1 cup butter, softened
2 cups sugar
6 large eggs, room temperature
1 teaspoon almond extract
1 teaspoon vanilla extract
3 cups all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup sour cream
2 cups diced fresh or frozen peaches
Confectioners' sugar

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add eggs, one at a time, beating well after each addition. Beat in extracts. Combine the flour, baking soda and salt; add to the batter alternately with sour cream, beating well after each addition. Fold in the peaches., Pour into a greased and floured 10-in. fluted tube pan. Bake until a toothpick inserted in the center comes out clean, 60-70 minutes. Cool for 10 minutes before removing from pan to a wire rack to cool completely. Dust with confectioners' sugar if desired.

1 teaspoon butter, or as needed
2 tablespoons white sugar, or as needed
2 cups white sugar
1 cup butter, softened
4 eggs
1 ½ teaspoons vanilla extract
3 cups all-purpose flour, divided
1 teaspoon baking powder
½ teaspoon salt
2 cups fresh peaches - peeled, pitted, and chopped

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Butter a 10-inch tube pan and cover with sugar.
  • Mix 2 cups sugar and 1 cup butter together using an electric mixer in a large bowl until fluffy. Add eggs one at a time, making sure they are well incorporated. Stir in vanilla extract.
  • Whisk 2 3/4 cups flour, baking powder, and salt together in a medium bowl. Stir flour mixture gradually into the butter mixture until combined.
  • Coat peaches in remaining 1/4 cup flour; fold into the batter. Pour batter into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 1 hour to 1 hour 10 minutes. Remove from the oven and let cool for 10 minutes before flipping cake onto a wire cooling rack to cool completely.

1 cup butter or margarine, softened
2 cups white sugar
4 eggs
1 teaspoon vanilla extract
3 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
2 cups fresh peaches, pitted and chopped

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Butter a 10 inch tube pan and coat with white sugar.
  • In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well with each addition, then stir in the vanilla. Reserve 1/4 cup of flour for later, and sift together the remaining flour, baking powder and salt. Gradually stir into the creamed mixture. Use the reserved flour to coat the chopped peaches, then fold the floured peaches into the batter. Spread evenly into the prepared pan.
  • Bake for 60 to 70 minutes in the preheated oven, or until a toothpick inserted into the cake comes out clean. Allow cake to cool in the pan for 10 minutes, before inverting onto a wire rack to cool completely.

2 pkg. (3.4 oz. each) JELL-O Vanilla Flavor Instant Pudding
3-1/2 cups cold milk
1 Tbsp. lemon zest
2 Tbsp. lemon juice
1 pkg. (10.75 oz.) prepared pound cake, cut into thin slices
1 can (29 oz.) peach slices in syrup, drained, syrup reserved
1 cup fresh raspberries
1 cup thawed COOL WHIP Whipped Topping

Steps:

  • Beat pudding mixes and milk in large bowl with whisk 2 min. Add lemon zest and juice; mix well.
  • Line bottom of medium glass serving bowl with 1/3 of the cake slices; drizzle with some of the reserved peach syrup. Top with layers of 1/3 each of the pudding, peaches, raspberries and COOL WHIP. Repeat layers twice.
  • Refrigerate at least 1 hour before serving.

Peaches N' Sour Cream Pound Cake Bread Pudding image

This is definitely not your grandmother's basic bread pudding. Fresh peaches add sweetness and make the bread pudding moist. I loved the slight crunch from the pecans. Caramel drizzled on top adds to the overall yumminess. Rich and creamy, your guests are going to really enjoy this.

4 Tbsp butter, divided
1-16 oz pound cake, store bought or homemade
1 c chopped pecans
2 small peaches, peeled, seed removed, diced
1/4 c brown sugar
1 Tbsp cinnamon
1 1/4 c whole milk or half and half
2 eggs
3/4 c sour cream
2 oz peach schnapps or brandy
1/4 c caramel ice cream topping
fresh peach slices for garnish

Steps:

  • 1. Grease 6-4 inch crocks with 2 tablespoons butter. Preheat oven to 350 degrees.
  • 2. Cut pound cake into 1 inch cubes and place in a large bowl or on a baking sheet. Allow cake to dry out for 1 hour.*
  • 3. In a smaller bowl combine pecans, diced peaches, sugar and cinnamon. Pour this mixture over cake and toss to coat. Spoon mixture into crocks.
  • 4. In a medium bowl whisk milk, eggs, sour cream and peach schnapps.
  • 5. Spoon ¼ cup egg mixture into each crock. Soak for 10 to 15 minutes, gently pressing pound cake into milk mixture.
  • 6. Dot top of each crock with remaining butter. Bake for 35 to 40 minutes at 350 degrees. Cool slightly and drizzle with caramel sauce and fresh peach slices, if desired. Serve warm or at room temperature.
  • 7. *To dry cake out faster, bake at 350 degrees for 5 minutes, turning cake pieces after 2 minutes to dry out all sides.

1 3/4 cups all-purpose flour, plus
2 tablespoons all-purpose flour
2 1/4 teaspoons baking powder
3/8 teaspoon coarse kosher salt
1/2 teaspoon baking salt
1/2 teaspoon baking soda
3/4 cup unsalted butter (1 1/2 sticks)
1 3/4 cups sugar
2 tablespoons vanilla
2 large eggs
3/4 cup buttermilk
4 cups peaches, peeled and sliced (about 3 pounds)
1 teaspoon cinnamon
1 tablespoon sugar
sweetened whipped cream

Steps:

  • Preheat oven to 350°F.
  • Spray 13 x 9 x 2 inch glass baking dish with vegetable oil spray.
  • Whisk flour, baking powder, salt, and baking soda in a medium bowl.
  • Using electric mixer, beat butter in large bowl until smooth.
  • Gradually beat in sugar.
  • Beat in vanilla, then eggs, one at a time, incorporating well after each addition.
  • Using low speed, beat in flour mixture alternately with buttermilk in three additions each, beating well between each addition.
  • Transfer batter to baking dish, spreading evenly.
  • Arrange peach slices over batter, overlapping slightly as needed.
  • Mix together 1 teaspoon cinnamon with 1 tablespoon sugar and sprinkle over top of peches.
  • Spray sheet of foil with vegetable oil spray; cover cake with foil (spray side down), and seal at edges.
  • Bake 45 minutes.
  • Remove foil (some cake may stick).
  • Bake until top is golden; edges are crusty, and tester inserted into center comes out clean, about 40 minutes longer.
  • Cool 1 hour.
  • Serve warm with whipped cream.

14 ounces baked poundcake
14 ounces of sliced canned peaches, drained
1 cup whole milk
2 eggs
1/4 cup white sugar
1/4 cup orange juice
1/2 teaspoon cinnamon

Steps:

  • Cut pound cake into 1-inch cubes.
  • In a medium bowl toss together pound cake cubes with drained sliced peaches.
  • In a small bowl, whisk together eggs, 3 tbsp of the sugar, milk, orange juice and cinnamon.
  • Pour over cake mixture, stir gently.
  • Let stand 30 minutes, occasionally pressing down on cake so evenly moistened.
  • Lightly butter 8 inch square baking pan.
  • Preheat oven to 350°F.
  • Spoon mixture into pan and sprinkle with remaining sugar.
  • Bake 35-40 minutes or until just set.
