- In a large bowl, combine the first 5 ingredients. Line a 9-in. square pan with foil; butter the foil. Spread coconut mixture into pan. Cover and chill overnight. Cut into 2x1-in. rectangles. Cover and freeze. , In a microwave, melt candy coating; stir until smooth. Dip bars in coating; allow excess to drip off. Place on waxed paper to set. Store in an airtight container.

- mix vanilla and peanut butter together.
- dust 2, 24inch long wax paper with powdered sugar, place the icing mixture between and roll out to 1/4 inch thickness. Spread the peanut butter within 1 inch of the long edge and proceed to roll-up jelly roll style. I cut into 12 inch sections for ease of handling and cover with the used wax paper and return to the fridge for 1 hour to firm prior to cutting as you would a cucumber, storing in fridge. wonderful.

COCONUT-FREE IRISH POTATOES CANDY
I was frantically searching for a non-coconut recipe for Irish Potatoes for St. Patrick's day. I recently became allergic to coconut, so I made this recipe up after not being able to find an alternative online or in any cookbooks I have at home. I think the almonds are a nice twist and help maintain the consistency of the ball instead of just omitting coconut from other recipes I've seen. This is a good no-bake recipe. It is simple to make and easy to eat.

- Place almonds in the bowl of a food processor; process until finely ground. Pour cinnamon into a rimmed plate.
- Mix cream cheese, butter, and vanilla extract in a large bowl until evenly blended. Place the bowl into a large pan filled with ice to help mixture stiffen; make sure butter mixture does not spill out of the bowl.
- Sift confectioners' sugar into the butter mixture. Add ground almonds and stir until combined. Let mixture rest on ice for 5 minutes.
- Roll mixture into 1/2-inch balls and roll in cinnamon until coated. Refrigerate until set, about 20 minutes.

- Place sugar, salt, coconut in bowl with softened butter.
- Add potatoes and vanilla and mix well by hand.
- Pack mixture into 9 x 13 pan.
- Cool in fridge.
- Cut into 1 1/2 inch squares.
- Melt chocolate, chocolate chips and paraffin wax -- stirring til no lumps appear. (ALWAYS exercise caution when heating paraffin -- I use a large well washed tin can and put it in the double boiler).
- Using a toothpick, dip the squares in melted chocolate and place on waxed paper to set.

- Place potato in a small saucepan; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, until tender, 10-12 minutes. Drain. Transfer to large bowl., Using a stand mixer, beat potato until smooth. Leave only 1/2 cup in bowl (save remaining for another use). Beat in 4 cups sugar until smooth. Gradually add enough remaining sugar until dough forms a ball., Divide dough in half. On a surface dusted with confectioners' sugar, roll half of dough into a 10x7-in. rectangle. Spread 1/4 cup peanut butter to within 1/2 in. of edges. Roll up jell-roll style, starting with a long end. Cover and refrigerate until firm, at least 1 hour.
