BAKED PORK TENDERLOIN WITH ORANGE MARMALADE

- Preheat oven to 425 degrees. Lightly spray a baking sheet with cooking spray and set aside.
- In a small bowl whisk together all the spices.
- On a flat surface cut a piece of parchment paper larger than the pork. Sprinkle spices on the parchment paper.
- Brush pork with marmalade ensuring all sides are coated, then roll tenderloin in spice mix.
- Place on prepared baking sheet and cook for approximately 25 minutes or until a meat thermometer inserted in the pork reaches 145 degrees Fahrenheit. Let the meat rest for 3 minutes before slicing.
- Serve extra warmed marmalade on the side if desired.

- Place pork slices in an ungreased 13-in. x 9-in. baking dish. Combine butter, thyme and cayenne; spread over pork. Pour 3/4 cup orange juice over meat. Bake, uncovered, at 425° for 20-25 minutes or until meat is no longer pink, basting occasionally., Remove pork and keep warm. Pour pan drippings into a measuring cup; add enough remaining orange juice to measure 3/4 cup. Pour into a saucepan. Stir in flour and sugar until smooth. , Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Serve with pork.

- Make the orange marinade by whisking together the orange juice, soy sauce, rosemary, and garlic. Pour over pork tenderloin and marinate for at least one hour, preferably overnight.
- Preheat oven to 400 degrees F (205 degrees C). Drain pork, reserving the marinade, and place on a baking sheet. Season with salt and pepper to taste. Roast for about 20 minutes until internal temperature has reached 145 degrees F (63 degrees C).
- Meanwhile, strain the reserved marinade and bring it to a simmer in a small saucepan. Serve this as a sauce for the meat.

- Preheat the oven to 400°F
- Heat the oil in a large frying pan and brown the pork on all sides. Place in a baking dish and roast in the oven for 20-25 minutes, depending on the thickness of the meat.
- While the pork is roasting, to the unwashed frying pan, add the sherry and stock and bring to the boil until reduced by about one quarter. Add the orange juice and rind and redcurrant preserves and simmer gently until dissolved. Taste for seasoning and add salt and pepper and finally the sage. The sauce should be thin and slightly syrupy.
- When the pork is done, allow to rest for 10 minutes before slicing into medallions.

Steps:
- Preheat oven to 425 degrees, season the pork tenderloin with seasoning salt, place in roasting dish and place in preheated oven; back for 20 to 25 minutes or until meat thermometer registers 160 degrees.
- Remove meat from oven and cover with foil, allow to stand while making sauce.
- In a small skillet, add the juice, broth, ketchup, honey and orange zest; bring to a boil, reduce heat and simmer for 10 to 15 minutes or until liquid is reduced by half.
- Slice the pork in 1/4 inch slices, add to sauce with the rosemary and simmer for 4 to 5 minutes or until meat is nicely glazed.
- If desired, mix the 1/4 teaspoon arrowroot starch in a small amount of water and add to sauce to thicken slightly.

- Light 1 chimney full of charcoal. While the charcoal is lighting, mix all ingredients for the rub in a small bowl. Rub the trimmed tenderloin with the mixture. When the charcoal is all lit and covered in gray ash, pour out and spread the coals over half of the charcoal grate. Cover and let the grill heat up for 5 minutes.
- Cook the tenderloin uncovered, directly over the coals until browned on all four sides, about 2 1/2 minutes per side. Move the pork to the cool side of the grill, cover, and continue to cook until an instant-read thermometer registers 145 degrees in the thickest part of the tenderloin, about 5-10 minutes longer.

- 1. Heat the broiler to high with a rack 6 inches from the element. Pat the pork dry, then use a meat mallet or a small heavy skillet to gently flatten the pieces to an even 1-inch thickness. Season with salt and pepper. In a small bowl, use your fingers to rub together the sugar, orange zest, 1 tablespoon of the sage and the cayenne. Set aside.
- 2. In a 12-inch broiler-safe skillet over medium-high, heat the oil until just beginning to smoke. Add the pork and cook until deep golden brown on one side, about 3 minutes. Transfer the pork browned side up to a large plate; reserve the skillet. Use your hands to press the sugar mixture onto the tops of the pork pieces in an even layer. Return to the skillet, sugar side up. Set under the broiler until the meat registers 135°F at the center and the sugar mixture is golden brown, 5 to 7 minutes, rotating the pan halfway through. Transfer to a carving board and let rest.
- 3. Meanwhile, return the skillet to medium-high heat on the stovetop. Add the orange juice and remaining 1 tablespoon of sage and cook, scraping up any browned bits, until the sauce is syrupy, 2 to 3 minutes. Stir in the vinegar. Taste and season with salt and pepper. Serve the pork over the sauce.
