GREEN TOMATO STEW WITH PORK LOIN



Green Tomato Stew with Pork Loin image

This green tomato recipe is the easiest, most delicious stew you'll ever taste. Made with tender cubes of pork loin, this flavorful soup is a keeper.

2 tablespoons extra-virgin olive oil
1 small onion (diced)
1 whole shallot (diced)
2 cloves garlic (diced)
1 pound pork loin (but into 1-inch cubes)
1 cup dry white wine
2 pounds green unripe tomatoes (chopped)
2 cups chicken stock
1 whole bay leaf
5-6 leaves fresh sage
1 teaspoon marjoram
1 teaspoon salt
1 teaspoon black pepper
1/4 cup freshly chopped parsley for garnish

Steps:

  • Preheat oven to 225°F (107°C).
  • Heat olive oil in a small saucepan over medium-low heat and cook onions until they are tender and just beginning to brown, about 8-10 minutes, stirring occasionally to keep them from burning. Add shallot and garlic and cook for 1 minute, stirring constantly. Remove from heat.
  • Heat a Dutch oven over medium-high flame and sear pork cubes on all sides. Remove pork from Dutch oven and pour in white wine. Lower heat to medium-low and cook for 1 minute, scraping up all the good meaty bits on the bottom with a spatula.
  • Pour cooked onions and seared pork into white wine, then add tomatoes, chicken stock, bay leaf, sage, marjoram, salt and pepper. Cover Dutch oven and slide it into the oven. Cook for 3 to 5 hours, depending on how long you've got, stirring well once every hour. The longer the stew cooks, the more tender the pork will be. If necessary, add a little water or stock here and there, in 1/2 cup increments, to keep the stew from burning.
  • Serve hot, topped with freshly chopped parsley, or freeze for up to four months.

3 tablespoons olive oil
1 medium onion, chopped (about 1 cup)
1 teaspoon mustard seeds
1 can (14.5 ounces) whole tomatoes, with juice
1/4 cup cider vinegar
1/4 cup golden raisins
4 teaspoons dark-brown sugar
Coarse salt and ground pepper
4 pork loin chops, (each 1/2 inch thick and 6 to 8 ounces)

Steps:

  • Make chutney: Heat 1 tablespoon oil in a small skillet over medium heat. Add onion and mustard seeds; cook, stirring occasionally, until onion is golden, about 8 minutes.
  • Add tomatoes, breaking them up with a spoon. Stir in vinegar, raisins, sugar, and 1/4 cup water; season with salt and pepper. (Yellow raisins, which are plumper and sweeter than dark ones, are often used to make chutneys.) Bring to a boil, and reduce heat; simmer, stirring occasionally, until mixture has thickened, about 15 minutes. Set chutney aside.
  • Meanwhile, generously season both sides of pork chops with salt and pepper. In a large skillet, heat remaining 2 tablespoons oil over medium-high heat. Cook pork (in two batches, if necessary) until browned and cooked through, 3 to 4 minutes per side. Serve with chutney.

This sweet green tomato chutney is a great way to use up unripened tomatoes.

2 pounds green tomatoes, chopped
1 pound cauliflower, chopped
1 ½ pounds onions, chopped
2 ½ pounds brown sugar
3 cups distilled white vinegar
1 ¼ cups all-purpose flour
2 ½ teaspoons ground turmeric
2 ½ teaspoons dry mustard powder
2 ½ teaspoons curry powder
½ teaspoon ground nutmeg
½ teaspoon ground cloves
½ teaspoon ground ginger
1 cup distilled white vinegar

Steps:

  • Place the tomatoes, cauliflower, onion, sugar, and 3 cups of vinegar into a large pot; bring to a boil. Reduce heat to medium-low and stir until the sugar has dissolved, 5 to 10 minutes.
  • Stir the flour, turmeric, mustard, curry, nutmeg, clove, and ginger together in a bowl. Stir in the remaining cup of vinegar to create a thin paste. Blend this mixture into the simmering tomatoes. Cook and stir until the mixture thickens, then simmer an additional 10 minutes. Cool completely and store in the refrigerator.

2 tablespoons vegetable oil
1 teaspoon cumin seeds
½ teaspoon mustard seed
1 (2 inch) piece cinnamon stick
½ teaspoon fennel seeds
6 large tomatoes, cut into 8 wedges
1 teaspoon cayenne pepper
1 teaspoon salt, or to taste
1 cup water
½ cup white sugar
8 bone-in pork loin chops (1 inch thick)
1 pinch salt and pepper to taste
2 tablespoons vegetable oil

Steps:

  • Heat 2 tablespoons of oil in a large skillet over medium heat. Add the cumin seed, mustard seed, and cinnamon stick. Cook and stir until seeds are fragrant and begin to pop, about 1 minute. Stir in the fennel seed and then add the tomatoes. Season with cayenne pepper and salt. Pour in the water, reduce heat to low, cover and simmer until the tomatoes are very soft, about 20 minutes.
  • Stir the sugar in with the tomatoes and set the heat to high. Cook until sugar has dissolved, then continue to cook while stirring constantly until the mixture is glossy, about 3 minutes. Remove from the heat and set aside.
  • Season the pork chops with salt and pepper. Heat the remaining oil in a large skillet over medium-high heat. Fry the pork chops on each side until browned and cooked through, about 4 minutes per side. Remove from the heat and allow to rest for a few minutes.
  • Serve pork chops with about a tablespoon of chutney spooned over the top.

2 cups packed baby spinach
1/2 cup packed fresh cilantro leaves
1/2 cup Greek yogurt
1/2 jalapeno, seeds removed if less heat desired

Steps:

  • Blend or pulse the spinach, cilantro, yogurt, jalapeno, 2 tablespoons water and 3/4 teaspoon salt in a blender or food processor until smooth and creamy. Refrigerate in an airtight container for up to 2 days.

1 pound pork tenderloin, trimmed, cut into 8 pieces, lightly pounded
Coarse salt and cracked black pepper
1 small onion, thinly sliced
1/2 cup cider
1/2 cup cider vinegar
2 teaspoons sugar
1/4 teaspoon hot pepper flakes
1 cinnamon stick
1/2 cup frozen cranberries
1/2 cup dried apricots
1/2 cup dried prunes
1 large apple, thinly sliced
2 cups chopped rainbow chard leaves and stems
1 tablespoon finely grated orange zest

Steps:

  • Preheat oven to 250 degrees F. Season pork with salt and pepper on both sides. Heat a non-stick pan over medium heat. Add the pork and cook, turning once, until golden brown and cooked through, about 2 to 3 minutes per side. Remove to an oven proof platter. Hold warm in oven while you prepare sauce.
  • Add onions to pork pan and cook, stirring often until slightly softened, about 3 to 4 minutes. Increase heat to high, add cider, cider vinegar, sugar, chili flakes, and cinnamon stick. Bring to a boil. Add apricots and prunes. Reduce to a simmer. Add cranberries, apples, and swiss chard and cook until sauce is slightly thickened and chard and apples are tender, about 3 to 5 minutes. Add orange zest and cook 1 minute more.
  • Divide pork among serving plates, pour chutney over pork slices. Serve immediately.

This chutney recipe is a great way of using up a glut of garden tomatoes, making them last all year

Number Of Ingredients 7

2½ kg green tomatoes
500g onion
1 rounded tbsp salt
500g sultanas
500g cooking apples
500g light muscovado sugar
1.14l jar spiced pickling vinegar

Steps:

  • Slice the tomatoes (you can skin them if you want, but it's not necessary). Finely chop the onions. Layer both in a large bowl with the salt. Leave overnight.
  • The next day, chop the sultanas using a large, sharp knife, then peel, core and chop the apples. Put the sugar and vinegar into a large pan and bring to the boil, stirring to dissolve the sugar. Add the sultanas and apples and simmer for 10 mins. Strain the tomatoes and onions in a colander (but don't rinse), then tip into the pan and return to the boil.
  • Simmer for about 1 hr, stirring occasionally until the mixture is thick and pulpy. Transfer to warmed jars (see tips, below) and cover with lids.
