Tender three-ingredient meatballs are the star of this quick and easy skillet bake. They're seared and simmered in a sweet pepper-studded tomato sauce, then slices of toasted Italian bread are nestled into the skillet and everything is topped with mozzarella. After a trip to the broiler for maximum cheese-stretch effect, all you have left to do is to set the whole thing on the table and dig in.

1 pound ground pork
1 tablespoon fennel seeds, lightly crushed
1 1/2 ounces Parmigiano-Reggiano, grated (1/3 cup)
Kosher salt and freshly ground pepper
2 tablespoons extra-virgin olive oil, plus more for drizzling
2 red or yellow bell peppers, cored and cut into 1/2-inch strips (2 cups)
1 onion, cut into 1/2-inch slices (1 1/2 cups)
1 can tomato sauce (15 ounces)
3 thick slices crusty boule, halved
6 ounces fresh mozzarella
Thinly sliced fresh basil leaves, for serving

Steps:

  • Mix together pork, fennel, Parmigiano, 3/4 teaspoon salt, and 1/2 teaspoon pepper in a bowl. Form into 1 1/2-inch balls. Heat oil in a large straight-sided skillet over medium-high. Add meatballs and cook, turning occasionally, until golden brown, 5 to 6 minutes; transfer to a plate.
  • Add peppers, onion, and 1/4 cup water to skillet and cook, stirring occasionally, 4 to 6 minutes. Stir in tomato sauce and 3/4 cup water. Season with salt and pepper and return meatballs and any accumulated juices to pan. Bring to a boil, then reduce heat to low. Partially cover skillet and simmer until meatballs are cooked through, about 10 minutes.
  • Preheat broiler, with rack 6 inches below element. On a baking sheet, drizzle both sides of bread with oil. Broil, flipping once, until toasted. Nestle into skillet and top everything with mozzarella. Broil until cheese melts, about 2 minutes. Sprinkle with basil and serve.

These easy, versatile oven-baked pork meatballs get their bold flavor from Italian herbs, Parmesan cheese and a dash of red pepper. Serve them with our quick marinara dipping sauce as an appetizer, or pop them in a hoagie bun or on top of your pasta for quick, delicious dinners!

1 lb ground pork
1 egg
1/2 cup Progresso™ Panko Italian style crispy bread crumbs
1/4 cup shredded Parmesan cheese
1 tablespoon chopped fresh basil leaves
2 teaspoons finely chopped garlic
1 teaspoon dried Italian herb seasoning
1/2 teaspoon salt
1/2 teaspoon crushed red pepper flakes
1 tablespoon olive oil
3 cloves garlic, crushed
1/4 teaspoon crushed red pepper flakes
1 can (14.5 oz) Muir Glen™ Organic Crushed Tomatoes Fire Roasted, undrained
1/4 teaspoon salt
8 medium fresh basil leaves

Steps:

  • Heat oven to 400°F. Line 15x10x1-inch pan with foil. Spray with cooking spray.
  • In large bowl, mix Meatball ingredients until well combined. Using rounded tablespoon measure, shape 20 meatballs (1 1/2-inch); place in pan. Bake 15 to 18 minutes or until no longer pink in center (at least 165°F).
  • Meanwhile, make sauce by heating oil in 2-quart saucepan over medium heat. Add crushed garlic and 1/4 teaspoon pepper flakes; cook 2 to 3 minutes or until garlic is fragrant. Add tomatoes, 1/2 teaspoon salt and the basil leaves; heat to simmering. Stir; cook 4 to 5 minutes or until slightly thickened. Remove from heat; cool 5 minutes. Carefully transfer to blender. Vent blender top, and cover with kitchen towel. Blend sauce 40 to 45 seconds or until garlic and basil are blended with tomatoes. Serve sauce warm with meatballs.

1 pound ground pork
1 pound ground beef (85 percent lean)
1 cup fresh breadcrumbs
1/2 cup finely grated pecorino
1 1/2 teaspoons coarse salt
2 large eggs
1 clove garlic, minced
1/4 cup chopped fresh flat-leaf parsley
2 tablespoons extra-virgin olive oil
1/2 small onion, finely chopped
Pinch of red-pepper flakes
1 can (28 ounces) whole peeled tomatoes, pureed
4 leaves fresh basil (optional)
8 ounces fresh mozzarella, thinly sliced

Steps:

  • Using your hands, gently mix together pork, beef, breadcrumbs, pecorino, salt, eggs, garlic, and parsley in a large bowl. Form mixture into 2-inch balls.
  • Heat oil in a large ovenproof skillet over medium-high heat. Add meatballs; cook, turning, until browned all over, about 10 minutes. Use a slotted spoon to transfer to a plate.
  • Reduce heat to medium. Add onion and pepper flakes; cook, stirring occasionally, until onion is tender, about 4 minutes. Add tomatoes and basil; simmer, stirring frequently, until sauce is slightly thickened, about 8 minutes. Return meatballs and any juices to pan. Simmer, turning meatballs once, until cooked through, about 20 minutes.
  • Heat broiler. Arrange mozzarella on top of meatballs. Broil until melted, 2 to 3 minutes; serve.

1 egg, lightly beaten
1/3 cup (tightly packed), washed, dried and chopped parsley leaves
Pinch kosher salt
1 teaspoon chili flakes
1 teaspoon fennel seeds
About 1/2 cup vegetable oil
1 pound ground pork (lean but not too lean)
1/2 cup bread crumbs, toasted
1/2 cup grated Parmesan
1/4 cup sour cream

Steps:

  • Put the meat in a large bowl and add the bread crumbs, Parmesan and sour cream and mix with your hands. Add the remaining ingredients, except the vegetable oil, and combine well. Roll into about 20 or so balls, about 2 inches in diameter.
  • Heat the vegetable oil in a large skillet over high heat. When the oil begins to smoke lightly, shut off the heat (to avoid splattering). Add the meatballs in a single layer and spread somewhat apart so they have a chance to "brown" instead of steaming. Put the skillet back on high heat and brown the meatballs, turning them so they brown all around. Treat them like hamburgers and cook them until they are medium-rare, about 3 to 5 minutes. Touch them to make sure they are still tender in the center.
  • Add the meatballs to the hot tomato sauce and allow them to bubble slightly and simmer over very low heat for a few minutes. Shut off the heat and allow the mixture to "rest" for a few additional minutes before serving.

  • Make meatballs by combining all the meatball ingredients except the Provolone and mixing well. Scoop out 1/4-cup of the mixture and form into large meatballs. Press a cube of cheese into the centre of the meatball and re-form the meatball so the cheese if fully encased. Place into greased oven-safe skillet (cast-iron is perfect!).
