1 large egg
2 tablespoons whole milk
4 cups barbecue potato chips, crushed
1/2 pound boneless skinless chicken breasts, cut into 1-1/2-inch cubes
Barbecue sauce

Steps:

  • In a shallow bowl, whisk egg and milk. Place potato chips in another shallow bowl. Dip chicken in egg mixture, then roll in chips. Place in a single layer on a greased baking sheet. Bake at 400° for 10-15 minutes or until meat is no longer pink. Serve with barbecue sauce.

1 cup coarsely crushed potato chips
1 tablespoon minced fresh parsley
1/2 teaspoon salt
1/2 teaspoon paprika
1/4 teaspoon onion powder
1 pound boneless skinless chicken breast halves
2 tablespoons mayonnaise

Steps:

  • In a large resealable plastic bag, combine the potato chips, parsley, salt, paprika and onion powder. Brush chicken with mayonnaise; add chicken to the crumb mixture and shake to coat. , Place in an ungreased microwave-safe 11x7-in. baking dish. Cover with paper towels; cook on high for 6-8 minutes or until a thermometer reads 170°.

2 pounds skinless, boneless chicken breast meat
2 tablespoons butter, melted
1 teaspoon salt
1 teaspoon ground black pepper
1 cup crushed potato chips

Steps:

  • To Marinate: Put chicken breasts in a nonporous glass dish or bowl. Drizzle melted butter or margarine over chicken and season with salt and ground black pepper. Cover dish and refrigerate overnight.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Put potato chip crumbs in a shallow dish or bowl. Roll chicken in crumbs until well coated, then place in a lightly greased 9x13 inch baking dish.
  • Bake at 375 degrees F (190 degrees C) for 45 minutes or until chicken juices run clear.

2 cups butter, softened
1-1/4 cups sugar
3 teaspoons vanilla extract
3-1/2 cups all-purpose flour
2-1/3 cups crushed potato chips
Optional: 2 cups semisweet chocolate, additional crushed potato chips

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in vanilla. In another bowl, whisk flour and crushed chips; gradually beat into creamed mixture., Divide dough in half; shape each into a 10-in.-long roll. Wrap and refrigerate 1 hour or until firm., Preheat oven to 350°. Unwrap and cut dough crosswise into 1/2-in. slices. Place 1 in. apart on ungreased baking sheets. Bake 10-12 minutes or until bottoms are light brown. Cool on pans 2 minutes. Remove to wire racks to cool completely. If desired, melt chocolate chips; dip each cookie halfway into chocolate; allow excess to drip off. Place on waxed paper. If desired, sprinkle with additional crushed potato chips.

2 cups of your favorite potato chips (try sour cream & onion or the new dill pickle chips)
1 egg
2 tablespoons milk
6 chicken breast fillets, cut into 1 1/2-inch cubes
1/3 cup butter, melted

Steps:

  • Preheat oven to 350°F.
  • Spread the crushed potato chips in shallow dish.
  • Beat together the egg & milk in a shallow bowl.
  • Dip the chicken cubes into egg mixture & then dredge them in the chips.
  • Place the chicken nuggets on a baking sheet & drizzle with melted butter.
  • Bake for 15-18 minutes or until golden brown.
  • The nuggets can be frozen after baking!
  • SERVE: (with your favorite sauce).
