GREYSTON'S POTATO ONION BREAD

Steps:
- Dissolve the yeast in the warm water and then add the honey, milk powder, salt, oil, potatoes and onion, stirring well. Gradually stir in 1 1/2 cups of flour.
- Add 2 more cups of the flour, 1/2 cup at a time, until the dough is stiff. Turn onto a lightly floured board and knead in enough flour until the dough is no longer sticky.
- Continue kneading for about 15 minutes and then place the dough in a lightly oiled bowl. Cover the bowl loosely with plastic wrap and set in a warm place to rise until dough is doubled in volume, about 1 1/2 hours. Remove dough from bowl, punch it down and shape into a ball. Return to bowl, cover with plastic wrap and let rise for 40 minutes.
- Preheat the oven to 350 degrees. Punch down the dough again and turn onto a lightly floured board . Divide the dough in half and knead one piece, adding about 1/4 cup or more of flour to make the dough stiff enough to hold a round shape.
- Form a ball and then fold the dough inward while rotating it against the board to form a mushroom cap. Repeat this rotation 10 times. Lay the ball of dough on its side and roll and press the dough against the board about 10 times, continuing to keep the round shape. Repeat with the other ball.
- Place both balls on a buttered baking sheet and let them rise in a warm place, lightly covered with plastic wrap, for about 25 minutes. Brush the loaves with egg wash and make 2 quarter-inch-deep slashes to form a cross in each.
- Bake for 35 to 40 minutes, until the loaves are golden and produce a hollow sound when tapped on the bottom. Cool at least 1 hour before slicing.

Steps:
- Preheat oven to 350 degrees.
- Spray non stick cooking spray on bottom and sides of large casserole dish or casserole pan.
- Empty and mix all ingredients ( except potato chips ) directly into the casserole dish/pan and spread evenly.
- Cover with foil and bake 30 minutes until dish starts to bubble at sides.
- Remove foil and cover casserole with small smashed bits of potato chips.
- Resume cooking uncovered for 15 minutes more.
BAKED POTATO-STUFFED LOBSTER TAILS #5FIX

Steps:
- 1. Heat oven to 375 degrees.
- 2. Remove meat from lobster tails, cut into bite-sized pieces, and reserve shells.
- 3. Heat 2 tablespoons olive oil in a 10-inch nonstick skillet over medium-high heat. Add Simply Potatoes and cook and stir 10-12 minutes until potatoes are tender. Remove potatoes from skillet, add remaining 2 tablespoons olive oil and lobster. Cook 5 minutes or until lobster is done.
- Return potatoes to skillet and stir in mascarpone and 1 cup fontina cheese until blended.
- 4. Pile mixture into lobster tail shells, dividing evenly. Sprinkle with remaining fontina cheese. Place on baking sheet and bake 7-8 minutes or until cheese melts.

- Prepare mashed potatoes according to package directions. Refrigerate for at least 4 hrs, or overnight before using.
- In medium bowl combine potatoes, egg white, green onions and flour.
- Meanwhile, heat oil in large skillet over medium high heat.
- Drop1/4 cup potato mixture into skillet and press flat with spatula.
- Cook 3-5 minutes, until golden brown. Flip and cook the other side, 3-5 minutes, until golden brown.
- Keep warm in 250 F degree oven until all cakes have been made. Serve hot.

Steps:
- Brown the pancetta in a pan till slightly crisp. Add the sliced onions, sprinkle with salt and pepper and cook slowly till soft. In a small bowl, add the olive oil and set aside.
- Using a small casserole or baking dish, brush lightly with the oil. Starting with a layer of some Simply Potatoes Shredded Hash Browns, next pancetta/onion mix, continue alternating layers and end with a layer of potatoes. Lightly brush the top with the spice mix and sprinkle coarse salt on the top, bake very slowly in a 350 degree oven for 30-45 minutes (depending on the thickness of your casserole). Test by piercing with a thin knife, if it goes through smoothly, it's done! You can increase or decrease any of these ingredients to fit any size baking dish, large or small, just adjust your cooking time and test with a thin knife. Enjoy!
