SLOW COOKER PORK RIB TIPS
Cooking your rib tips in a slow cooker will give you tender, falling-off-the-bone ribs. Then finish them off under the broiler or throw them on the grill for a few minutes.

Steps:
- Mix brown sugar, chili powder, salt, pepper, garlic powder, and onion powder in a small bowl. Rub each rib with dry rub mixture until thoroughly coated. Let rest for 10 minutes.
- Mix BBQ sauce and liquid smoke until well combined.
- Place ribs in the slow cooker and pour BBQ sauce mixture evenly over ribs.
- Cook on Low until ribs are tender, 4 to 6 hours.
- Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Remove ribs from the slow cooker and baste with remaining BBQ sauce.
- Broil ribs in the preheated oven for 3 to 5 minutes on each side.

- Heat a cast iron pan over medium-high heat. Add oil, ginger and pork rib tips, in that order, to the hot pan. Stir-fry ribs until the surface of the ribs turns golden on all sides, about 5 minutes.
- Pour enough boiling water on top of the ribs so the ribs are just covered with water. Cover with a lid and cook for 10 minutes. Remove lid and keep cooking until the water is almost absorbed, 5 to 20 minutes more. Be careful not to burn the ribs. Add rock sugar, vinegar, and soy sauce. Stir until well combined and cook until sauce thickens, 1 to 2 minutes.

BAKED BBQ PORK RIB TIPS

- Preheat your oven to 250°F (120°C) then rinse and pat your pork rip tips dry using paper towels.
- (Optional) For the best and most tender rib tips, remove the silverskin (membrane) on the bone side of the cut pork sections. Use a butter knife to slide under the membrane and lift gently, pulling the membrane off of the fat layer on the underside of the ribs.
- Pull out enough aluminum foil to make a pouch around the pork rib tips, then arrange the rib tips with the meat side facing up and season, then flip and season the bone side. Leave the rib tips with the meat side facing downward. Seal the aluminum foil pouch securely.
- Place the sealed pouch with the pork rib tips onto a baking sheet and transfer them into your preheated oven. Cook for 2 hours, or until tender and completely cooked through. Remove from the oven and increase the oven temperature to 400°F (205°C).
- Allow the aluminum foil to cool slightly so that you can handle the 'pouch'. Open carefully away from yourself to prevent steam burns. Discard the fat juices then flip the rib tips so that they are meat side up.
- Combine the liquid smoke with the BBQ sauce then brush onto the rip tip sections, covering all sides. Leave the foil open and the meat facing upward, then return to the oven.
- Cook for an additional 20-30 minutes, reapplying more sauce if desired. Remove from the oven when done, cut into individual rib tip pieces, if desired, and serve.

RIB TIPS
Lem's and Barbara Ann's are the two best reasons we can think of for a trip to Chicago. Barbara Ann's links and Lem's rib tips with fries make a feast fit for royalty, and that's how you'll feel from first bite to last. James Lemon, proprietor, has lived on Chicago's South Side since he moved from Mississippi in 1942. Later he joined his other brothers to help run the barbecue joint established by the oldest brother, Miles, a.k.a. "Lem," in 1951. The brothers had a history of barbecuing hogs in a homemade brick pit their father built in their hometown, Indianola. Today James is the only surviving brother, and we're thankful he is still running the business. We're big fans of rib tips. There's no duplicating Lem's rib tips with "spicy gravy"-that's what Mother Lemon called her special barbecue sauce-but when you can't be in Chicago, we hope our rib tips and spicy sauce will provoke some good memories.

- To make the dry rub, combine the brown sugar, seasoned salt, chili powder, pepper, cayenne, Old Bay, sage, and onion powder and blend well. Store in an airtight container in a cool, dark place until ready to use, for up to 6 months.
- To make the barbecue sauce, combine the ketchup, sugars, vinegar, chili powder, dry mustard, Worcestershire sauce, salt, pepper, garlic powder, and celery seeds in a saucepan over medium heat, stirring to dissolve all the sugars. Heat, stirring occasionally, for 30 minutes. Cool to room temperature.
- Set up your smoker to cook indirectly at 250 degrees F. Season the rib tips all over with the barbecue rub. Place on the smoker and barbecue for 4 to 5 hours, or until the ribs tear apart easily, basting with the sauce during the last 30 minutes of cooking.
TENDER PORK SPARE RIBS
I saw a Celebrity Chef use this braising method for baby back ribs, so I decided to give it a try for pork spare ribs. I changed the seasonings and increased the cooking time and I have been very pleased with them every time. They're really tender and the meat is so flavorful that you don't have to add BBQ sauce unless you want to. My neighbor is the one who told me about the fajita seasoning, and she was right on!

- Mix the brown sugar, fajita seasoning, and paprika in a bowl. Rub both sides of the pork spareribs with the brown sugar mixture. Place the spareribs in a 9x13-inch baking pan; cover and refrigerate overnight.
- Preheat an oven to 250 degrees F (120 degrees C). Whisk together the beer, garlic, honey, Worcestershire sauce, and mustard in a bowl. Set aside.
- Tear off 2 large sheets of heavy duty aluminum foil and lay them shiny-side down. Place a rack of spareribs on each sheet, meaty-side up. Tear off 2 more sheets of foil and place them on top of the ribs, shiny-side up. Begin tightly folding the edges of the foil together to create a sealed packet. Just before sealing completely, divide the beer mixture evenly into each packet. Complete the seal. Place the packets side-by-side on an 11x14-inch baking sheet.
- Bake in the preheated oven until the ribs are very tender, 3 hours and 30 minutes to 4 hours. Carefully open each packet, and drain the drippings into a saucepan. You may only need the drippings from one packet. Set ribs aside. Simmer the drippings over medium-high heat until the sauce begins to thicken, about 5 minutes. Brush the thickened sauce over the ribs.
- Preheat the oven's broiler and set the oven rack about 6 inches from the heat source.
- Place the ribs back into the oven and broil until the sauce is lightly caramelized, 5 to 7 minutes.
