- Place potatoes in a large saucepan; cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until tender. Drain. , In a large bowl, mash the potatoes. Add the cream cheese, butter and cream; beat until blended. Stir in the green pepper, onions, pimientos, salt and pepper. Stir in 1/3 cup cheddar cheese and 1/3 cup Parmesan cheese. , Transfer to a greased 11x7-in. baking dish. Sprinkle with remaining cheeses. Bake, uncovered, at 350° for 20-25 minutes or until heated through.

POTATO ONION SUPREME
I'm a pastor's wife, and I often find myself cooking for large groups. I first put together Potato Onion Supreme for a wedding shower dinner when our organist's son got married. Afterward, I had three requests for the recipe! This dish is fast and easy, so it's nice for adding a festive touch to a Sunday dinner. But it's equally at home at church potlucks or Grange socials.

- Cook potatoes; peel and slice 1/4 in. thick. Set aside. Place onions, water and bouillon in a saucepan; bring to a boil, then simmer 5-7 minutes or until onions are tender. Drain and set aside. Combine cheese and sour cream. , In a greased 2-1/2-qt. baking dish, layer half the potatoes, onions and cheese mixture. Repeat with remaining ingredients. Our Supreme Mashed Potato Casserole is truly amazing! It starts with sour cream, butter and cheese. Add fantastic ingredients like, bacon, crispy fried onions, Ranch dressing and more and you end up with a truly magnificent potato casserole!

- Preheat your oven to 400 degrees.
- Peel and chop potatoes, then boil in salted water until soft, about 15-20 minutes. Drain and return to pot or a large bowl.
- Ideally, using a handheld mixer, add butter to your potatoes. I add butter first while the potatoes are hot so the butter melts easily.
- Add milk, sour cream, ranch (if using), cheese, garlic salt, pepper and any other option you want to include. Blend ingredients together. TASTE your potatoes and add more of whatever you think they need, if anything at all.
- Spray a casserole dish with cooking spray and press your potatoes into it. Try and make the top as even as possible.
- First, I sprinkle bacon all over the top (if using), then crispy fried onions, and parmesan cheese (if using). Last, I sprinkle between 1/2 - 1 cup of shredded cheddar and monterey jack cheeses all over the top. Sometimes a little more, sometimes a little less.
- Bake for 25-30 minutes until top is a golden brown. Sometimes I will broil for a minute or two to darken the cheese a little more, if needed.
- Top with chives or green onions. Serve as desired.
IDAHO POTATOES SUPREME
This is my friend Crystal's recipe. She made it for supper one evening and my husband and I just loved it! She was kind enough to share the recipe with me and I wonder if she knew that I would be kind enough to share it with all of you :)

- Cook potatoes with jackets on until almost done or use leftover baked potatoes.
- Peel, cool and grate coarsely.
- Mix together remaining ingredients, but reserve 1/2 cup of grated cheese and corn flakes.

- Bake uncovered at 350 F for 1/2 hour.
