Time 1h40m

Number Of Ingredients 24

1 tbsp. Olive Oil
1 small Yellow onion (diced)
1 Fire Roasted Jalapeno (skin removed and diced)
4 Garlic Cloves (minced)
2 tsp Chili Powder
1 tsp Cinnamon
1 tsp Oregano
1 tsp Cumin
1 tsp Sea Salt
1 tsp Black Pepper
2 tsp Sesame Seeds (toasted)
3 tbsp. Unsweetened Almond Butter
2 tbsp. Cocoa Powder
2 tbsp Coffee (save some from your morning brew)
1 cup Stock (chicken or veggie)
2 1.5 lb. Pork Tenderloins (trimmed and patted dry)
1 tbsp Fine Ground Coffee
1 tsp Cocoa Powder
1 tsp Oregano
2 tsp Chili powder
2 tsp Salt
1 tsp Black Pepper
1/2 tsp Cinnamon
Cilantro & Cotija for garnish (optional)

Steps:

  • In a pot on medium heat, saute the onion and olive oil for 3-4 minutes. Add in the garlic and cook for a minute and mix in the fire roasted jalapeno (I include the seeds but they can be removed if desired).
  • Add in all the spices except the cocoa powder and stir until they are mixed into the veggies and smell fragrant about 2 minutes.
  • Stir in the almond butter, cocoa powder, and coffee. Mix until a thick paste forms and slowly whisk in the stock. Let the mixture come to a simmer then turn off the heat. Use an immersion blender to carefully blend the entire mixture until smooth. Set aside for smoking.
  • Prep the pork tenderloin by removing any silver skin and patting it dry. Use a few tbsp of the prepared mole to coat both pork tenderloins completely in a light thin layer as a binder.
  • 5. Place the rub ingredients together in a bowl and mix. Then lightly and evenly coat all sides of the pork tenderloin and let sit while you preheat your grill.
  • Preheat your grill to 225 F and set it for indirect heat. Cook your pork tenderloin and mole at the same time, approximately 45-60 minutes or so. The internal temperature of your pork should reach 145 F.
  • Remove from the grill and let rest 10 minutes. Slice in thin medallion sized pieces and fan out. Pour the mole sauce over the top and garnish with cilantro and cotija cheese if desired.

Popular in Mexican cuisine, a mole is a thick sauce with complex flavours. Great help-yourself party food

Provided by Emma Lewis

Categories     Dinner, Main course

Time 2h30m

Number Of Ingredients 22

1 tbsp vegetable oil
750g trimmed pork shoulder , cut into large chunks
1 tsp tomato purée
200ml hot chicken stock
strips of zest and juice 1 orange
1 cinnamon stick
2 thyme sprigs
2 onions , cut into chunks
2 garlic cloves
250g pack cherry tomato
2-3 tbsp vegetable oil
2 x 335g packs corn tortillas
50g flaked almond
50g raisin
2 tsp each ground coriander and cumin
1-2 tsp chipotle paste
25g plain chocolate , finely chopped
200g radish , trimmed and thinly sliced
2 avocados , chopped
juice 2 limes
bunch coriander , leaves only
1-2 green chillies , finely chopped

Steps:

  • Heat the oil in a casserole dish. Brown the pork for about 10 mins until golden all over, stir in the tomato purée and cook for 1 min. Pour over the chicken stock, then add the strips of orange zest and juice, cinnamon and thyme. Bring to the boil, reduce the heat, then cover and simmer for 1½ hrs.
  • Meanwhile, make the sauce. Heat a non-stick frying pan and dry-fry the onions and whole garlic cloves for about 5 mins, turning often until softened and lightly charred all over. Tip into a blender. Add the tomatoes to the pan. Cook for 3 mins until starting to blister and char, then tip into the blender. Add 1 tbsp oil to the pan. Fry 1 of the tortillas for 1 min on each side until golden. Tear into pieces and tip into the blender. Adding more oil if you need, fry the almonds for 3 mins until golden. Add to the blender. Finally add the raisins, coriander and cumin to the pan and cook for 1-2 mins until the raisins are plump. Add these to the blender along with the chipotle paste and finely chopped chocolate. Whizz together until a rough paste forms.
  • Using a slotted spoon, remove the meat from the pan to a board, leave to cool a little, then use forks or your fingers to tear into shreds. Remove the cinnamon, orange zest and thyme sprigs from the pan and discard. Pour a little of the cooking liquid into the blender, then carefully whizz together with the mole sauce. Tip sauce into the pan with the rest of the pork cooking juices. Simmer on the hob for 10-15 mins, then return the shredded pork to the pan and cook for 20 mins more. Season to taste. Can be made up to this point up to 2 days in advance and stored in the fridge or frozen for up to 3 months.
  • Just before serving, microwave the tortillas for 1 min to warm them. Toss together all the salsa ingredients and season well. Set everything out on the table. To serve, spoon some of the pork mole onto a tortilla, top with some salsa, then roll up and eat.

Yield Makes 4 to 6 servings

Number Of Ingredients 16

2 pounds boneless center cut pork loin in one piece, rolled and tied together with the ribs and backbone
1/2 teaspoon black peppercorns, bruised
1 teaspoon salt, or to taste
9 garlic cloves
8 whole cloves, or 1/4 teaspoon ground
1 teaspoon cumin seeds
3 jalapeño chiles, tops removed
6 large tomatillos, husks removed
1 small onion, cut into chunks
2 sprigs fresh thyme
2 sprigs fresh marjoram
1 cup (8 ounces) masa, either fresh or reconstituted by mixing 6 tablespoons masa harina to a smooth paste with 1 cup of water (see Tips, below)
1 medium bunch Italian parsley
Eight 6-inch sprigs fresh epazote or 1/4 cup dried, crumbled (see Tips, below)
3 large or 5 medium-size fresh hoja santa leaves or 6 dried leaves (see Tips, below)
2 cups cooked Great Northern or other white beans

Steps:

  • Choose a deep saucepan or Dutch oven large enough to hold the meat comfortably. Place the tied pork loin and bones in it along with the peppercorns, salt, and 4 of the garlic cloves. Add enough cold water to cover by 1 inch (at least 7 cups). Bring to a boil over high heat. Reduce the heat to medium-low and cook, partly covered, for 1 hour, or until a meat thermometer inserted into the center reads 120° F. (Do not worry about the low temperature. The meat will cook more thoroughly in reheating.) Remove the meat and bones from the cooking stock and set aside. Strain the stock; you should have about 6 cups.
  • Grind the cloves and cumin together in an electric coffee or spice grinder, or with a mortar and pestle. Place the ground spices in a blender with the chiles, tomatillos, onion, thyme, marjoram, the remaining 5 garlic cloves, and 1/2 cup of the strained stock. Process until smoothly puréed (about 2 minutes on high).
  • Return the remaining strained stock to the pan; bring back to a boil, and adjust the heat to maintain a gentle simmer. Add the puréed mixture to the hot stock and cook, uncovered, for 3 minutes.
  • Thin the masa by mixing with 1 cup water. Whisk the thinned masa into the stock mixture; whisking constantly, let the sauce return to the simmer.
  • Cook, uncovered, over low heat for 10 minutes, whisking occasionally. If lumps form, pass the mixture through a medium-mesh sieve (pushing with a spoon to force through the lumpy bits) and return to the heat. The mixture should thicken to the consistency of whipping cream; if necessary, increase the heat slightly to reduce and thicken it.
  • Untie the cooked pork and carve into serving pieces. Carve the bones into separate rib sections.
  • Place the parsely, epazote, and hoja santa in a blender or food processor. If using a blender, add a few tablespoons water to facilitate blending. Process to a smooth purée.
  • Add the cooked beans to the masa-thickened sauce and let return to a simmer. Return the carved meat and bones to the pot along with the puréed herbs. Taste and add more salt if desired. Cook until just heated through, 4 to 5 minutes. Give each person a piece or two of rib bone along with the meat and sauce. Serve immediately.
