"This is great for a weekend brunch or as a spur-or-the moment supper served wtih toast and juice," recommends LuEllen Spaulding of Caro, Michigan. The nicely seasoned skillet dish is hearty with ham, cheese and potatoes.

Number Of Ingredients 8

3 medium uncooked potatoes, peeled and diced
1 tablespoon butter
1/4 cup chopped onion
1/4 cup chopped green pepper
1 cup cubed fully cooked ham
3 large eggs, beaten
1 cup shredded cheddar cheese
Salt and pepper to taste

Steps:

  • In a skillet, saute potatoes in butter until tender and golden brown. Add the onion and green pepper; saute until crisp-tender. Add ham, eggs, cheese, salt and pepper. Cook until eggs are completely set, stirring occasionally.

Number Of Ingredients 12

16 oz penne pasta
2 packages of diced cubed fully cooked ham
1-2 large sweet red pepper (diced)
1 medium onion (diced, optional)
1/2 teaspoon basil
1/2 teaspoon oregano
1/4 cup olive oil
3 tablespoons butter
2 garlic cloves (minced)
14.5 oz chicken broth
1 tablespoon lemon juice
1/2 cup Parmesan cheese (shredded)

Steps:

  • 1. Cook pasta according to package directions. Meanwhile, in a large skillet, saute the ham, red pepper, onion, basil and oregano in oil and butter for 4-6 minutes (ham and veggies are tender). Add garlic and cook 1 minute longer. 2. Stir in broth and lemon juice. Bring to a boil then reduce heat to simmer uncovered for 10-15 minutes (liquid will be reduced by half). Drain pasta and stir into skillet. Sprinkle with cheese until melted.

I make this dish with leftover ham from Christmas and Easter. Everyone always looks forward to it. I've tweaked it from the original recipe but found that my tweaks made it taste out of this world!

1 lb uncooked penne pasta
3 c cubed fully cooked ham
1 large sweet red pepper, diced
1 medium onion, chopped
1/4 c minced fresh parsley
2 clove garlic, minced
1 1/2 tsp minced fresh basil or 1/2 tsp. dried basil
1 1/2 tsp minced fresh oregano or 1/2 tsp. dried oregano
1/4 c olive oil
3 Tbsp butter
1/2 Tbsp ham flavored soup base
2 c water
1 Tbsp lemon juice
1/2 c shredded parmesan cheese

Steps:

  • 1. Cook pasta according to package directions. Meanwhile, in a large skillet, saute the ham, red pepper, onion, garlic, parsley, basil and oregano in oil and butter for 4-6 minutes or until ham is browned and veggies are tender.
  • 2. Stir in ham base, water and lemon juice. Bring to a boil. Reduce heat; simmer, uncovered, for 10-15 minutes or until liquid is reduced by half. Drain pasta; stir into ham mixture. Sprinkle with parmesan cheese.
