ORANGE DELIGHT JELLO SALAD
While there appears to be a huge variety of Orange Delight salads out there, I have yet to run across one made exactly the way we make it in our home. My mom received the recipe from a co-worker probably 40+ years ago. Even after a heavy meal, this is a really refreshing dessert. I hope you enjoy it as much as we do!

Steps:
- 1. For jello mixture: Bring water to a boil, add Jell-O, stirring until clear. Remove from heat. Add frozen orange juice concentrate and stir until melted. Stir in mandarin oranges and pineapple. Pour into an 11 x 7 dish and refrigerate overnight or until the jello mixture has completely set.
- 2. For Topping: Mix pudding with milk until it starts to set up. Be sure to use only 1 cup of milk, as listed in the ingredients. You don't want to make actual pudding. Fold in Cool Whip and spread over top of jello mixture.
- 3. Optional: Put mandarin orange slices on top for color. Add crushed pecans for added texture, color, etc.
ORANGE TAPIOCA DELIGHT
I got this recipe from my Niece who brought it to our Mother's Day dinner and made such a hit with it. It is not a new recipe, but it deserves more exposure. I think it is just Yummy. Hope you like it

- 1. Mix Water and Tapioca mix in saucepan and cook til thickened.
- 2. Stir in the Orange jello til dissolved.
- 3. Stir in oranges and pineapple and let cool slightly.
- 4. Fold in the Cool Whip and pour into 7x11 glass casserole or mold.
- 5. Refrigerate at least four hours or preferably overnight.
LIME DELIGHT

- In a small saucepan, bring pineapple to a boil over medium heat. Remove from the heat; stir in gelatin until dissolved. Chill until slightly thickened, about 30 minutes. Stir in cottage cheese and whipped topping. Cover and refrigerate until thickened.

Just think! A jello salad where you don't have to boil water! Plus you can use a flavor/color jello that fits the season! It couldn't be easier and is so delicious!

- Put cottage cheese into bowl.
- Sprinkle with dry gelatin crystals.
- Mix in drained fruit.
- Cover and refrigerate overnight.
- Before serving, stir in whipped topping.
- Recipe may be doubled.
- I usually use a"red" fruit flavor (like cherry or raspberry) with crushed pineapple-- Use your imagination!
- Options: You can add chopped nuts, miniature marshmallows, and/or cherries!
7-UP GELATIN (JELLO) SALAD DELIGHT

- Dissolve jello in 2 C boiling water.
- Add marshmallows and stir until melted.
- Add 7-Up.
- When cool, add drained, crushed pineapple and bananas.
- Pour into dish and let set until firm in refrigerator.
- TOPPING Cook first four topping ingredients until thickened in a pan on top of stove.
- Cool.
- When cooled fold in whipped topping.
- Spread over set jello mixture.

- In a saucepan, bring the cranberries, sugar and water to a boil. Reduce heat and cook until berries burst. Strain through a food mill or sieve into a large bowl. , Stir in the gelatin, lemon juice and orange juice. Cool until mixture coats the back of a spoon. , In a small bowl, whip cream until soft peaks form. Add confectioners' sugar and vanilla; beat until stiff peaks form. Fold into cranberry mixture. Chill until set.

- Drain pineapple, reserving syrup; add water to syrup to make 2 1/2 cups. Place 1 1/4 cups of syrup mixture in saucepan and bring to a boil. dissolve 1 package of jello in boiling syrup mixture. Add 1/2 drained pineapple and 1/2 cranberry sauce. Mix well and pour into a 9 x 13 dish. Chill until firm.
- Beat cream cheese with sugar until smooth. Gradually beat in evaporated milk and vanilla. Soften unflavored gelatin in the cold water and heat to dissolve. Blend gelatin into cheese mixture, pour over firm Jello layer. Chill until firm.
- Boil remaining 1 1/4 cup syrup mixture, dissolve remaining package of jello, add remaining crushed pineapple and cranberry sauce. Chill until room temperature. Pour very gently over cheese layer and chill until firm. Cut into squares.

- 2. Pour a small amount in the bottom of an 8-cup mold. Let set in refrigerator until thick enough to arrange designs in it. Place the orange segments, cherries and pineapple cubes on top. Return to the refrigerator.
- 3. To remaining gelatin, add cream cheese and marshmallow fluff. Beat until smooth. Add the evaporated milk and crushed pineapple and stir to combine well. Refrigerate.
