Steps:
- Rinse and cut the leeks into rings. Peel the carrot, halve lengthwise and cut into slices. Peel and dice the potatoes and celery.
- Heat the oil. Add the vegetables and pour in broth. Add in the rosemary and cover. Let simmer for 20-30 minutes. Season with salt, pepper and nutmeg. Remove half of the vegetables from the broth. Remove the rosemary. Puree the soup finely and replace the vegetables. Chop the lovage and add.
- Cut the ham into strips and add. Serve warm.
CREAMY LEFT-OVER HAM AND POTATO STEW
We had quite a large amount of cooked ham I had cut off the bone, that needed to be used. When it's cold outside, nothing says comfort like a nice, hot cup of soup or stew. - 1. Chop the ham in bite-sized pieces and set aside. Scrub the potatoes (any kind will do) and cut in bite-sized chunks. *** I did not peel my potatoes, but you can if you prefer ***
- 2. At this point, place the oil in a large Dutch oven until hot. While it is heating, chop the onion then scrub the carrots and slice. *** Again, I did not peel my carrots, but you can if desired ***
- 3. Place the cut up ham in the hot oil, sprinkle with the Bayou Blast (this is an Emeril Lagasse seasoning blend I mix up and keep on hand in my spice cabinet) and granulated garlic. Cook and stir for a couple minutes until fragrant.
- 4. Add the onion and mushrooms and cook until softened, about 3-4 minutes. Now put in the chopped potatoes and carrots, stirring to combine.
- 5. Sprinkle on the ground pepper and pour in chicken broth. Bring to a boil, then reduce heat to a slow boil and cook until the potatoes and carrots are almost tender.
- 6. Add the corn kernels and green peas and cook until heated through. Add the heavy cream and slowly heat to the boiling point. Taste and adjust seasoning as needed.
- 7. At this point, you may mix a couple tablespoons of all-purpose flour with a bit of water, mix thoroughly and add to the stew as a thickener, again stirring and bringing slowly up to a boil as it thickens.

- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain.
- Preheat oven to 350 degrees F (175 degrees C).
- Grease a 1 1/2-quart baking dish.
- Melt 3 tablespoons butter in a skillet over medium heat. Stir in the ham and onion; cook and stir until the onion has softened and turned translucent, about 5 minutes.
- Stir potatoes into ham mixture; transfer to the prepared baking dish.
- Melt 1/4 cup butter in a saucepan over medium heat. Stir flour into melted butter until smooth.
- Gradually whisk milk into flour mixture; season with salt and black pepper. Continue cooking and stirring until thickened, about 2 minutes.
- Reduce heat to medium-low and stir Cheddar cheese into the white sauce until melted.
- Pour sauce over ham and potatoes.
- Sprinkle bread crumbs atop casserole.
- Bake in the preheated oven until sauce is bubbly and browned, 25 to 30 minutes.

This was something I came up with one night when I was in the mood for comfort food. It's rich and hearty and oh so yummy!

Steps:
- Dice the bacon and ham into large pieces. Set ham aside.
- Brown the bacon and remove from pan.
- Chop celery and carrots and add to bacon grease, cook 5 minutes.
- Chop onion, garlic, and potatoes (1/4 inch dice) and add, along with the reserved ham, to carrots and celery. Cook an additional 5 minutes, just to brown the ham and potatoes slightly.
- Drain any remaining grease from the vegetable/ham mixture and move to a Dutch oven.
- Add rosemary, thyme, chicken base, water, and salt (to taste).
- Bring to a boil and simmer for 15-20 minutes, or until potatoes are just barely done.
- Add heavy cream and simmer 5 minutes, until potatoes are completely cooked.
- Turn off heat, toss in spinach and stir until spinach is wilted.
- Serve with your favorite garlic breadsticks.

I was at a friends house one night to help with a political rally. For helping him, he fed us all this dish. I was so blown away by how simple it was and yet soooo tasty that I decided to work on my own version of it (his used canned greenbeans and canned white potatoes) This was the result.

- 1. In stock pot ( or crock pot ) place ham and water and bring to a boil. Boil for an hour or till meat starts to come off the bone, then remove ham from the pot to take meat off the bone. When cool enough to handle, cut ham into bite sized pieces
- 2. Sautee the onion in about a tbsp of oil and then add to boiling ham stock in the crock pot along with the greenbeans and cook just till they're tender but still crisp.
- 3. Add ham back to the crock pot and add potatoes and seasonings, turn heat down to low and simmer till potatoes are fork tender.
- 4. Tastes great with a side salad and some crusty french bread
HAM & POTATO CHEESY SOUP (STEW)
This recipe was compiled from many others - there are quite a few already posted here for potato and ham soup but this is a hearty winner! The flavor is stellar and the big pot didn't last once the boyfriend found it! Served with a simple cornbread this is a full meal.

- Prepare all veggie and other ingredients: chop veggies, cook bacon etc.
- Boil Yukon's, Idaho Bakers, Sweet Potatoes till fork tender - 40+ minutes then chop the Bakers and the Yukon's into bite sized pieces, leave skin on if preferred, set aside.
- Peel the sweet potatoes, toss skin and mash smooth, set aside.
- In a large pot that can hold everything heat the chicken broth & cheddar cheese soup on medium to medium low. Once hot (NO BOILING EVER IN THIS RECIPIE - IT WILL BURN) add mashed sweet potatoes to the broth pot, let thicken.
- In a separate pan sauté the onion for 5 minutes, add the leeks, garlic and hot red chili's. After they are a bit caramelized add all of them to the broth pot. Cook 15 minutes.
- Add the chopped carrots and celery, cook till all ingredients are tender, about 20+ minutes, keep stirring from time to time.
- Add the remaining Yukon and Baked potato pieces, then the ham and crispy cooked bacon. Heat through. 15 minutes.
- Now add the pint of ½ & ½, canned sweet corn, cilantro & keep stirring. Once all heated again add cornstarch and chedder cheese. Heat through until cheese is all smoothly melted into stew. If broth ever becomes to thick add milk until broth is thickness of preference. Stewlicious! Serve with cornbread & salad.
