GRUYERE POTATO CAKE #SP5
Official Contest Entry: Simply Potatoes 5Fix. Hash brown potatoes baked together with Gruyere Cheese, proscuitto and sour cream.

Steps:
- Preheat oven to 350 degrees.
- Heat a non-stick skillet over high heat for one minute, add prosciutto and reduce heat to medium. Sauté for 2 minutes stirring often. Place prosciutto in large bowl and do not wash skillet. Add Simply Potatoes Shredded Hash Browns to the skillet and press down lightly until hash browns are flattened and spread out. Cook for 2 minutes without stirring over medium heat. Turn hash browns, press down again with the spatula and cook for 2 more minutes. Turn off heat and add the Simply Potatoes Shredded Hash Browns to the bowl with the prosciutto. Mix in the sour cream, pancake mix and Gruyere, saving out 1/2 cup of cheese for later. Mix together until well blended and spread evenly into a prepared 9 inch round non-stick cake pan.
- Bake for 30 minutes, remove and let cool for 5 minutes. Preheat broiler to high heat and place rack in center of the oven. Run a knife around the edge of the potato pan to loosen and turn upside down onto a baking sheet, tap the top of the pan to loosen and carefully remove cake pan. Sprinkle top with the remaining cheese and place in oven for 2 minutes to brown. Watch carefully as not to burn.
- Remove from oven, using a large spatula carefully place cake onto a serving platter. Slice in triangles to serve.

- Divide the potatoes, carrots and onion equally among four pieces of heavy-duty aluminum foil (about 18 in. x 12 in.). Top with butter; sprinkle with salt if desired and pepper. Bring opposite short ends of foil together over vegetables and fold down several times. Fold unsealed ends toward vegetables and crimp tightly. , Grill, covered, over medium heat for 10-15 minutes on each side or until potatoes are tender. Remove from grill. Open foil and sprinkle with cheese; reseal Let stand for 5 minutes or until the cheese melts.

Steps:
- In a large bowl, combine mashed sweet potatoes and pepper jack cheese. Mix well.
- Using wet hands, form into popper shape, like small footballs about 1.5 inches long. Wet hands often to reduce sticking.
- Dip poppers into beaten eggs, then roll in panko bread crumbs to coat. Place coated poppers on a large plate.
- Place poppers into the fridge to chill for 30 minutes.
- Heat oil in a deep, heavy pot over medium-high heat to 350 degrees F. Carefully drop poppers into the hot oil. Fry in batches until golden brown, about 3 to 4 minutes.
- Remove with a slotted spoon, and drain on paper towels. Stick a toothpick into each popper and serve hot.

- Peel the garlic then mince it.
- Fry the garlic in a pan on medium heat until it turns a golden brown color.
- Add in defrosted diced potatoes with onions packet. Cover and fry for 10 minutes.
- Move everything to a pot.
- Add the tomato paste then the water. Stir it really good and let it come to a boil then add a little salt and cinnamon for flavor (Optional).

Official Contest Entry: Simply Potatoes 5Fix. Appetizer but could be a side dish as well. At Thanksgiving we had our neighbors over to watch Cowboys game. Needed to come up with a last minute appetizer and had an extra bag of Simply Mashed Potatoes and some fresh ranch dressing on hand and simply improvised. They were all gone within 15 minutes. Can insert with fancy toothpicks for added presentation and ease of dipping and eating.

- Fold potatoes, goat cheese, green onions and basil together until nicely combined. Roll into balls about the size of a quarter. Roll the potato balls in the crushed Rice Krispy cereal until well coated. Place on baking sheet and spray with cooking oil spray nicely coating.

- Mix mashed potatoes, garlic, cheese, egg and flour, salt & pepper until blended. Mixture will be thick but spoonable.

- Prepare mashed potatoes as instructed in the Simply Potatoes® Traditional Mashed Potatoes package.
- Roll out Pillsbury® Crescent Recipe Creations Seamless Dough Sheet on a flour dusted surface and spoon tablespoons of mashed potatoes onto the dough sheet, leaving an inch between the mounds.
- With a pastry brush, brush a bit of water around the mounds of filling. Lay a second sheet of pasta on top and press to seal the sheets together.
- Press around the mounds to eliminate air in the pocket that contains the filling.
- Cut the ravioli into rectangles using a sharp knife, and press again to seal completely.
- Place each ravioli ½ inch apart onto a baking sheet and bake for 15 minutes at 350 F, or until golden brown.

- Par boil your peeled chunked sweet potato.
- Grate it & mix in with the Simply Potatoes shreds.
- Blend in the egg & the rest of ingredients.
- Heat a non stick skillet brushed with EVOO & some melted butter.
- Put the mixture by 1/4 cups into the hot skillet. Press out to flatten.
- Brown 1-2 minutes per side.
- Serve with applesauce, butter, maple syrup or even just a sprinkle of white sugar over the butter!
- This was a favorite lunch of my parents. Also I fixed it often for my Mom & her gal friends after my Dad's passing.

- Prepare the hashbrowns.
- Carmelize the onions in a pan with 2 tablespoons of the olive oil, over low/medium heat.
