Best potato soup with sausage ever with a variation of the original German soup. My family loves this soup and I never have leftovers. This recipe is one my grandmother used to make when I was growing up and I have always loved this.

1 pound bulk mild Italian sausage
1 pound kielbasa smoked sausage, cut lengthwise and sliced into 1/2-inch pieces
4 cups diced potatoes, or more to taste
4 cups water
2 cups chicken broth
1 cup heavy whipping cream
1 stalk celery, diced, or more to taste
2 cubes chicken bouillon
1 tablespoon minced garlic
1 teaspoon salt
½ teaspoon ground black pepper
½ teaspoon garlic powder
⅓ teaspoon crushed red pepper, or more to taste

Steps:

  • Heat a large pot over medium-high heat. Cook and stir Italian and kielbasa sausages in the hot skillet until browned, 5 to 7 minutes. Drain grease.
  • Stir potatoes, water, chicken broth, heavy cream, celery, bouillon, garlic, salt, pepper, garlic powder, and red pepper into the pot. Reduce heat and let simmer until potatoes are tender, about 1 1/2 hours.

During a winter storm last night I was trying to come up with something warm and hearty. This turned out very good so I thought I would share. Enjoy!

3 sweet Italian sausage links, cut in 1-inch slices
1 cup chopped onion
1 cup water
2 cups cooked turkey, cubed
turkey stock, to cover
4 -5 small red potatoes, cut in quarters
1 cup frozen chopped spinach
1 cup frozen cut green beans
salt and pepper (to taste)
1 pinch red pepper flakes (to taste)
1/4 teaspoon coriander
1/2 teaspoon thyme
1/2 teaspoon celery salt

Steps:

  • Saute the sausage and onions til brown and onions soft.
  • Add the rest of the ingredients and simmer for an hour.
  • Serve with a good crusty bread.

  • In a large cast iron pot on the stove on medium heat, add 1 tbsp olive oil and the ground turkey sausage and cook the sausage through, stirring occasionally. Spoon all the sausage out onto a plate lined with paper towel and set aside.
  • Add another tbsp of olive oil to the fond (cooked down bits) in the cast iron pot. Add the leeks, parsnip, cauliflower, and bay leaves. Tie together the rosemary, thyme, and oregano, and add that as well. Season with salt and pepper, sweat on medium low heat and add a few drops of water to help break up the fond from the bottom of the pot if needed.
  • Once the vegetables beging to look somewhat translucent, add the bone broth (or stock) and bring to a simmer. Cover and cook for 20-30 minutes on medium heat.
  • Remove the herbs from the pot. Using an immersion blender, blend up the cooked down vegetables once they are tender and soft. Add the almond milk and blend again until smooth. It will start to foam - that's ok, we'll skim that off later.
