2 pork tenderloins (1 pound each), cut into 2-inch pieces
1 teaspoon salt
1/2 teaspoon pepper
2 large carrots, cut into 1/2-inch slices
2 celery ribs, coarsely chopped
1 medium onion, coarsely chopped
3 cups beef broth
2 tablespoons tomato paste
1/3 cup pitted dried plums (prunes), chopped
4 garlic cloves, minced
2 bay leaves
1 fresh rosemary sprig
1 fresh thyme sprig
1/3 cup Greek olives, optional
Chopped fresh parsley, optional
Hot cooked mashed potatoes, optional

Steps:

  • Sprinkle pork with salt and pepper; transfer to a 4-qt. slow cooker. Add carrots, celery and onion. In a small bowl, whisk broth and tomato paste; pour over vegetables. Add plums, garlic, bay leaves, rosemary, thyme and, if desired, olives. Cook, covered, on low 5-6 hours or until meat and vegetables are tender., Discard bay leaves, rosemary and thyme. If desired, sprinkle stew with parsley and serve with potatoes.

2 Pounds Boneless Pork Shoulder Roast
1/2 Cup Flour Seasoned With Salt & Pepper
6 Tablespoons Olive Oil
1 Large Onion, Cut Into Chunks
4 Medium Carrots, Peeled & Cut Into 1-inch Pieces
3 Celery Stalks Cut Into 1-inch Pieces
3 Garlic Cloves, Minced
1/2 Cup White Wine
2 (14 Ounce) Cans Diced Tomatoes
1 Teaspoon Dried Oregano
1 Teaspoon Finely Chopped Fresh Rosemary
1/2 Teaspoon Fennel Seeds
Salt & Pepper to Taste
1/4 Cup Chopped Fresh Parsley
Zest of 1 Lemon
1 Large Garlic Clove

Steps:

  • Trim the roast of fat, and cut into 1-inch pieces.
  • Place the flour in a plastic bag, dump in the pork pieces and shake the bag until coated.
  • Heat half the oil in a heavy skillet or Dutch Oven, and cook half the pork pieces over medium heat until lightly browned.
  • If Using a Slow Cooker, place the browned pork pieces in the slow cooker, then continue to brown the remaining pieces, and place these in the slow cooker when browned as well.
  • Dump the rest of the browned pork and remaining stew ingredients except the garnish into the slow cooker and turn it on low for 8 hours.
  • If using a Dutch Oven, after browning the meat, remove it to a plate, and saute the onion, carrots, celery, and garlic until tender, about 5 minutes.
  • Return the meat to the pot along with the remaining stew ingredients except the topping.
  • Bring to a boil, then reduce heat to a simmer,cover, and cook for 2 1/2 to 3 hours or until the rest is very tender.
  • Just before the stew is finished, chop the topping ingredients together.
  • Serve the stew on polenta, or in bowls with a sprinkling of Gremolata on top.

I'm sure you've heard by now that corned beef and cabbage is not authentic St. Patrick's Day food. I decided to do a little mash-up and this Irish pork stew with baby cabbage was the result. By the way, baby cabbage can be a little hard to find, but you can use Brussels sprouts, and no one will know the difference, mostly because there isn't one.

1 (2 1/2 pound) boneless pork shoulder, cut into 2-inch cubes
salt and ground black pepper to taste
1 tablespoon vegetable oil
1 tablespoon butter
1 large onion, chopped
2 cloves garlic, minced
1 tablespoon all-purpose flour
1 bay leaf
¾ teaspoon caraway seed
1 (12 fluid ounce) bottle dark beer (such as Guinness®)
2 cups chicken broth
3 carrots, cut into 1-inch pieces
2 stalks celery, cut into 1-inch pieces
¼ cup chopped fresh flat-leaf parsley
3 tablespoons balsamic vinegar
12 Brussels sprouts, halved
3 cups mashed potatoes, or as needed
1 teaspoon chopped fresh flat-leaf parsley, or to taste

Steps:

  • Season pork cubes with salt and black pepper.
  • Heat vegetable oil in a pot over high heat. Working in batches, cook and stir pork in hot oil until browned on all sides, 5 to 10 minutes. Transfer pork to a bowl and reduce heat to medium.
  • Melt butter in the pot. Cook and stir onion with a pinch of salt in hot butter until onion is softened and translucent, 7 to 10 minutes. Add garlic; saute until fragrant, about 30 seconds.
  • Stir flour into onion mixture; cook and stir until flour is completely incorporated, about 2 minutes. Add bay leaf and caraway seed; cook for 2 minutes more. Pour beer into onion mixture. Cook and stir until thickened, 1 to 3 minutes.
  • Stir pork, chicken broth, carrots, and celery into beer mixture; bring to simmer. Stir 1/4 cup parsley and balsamic vinegar into stew, reduce heat to medium-low, and simmer until pork is fork-tender, about 2 hours.
  • Bring a large pot of lightly salted water to a boil. Add the Brussels sprouts and cook uncovered until almost tender, about 5 minutes. Drain.
  • Stir Brussels sprouts into stew and simmer until heated through, about 5 minutes. Season with salt and pepper to taste. Divide mashed potatoes between 6 bowls. Ladle stew over potatoes and top each with a pinch of parsley.

12 ounces whole onion or 11 ounces chopped, ready-cut onion (2 1/4 cups)
2 teaspoons olive oil
2 large cloves garlic
4 ounces peeled carrots or 4 ounces sliced, ready-cut carrots (1 cup)
4 ounces assorted wild or plain white mushrooms
8 ounces pork tenderloin
Enough fresh rosemary to yield 1 tablespoon rosemary leaves or 1 teaspoon dried
1 cup dry red wine
2 1/4 cups no-salt-added chicken stock
1/2 cup fine-grain polenta or instant polenta
1 ounce Parmigiano-Reggiano ( 1/3 cup coarsely grated), optional
1/8 teaspoon salt
Freshly ground black pepper to taste

Steps:

  • Chop whole onion.
  • Heat large nonstick pan until it is very hot; reduce heat to medium-high, and add oil. Saute onion in the oil until it begins to soften.
  • Meanwhile, mince garlic, and add to onion as it cooks.
  • Slice carrots in food processor, and add to onion as it cooks. Wash, dry and slice mushrooms in food processor, and add to vegetables.
  • Wash, dry and cut tenderloin into bite-size chunks. When vegetables have softened, push to the side, and brown meat quickly all over.
  • Strip rosemary branches of leaves to make 1 tablespoon; bring wine, stock and rosemary to boil in covered pot for polenta.
  • Mix the browned meat in with the vegetables, and continue cooking over low heat.
  • Slowly stir polenta into boiling stock to prevent lumping; reduce heat to medium-high, and continue stirring polenta until it thickens.
  • Grate cheese, if using, and stir into polenta.
  • Season pork mixture with salt and pepper, and serve over polenta.

1 tablespoon dijon mustard
2 teaspoons balsamic vinegar
1 teaspoon chopped fresh rosemary, plus 1 small sprig
Kosher salt and freshly ground pepper
1 large pork tenderloin (about 11/4 pounds)
2 tablespoons extra-virgin olive oil
4 cloves garlic, thinly sliced
1/4 teaspoon red pepper flakes
1 bunch broccoli, cut into florets
11/2 cups skim milk
3/4 cup quick-cooking polenta

Steps:

  • Preheat the oven to 375 degrees F. Combine the mustard, vinegar, chopped rosemary and 1/2 teaspoon each salt and pepper in a bowl; brush all over the pork. Heat 1 tablespoon olive oil in a large nonstick ovenproof skillet over medium-high heat. Add the pork and cook until browned on all sides, about 5 minutes. Transfer the skillet to the oven and roast until a thermometer registers 145 degrees F, about 15 minutes. Transfer the pork to a cutting board and let rest.
  • Wipe out the skillet. Add the remaining 1 tablespoon olive oil, the garlic and red pepper flakes; cook over medium heat, 2 minutes. Add the broccoli, 1/4 cup water and 1/4 teaspoon salt. Cover; cook 5 minutes.
  • Bring 3 cups water, the milk, rosemary sprig and 1/4 teaspoon salt to a boil in a saucepan over medium heat; discard the rosemary. Whisk in the polenta and cook, whisking, until thickened, 3 to 5 minutes. Remove from the heat and stir in the parmesan. Slice the pork and serve with the broccoli and polenta.

Pork shoulder is one of the most glorious things to cook in an electric pressure cooker. The meat becomes velvety and suffused with rich, brawny juices. Here, red wine, tomatoes, rosemary and sage perfume the pork, while olives, stirred in at the end, give it brightness. This stew is even better cooked a day or two ahead, giving the flavors time to meld. Making it in advance also gives the fat a chance to solidify, so it's easy to remove before reheating. Then, if you like, you can reheat the stew in the electric pressure cooker using the sauté setting. Serve this over polenta or rice, or with good bread, to soak up the meaty sauce.

2 pounds pork shoulder or pork stew meat, cut into 2-inch chunks
1 1/2 teaspoons kosher salt (Diamond Crystal), plus more as needed
3/4 teaspoon freshly ground black pepper, plus more as needed
6 garlic cloves, grated, passed through a press or crushed into a paste
1 tablespoon chopped fresh rosemary
1 tablespoon chopped fresh sage
Large pinch of red-pepper flakes
1 teaspoon coriander seeds
Olive oil
1/2 cup dry red wine
1 (15-ounce) can whole peeled plum tomatoes
2 medium carrots, sliced 1/2-inch thick (about 1 cup)
1/2 cup pitted and torn green olives, such as Castelvetrano
Chopped parsley or basil, for serving

Steps:

  • Season the pork all over with the salt and pepper. In a large bowl, combine the pork, garlic, rosemary, sage and red-pepper flakes.
  • In a small dry skillet, toast the coriander seeds until fragrant, 1 to 2 minutes. Transfer to a mortar and pestle and coarsely crush (or do this on a cutting board with the side of a heavy knife). Add crushed seeds to the pork and toss well. Refrigerate for at least 30 minutes or overnight.
  • Set the pressure cooker to the sauté function on medium. Add 1 tablespoon oil and let it get hot for a few seconds, then add enough pork chunks to fit comfortably in one layer with a little space around each piece. Let brown for 2 to 3 minutes per side, then transfer the cubes to a plate. Add a little more oil if the pot looks dry and continue browning the rest of the pork.
  • Add the wine to the pot and let simmer, scraping the browned bits from the bottom, until it reduces by half, about 2 minutes. Using kitchen shears or your hands, break the tomatoes into pieces and add them, along with their liquid, to the pot. Return pork to the pot, stir in carrots and 1/2 cup water.
  • Seal the pot and cook on high pressure for 45 minutes. Let the pressure release naturally.
  • Using a slotted spoon, transfer pork to a serving platter. Use a fat separator to separate the fat from the juices, or just spoon the fat off the top. (There may be a lot of fat.) If the sauce seems thin, use the sauté function to simmer it until it thickens. Stir in olives, then taste the sauce and add more salt, if you like.
  • Spoon the sauce over the pork, then top with chopped parsley or basil and serve.
