Steps:
- Position a rack in the center of the oven and preheat to 400 degrees F.
- For the sauce: Heat the oil in a heavy medium saucepan over medium heat. Add the garlic and onions. Add 1 teaspoon salt and 1/2 teaspoon pepper. Cook until the onion is tender, about 4 minutes. Stir in the cocoa powder. Add the broth, rosemary, vinegar and tomatoes. Bring the sauce to a simmer. Cover the pan. Reduce the heat to low and simmer for 10 minutes, stirring occasionally. Season with salt and pepper. Remove the pan from the heat.
- For the pork: Whisk the cocoa powder, allspice, dark brown sugar, salt and pepper in a small bowl to blend.
- Place the pork on a heavy nonstick baking sheet. Rub the allspice mixture over the pork. Drizzle with olive oil and roast until a thermometer inserted into the center of the pork registers 145 degrees F, 25 to 30 minutes. Tent loosely with foil and let rest 10 minutes.
- Cut the pork crosswise into 1/2-inch-thick slices. Arrange the slices on a platter. Spoon the sauce over the pork and serve.

Steps:
- Season the pork all over. Mix the crumbs, cheese and sage on a plate. Pour the egg onto another plate and mix in some salt and pepper. Dip the escalopes first in the egg, then into the crumbs, pressing them on to coat evenly. They can be chilled for up to 24 hrs at this stage.
- Pour boiling water over the tomatoes, leave for 1 min, then drain and peel. Quarter, scoop out and discard the seeds, then chop the flesh. Put the tomatoes into a small pan with 1 tbsp of the oil, salt and pepper. Bring to the boil, then simmer for 2-3 mins. Throw in the capers and keep warm.
- Heat 2 tbsp oil in a small pan, throw in the sage leaves and fry until they start to crisp, 1-2 mins, then scoop out and drain on kitchen paper. Heat remaining 2 tbsp of oil in a frying pan, add pork and fry until browned (lift up a corner with tongs to check). Flip over and cook for 3-4 mins until done. Scatter with sage leaves, and serve with lemon wedges and the tomato sauce on the side.

Steps:
- To prepare roast: Mix together butter, garlic, sage and black pepper and set aside (can be made in advance and refrigerated up to one day, but warm to room temperature before proceeding).
- Preheat oven to 350 degrees F.
- Cut slits about an inch or so long and a half inch or so deep all over the top of the roast.
- Spread butter mixture over the roast, using the handle of a spoon to get it into the slits you made earlier (very important).
- (At this point, you can wrap roast in plastic and refrigerate overnight and up to 1 day.) Put prepared roast in a roasting pan, pour wine slowly over it, and cook for about 1 1/4 to 1 1/2 hours, depending on the size of the roast, basting about every 30 minutes or so with pan drippings.
- Remove from oven, cover with aluminum foil and let rest for about 15 minutes.
- After placing the roast in the oven, begin the tomato sauce by heating the olive oil and garlic together until golden and fragrant.
- Add the tomatoes, salt and 1/4 cup finely chopped sage.
- Stir well to combine, bring to a boil then reduce to simmer. Simmer no less than 30 minutes, the longer the better.
- Just before serving add the remaining chopped sage and the butter.
- After the roast has rested, slice and serve with the sauce drizzled over it.

BRAISED PORK ALL'ARRABBIATA
This spicy pork shoulder's long-simmered flavor is one you'll crave all season long. The browned pork shoulder braises with fire-roasted tomatoes, red wine and basil in the oven until it becomes fork-tender and breaks down into a rich ragù. The red-pepper flakes create a gentle heat, while basil adds sweetness. Serve over polenta or toss with tubed pasta, like penne or rigatoni. If serving with pasta, loosen the sauce with a little pasta cooking water to help the sauce coat the pasta.

Steps:
- Heat the oven to 350 degrees. Season the pork all over with 2 teaspoons salt and 1 teaspoon pepper.
- In a large Dutch oven, heat the olive oil over medium-high. Add the pork shoulder and sear until browned on all sides, 8 to 10 minutes.
- Reduce the heat to medium-low. Add the garlic and red-pepper flakes to the oil and stir to combine. Add the tomatoes, red wine and basil. Stir to combine, season with salt and lots of black pepper, then bring to a boil over medium-high heat.
- Cover, then transfer to the oven and cook until the pork falls apart when prodded with a fork, 2 1/2 to 3 hours.
- Working directly in the pot, use two forks to shred the meat into long bite-size pieces. Stir the pork into the tomato sauce until it's evenly distributed. Ragù will keep refrigerated for 3 days or frozen up to 3 months.

Steps:
- Prepare grill for cooking over medium-hot charcoal (moderate heat for gas). If using a charcoal grill, open vents on bottom of grill, then light charcoal. When charcoal turns grayish white (about 15 minutes from lighting), hold your hand 5 inches above grill rack to determine heat for charcoal as follows: Hot: When you can hold your hand there for 1 to 2 seconds Medium-hot: 3 to 4 seconds Low: 5 to 6 seconds
- If using a gas grill, preheat burners on high, covered, 10 minutes, then, if necessary, reduce to heat specified in recipe.
- Meanwhile, whisk together 1 tablespoon oil, 1/4 teaspoon cayenne, and 1/2 teaspoon each of cumin, cinnamon, and salt in a large shallow bowl. Pat pork dry and add to spiced oil in bowl, turning to coat.
- Grill tenderloins on lightly oiled grill rack, covered only if using a gas grill, turning over occasionally, until thermometer inserted diagonally 2 inches into thickest end of meat registers 150°F, 16 to 18 minutes. Transfer to a cutting board, then tent loosely with foil and let stand 10 minutes before slicing. (Internal temperature will rise to 160°F while pork stands.)
- Cook garlic in remaining 2 tablespoons oil in a 10- to 12-inch heavy skillet over moderate heat, stirring occasionally, until pale golden, 1 to 2 minutes. Add tomatoes with their juices, remaining 1/8 teaspoon cayenne, and remaining 1/4 teaspoon each of cumin, cinnamon, and salt, then briskly simmer until sauce is slightly thickened, about 10 minutes. Slice pork and serve with sauce.

- Place the meat in a dutch oven or large sauté pan and cover with 4 cups of water and add the onion, garlic, and bay leaf. Turn the heat to medium-high, and when the water starts boiling, reduce to a gentle simmer. This step will take about 30 minutes, plenty of time to prepare the rest of the ingredients, and even cook your side dishes!
- While the meat is cooking, finely dice the onion & garlic, slice the peppers (seeds and veins removed), and finely chop the tomatoes.
- The water in the pan will reduce and the pork will release its fat. Remove and discard the onion and garlic cloves. The meat will start to brown, so turn from time to time in order to have an even browning and allow the meat to keep cooking until well done.
- Once the meat is cooked, stir in the onion and garlic, cook for about 3 minutes, and then add the peppers.

- If the neck pork roast is whole, cut it into finger-thick slices. Pound them very lightly with a meat mallet. Place the meat in a roasting dish large enough to fit the meat slices in one single layer. Still, the meat slices should be close to each other and be covered in the sauce before you put them in the oven.
- Press or grate the garlic cloves and mix them with the oil, tomato puree, and water. Add the paprika powder, dill seeds, salt, and pepper to taste. Mix well.
