POTATO, HAM & CHEESE BAKE
Breakfast casserole egg and cheese bake with a hash brown crust.

Steps:
- Heat oven to 375°F.
- Press potatoes onto bottom and up sides of greased 9-inch pie plate. Bake 10 minutes.
- Whisk half & half, eggs and pepper together in bowl until well mixed. Stir in ham, 2 tablespoons green onions and 2 tablespoons bell pepper.
- Sprinkle half of cheese over potatoes. Pour egg mixture over cheese.
- Bake 35-40 minutes or until knife inserted in center comes out clean. Top with remaining cheese, green onions and bell pepper. Let stand 10 minutes before serving.

- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain.
- Preheat oven to 350 degrees F (175 degrees C).
- Grease a 1 1/2-quart baking dish.
- Melt 3 tablespoons butter in a skillet over medium heat. Stir in the ham and onion; cook and stir until the onion has softened and turned translucent, about 5 minutes.
- Stir potatoes into ham mixture; transfer to the prepared baking dish.
- Melt 1/4 cup butter in a saucepan over medium heat. Stir flour into melted butter until smooth.
- Gradually whisk milk into flour mixture; season with salt and black pepper. Continue cooking and stirring until thickened, about 2 minutes.
- Reduce heat to medium-low and stir Cheddar cheese into the white sauce until melted.
- Pour sauce over ham and potatoes.
- Sprinkle bread crumbs atop casserole.
- Bake in the preheated oven until sauce is bubbly and browned, 25 to 30 minutes.

- Heat oven to 375°F.
- Melt butter in 10 inch, oven safe, skillet over medium heat and then add hash browns. Sprinkle potatoes with seasoned salt and stir to blend and continuing heating the potatoes for 5 minutes. Take off heat and press potatoes onto bottom and up sides of the pan.
- Combine half & half, eggs and pepper in medium bowl; beat until well mixed. Stir in ham, 2 tablespoons green onions and bell pepper. Sprinkle half of cheese over potatoes. Pour egg mixture over cheese.

- Half the potatoes and take pulp out leaving 4 shells.
- Mash potatoes with milk and pepper. Add all but a hand full of the cheese, ham and onions.
- Fill potato shells sprinkle remainder of cheese on top and broil until brown and bubbly. Approx 5 to 7 minutes.
