PORK MEI FUN WITH SWEET SHIITAKE MUSHROOMS
Steps:
- Soak the shiitake mushrooms in water for at least 4 hours. Drain reserving 1/2 cup of soaking . Place the soaking water, soy sauce, mirin and sugar in a saucepan. Bring to a boil and add the mushrooms. Reduce heat to a simmer and simmer until the liquid is all absorbed. Let the mushroom cool and then slice.
- Cook the rice vermicelli according to package directions. Drain and set aside.
- Add the sesame oil to a wok or pan. Add the garlic and ginger and saute 1 minutes. Add the pork and cook until the pork is no longer pink. Mix the 5 spice, sake, and fish sauce together and pour over the pork. Add the carrots and cook 2 minutes. then add the mushrooms and bean sprouts. Cook 2 more minutes. Stir in the noodles and cook 1 more minutes. Serve garnished with cilantro
PORK CHOPS WITH SHIITAKE MUSHROOMS
In this simple dish, thick pork chops are pan-seared, then finished in the oven. Served with a pungent grainy mustard vinaigrette and crisp-edged shiitake mushrooms, it makes a tasty, hearty weeknight meal.

- Heat oven to 375 degrees. In a medium bowl, whisk together the mustards, 1/2 cup of oil and sherry vinegar until thoroughly blended. Set aside.
- Heat a large cast-iron skillet over medium heat. Add 1 tablespoon remaining oil. Meanwhile, season pork chops on both sides with salt and pepper. Set aside to absorb the seasoning for a few minutes.
- When the oil begins to smoke, add the shiitake mushrooms to the pan, brown side down, in a single layer. Cook, undisturbed, for 3 to 5 minutes over medium heat until the caps are seared all over. Using kitchen tongs, turn mushrooms on their other side and cook for a few more minutes until golden. Transfer mushrooms to a plate and set aside. Wipe skillet of any excess oil with a wad of paper towels and set over medium heat once again.
- Add remaining 2 tablespoons of oil to the skillet. When it begins to smoke, add the pork chops in a single layer (you may have to do this in two batches). Cook the pork chops over high heat until the first side is browned, 6 to 8 minutes, depending on thickness. Flip over the pork chops and place the skillet in the center of the oven. Cook for an additional 6 to 8 minutes or until done to taste. Remove the skillet from the oven and allow the pork chops to rest, 5 to 10 minutes.
- Arrange the pork chops on a serving platter. Top with mustard vinaigrette and mushrooms. Serve immediately.

HERBED PORK WITH SHIITAKE MUSHROOMS
A fairly light dinner - the shiitake mushrooms add a rich flavor, though. This is a lot of mushrooms - I've had my best luck finding them (dried) at Asian food stores for a reasonable price.

Steps:
- Spray a large skillet with cooking spray and heat the oil.
- Saute mushrooms until tender and remove from skillet.
- Rub the peppers, salt, garlic, and thyme over the pork.
- Cook chops in skillet 3 minutes per side or until done.
- Meanwhile, blend the cornstarch and stock.
- When the pork is done, add the mushrooms and stock.
- Cook, stirring gently, until thickened.

PORK, SWEET POTATO AND SHIITAKE MUSHROOM RAMEN
Steps:
- In a Dutch oven or stockpot, heat the olive oil over medium-high heat. Add the pork and cook until brown, using a wooden spoon to break it up. Use a slotted spoon to transfer the pork to a paper towel-lined plate. Add the sweet potatoes and saute until beginning to become tender, 7 to 8 minutes. Add the mushrooms, ginger and garlic and cook until the mushrooms release their water and begin to brown, 5 to 7 minutes. Season with salt and pepper.
- Add the chicken broth, using a wooden spoon to scrape up any browned bits on the bottom of the pot. Add the soy sauce, mirin, sesame oil, brown sugar, celery seed and browned pork. Bring to a boil, reduce the heat to a simmer, cover and let simmer 15 minutes. Add the ramen noodles. Simmer until tender, about 5 minutes.
- Serve in a bowl with an egg on top. Garnish with Sriracha and cilantro.

- Place mushrooms in a medium bowl; add warm water to cover and soak for 30 minutes.
- Meanwhile, mix simmering sauce ingredients in a small saucepan.
- Squeeze mushrooms dry. Cut off and discard the stems. Add mushroom caps to sauce, Bring to a boil over medium-high heat. Reduce heat to medium-low and simmer 15 to 20 minutes or until liquid has almost all evaporated and mushrooms are well-seasoned. Serve warm or at room temperature. Divide with remaining liquid between 2 small serving bowls.

Steps:
- Marinate pork strips in Knorr seasoning, lime juice, garlic, pepper.
- Refrigerate overnight and allow flavors to blend.
- Next day, Saute onions in butter over a large skillet.
- When onions are soft, add in pork strips.
- Stir fry till no longer pink and add in the shitake or button mushroom strips that's been drained.
- Serve over hot rice or my Lemon pasta with sour cream.

- Put the pork in a large, resealable plastic bag. In a small bowl, combine the crushed red pepper, cracked black pepper, coriander, sugar and 1 tablespoon of salt. Add the mixture to the bag, seal and shake to evenly coat the pork. Refrigerate overnight.
- Preheat the oven to 325°. Transfer the pork to a small roasting pan and roast for about 2 hours and 15 minutes, until an instant-read thermometer inserted in the thickest part of the meat registers 185°. Let the pork rest for 20 minutes.
- Meanwhile, in a large nonstick skillet, heat the olive oil. Add the mushrooms and onion and season lightly with salt. Cover and cook over moderately high heat, stirring once or twice, until the onion is softened, about 5 minutes. Uncover and cook, stirring occasionally, until the shiitake are tender and browned, about 5 minutes longer. Add the vinegar and cook until nearly evaporated. Stir in the butter and chives and keep warm.
