper.

4 to 5 pounds pork spareribs, cut into individual ribs
2 teaspoons salt, divided
1/2 teaspoon pepper, divided
5 tablespoons canola oil, divided
6 cups cubed potatoes
1 medium onion, sliced
2 garlic cloves, minced
4 teaspoons all-purpose flour
2 tablespoons dried parsley flakes
1 can (12 ounces) evaporated milk
1/8 teaspoon paprika

Steps:

  • Sprinkle ribs with 1 teaspoon salt and 1/4 teaspoon pepper. In a large skillet, brown ribs in 3 tablespoons oil in batches. Place ribs on a rack in shallow roasting pan. , Bake, uncovered, at 350° for 20 minutes. Turn ribs; bake 20 minutes longer. Pat dry., Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until tender., Meanwhile, in a large saucepan, saute onion and garlic in remaining oil until tender. Stir in the flour, parsley, and remaining salt and pepper until blended. Gradually stir in milk. Bring to a boil; cook and stir for 2 minutes or until thickened., Drain potatoes; place in a greased 13-in. x 9-in. baking dish. Top with sauce and ribs. , Cover and bake at 350° for 15 minutes. Uncover; sprinkle with paprika. Bake 5-10 minutes longer or until ribs are tender and potatoes are heated through.

1 (10 pound) prime rib roast
6 cloves garlic, sliced
salt and ground black pepper to taste
½ cup Dijon mustard

Steps:

  • Preheat the oven to 500 degrees F (260 degrees C).
  • Make slits all over the roast by pricking with a small knife. Insert slivers of sliced garlic. Season the roast with salt and pepper, then spread generously with mustard. Place on a rack in a roasting pan, and cover.
  • Roast for 60 minutes in the preheated oven. Turn off oven. Leave oven closed, and do not peek for 90 minutes. The internal temperature of the meat should be at least 140 degrees F (60 degrees C) for medium-rare, or 155 degrees F (68 degrees C) for medium.

To use this method you must have a full-sized, modern oven with a digital temperature setting that indicates when it is preheated. Older ovens with manual controls can vary greatly, and the doors may not have the proper insulation.

4 pounds prime rib roast
¼ cup unsalted butter, softened
1 tablespoon freshly ground black pepper
1 teaspoon herbes de Provence
kosher salt

Steps:

  • Place rib roast on a plate and bring to room temperature, about 4 hours.
  • Preheat an oven to 500 degrees F (260 degrees C).
  • Combine butter, pepper, and herbes de Provence in a bowl; mix until well blended. Spread butter mixture evenly over entire roast. Season roast generously with kosher salt.
  • Roast the 4-pound prime rib (see footnote if using a larger and smaller roast) in the preheated oven for 20 minutes. Turn the oven off and, leaving the roast in the oven with the door closed, let the roast sit in the oven for 2 hours. Remove roast from the oven, slice, and serve.
