SPINACH AND CHEDDAR QUICHE

Steps:
- Heat oven to 375°F. In medium bowl, mix 1/2 cup all-purpose flour, the whole wheat flour and 1/4 teaspoon salt. Cut in butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until mixture looks like small crumbs. Sprinkle with water, 1 tablespoon at a time, tossing with fork just until flour is moistened. Shape into ball; flatten slightly.
- On floured surface, roll dough into 12-inch round. Fold dough into fourths; place in 9-inch glass pie plate. Unfold and ease into pie plate, pressing firmly against bottom and side; crimp edge. Trim overhanging edge of pastry 1 inch from rim of pie plate. Fold and roll pastry under, even with plate; flute.
- In large bowl, mix cheese and 1 tablespoon flour. Stir in eggs, milk and 1/2 teaspoon salt until well blended. Stir in spinach and bell pepper. Pour into pie crust.
- Bake 15 minutes. Cover edge of crust with strip of foil to keep crust from overbrowning. Bake 15 to 20 minutes longer or until knife inserted in center comes out clean. Let stand 10 minutes before serving.

SPINACH, POTATO & CHEESE QUICHE RECIPE
This is a super delicious quiche recipe made with potatoes, spinach and cheese. The combination is heavenly and taste fantastic. You can put this in your kids lunch box too.

Steps:
- Preheat oven to 200 degree C.
- Boil potatoes in salted water till tender. Drain and set aside.
- Heat butter in a pan, add spinach and cook till wilted. Set aside to cool down.
- Take your pie crust. Roll it and line it over the mould. Prick it with fork and bake it in the oven for 15 mins.
- Take eggs, salt, pepper and milk in a bowl and mix well.
- Take the baked pie crust. Line with potatoes, spinach and cheese.
- Pour filling over and pop it back in the oven and bake for 15 to 20 mins
- Remove and cool for 5 mins.
- Unmould and slice and serve.
POTATO, SPINACH, AND CHEESE QUICHE

- Preheat the oven to 400 degrees F (200 degrees C). Cut a 9-inch circle of parchment paper.
- Place pastry crust in a 9-inch quiche or pie pan, gently shaping and stretching to fit. Prick crust with a fork several times and place parchment circle over top. Add pie weights or dried beans on top of parchment paper.
- Set the pan on a baking sheet and place in the center of the preheated oven. Reduce heat to 375 degrees F (190 degrees C) and bake about 10 minutes. Remove to a wire rack and cool for about 5 minutes. Carefully remove pie weights or beans and parchment paper. Leave oven on.
- While the crust is cooling, squeeze thawed spinach between several layers of paper towels, to remove most of the moisture. Set aside.
- Add thawed potatoes to the cooled crust. Sprinkle 1 cup shredded Gruyere cheese on top.
- Stir beaten eggs, cream, bagel seasoning, and hot pepper sauce in a large bowl until ingredients are fully incorporated. Stir in spinach, breaking up any clumps. Pour mixture over the cheese and potatoes. Sprinkle the remaining 1/2 cup Gruyere on top.
- Place in the center of the oven and bake until eggs are set and a knife inserted into the middle comes out clean, 40 to 45 minutes. Remove from the oven and cool on a rack for 10 minutes. Serve warm.

- Preheat oven to 350 degrees.
- Roll out pie crust and place into deep dish pie plate, crimping the edges. Set aside in the fridge or freezer until ready to use.
- In a large bowl, whisk together the eggs, and cream until combined. Stir in cheeses, spinach, garlic, rosemary, chilves, salt, and pepper. Once that is mixed, fold in the roasted potatoes. Pour the mixture into the pie plate.
- Place pie plate onto a foil lined baking sheet to avoid any bubbling over. Bake on the middle rack for 40-50 minutes, or until a knife inserted into the middle comes out clean. Cool on a wire rack until warm. Or cool completely and chill. Can be eaten hot or cold.
POTATO AND BACON CRUSTLESS QUICHE
This is a wonderfully flavorful, light, and creamy quiche which is very hearty and stick-to-your-ribs thanks to the addition of the diced potato! I like to bake up a couple extra potatoes any time I'm baking some and keep them in the refrigerator, for recipes just like this one! You can change up the cheese to any flavor you'd prefer.

- Preheat the oven to 350 degrees F (175 degrees C). Spray a deep dish pie pan with nonstick cooking spray and set aside.
- Combine eggs, cream, milk, garlic powder, pepper, and salt in a large bowl. Whisk together until well blended. Dice baked potatoes. Stir potatoes and Cheddar cheese into egg mixture. Pour the mixture into the prepared pie pan.
- Bake in the preheated oven for 45 minutes. Remove and sprinkled the cooked, chopped bacon over the top. Return to the oven to continue to bake until the middle is cooked through and no longer very jiggly (a little bit of wiggle is ok - but eggs should be cooked through), 15 to 30 minutes. Allow to cool and set for at least 15 minutes before slicing and serving.
