PORK CHOPS IN TOMATO SAUCE
"This is a variation of a main dish that my dad always made," writes Cindy Glancy of Point Pleasant, New Jersey. "I now add some special touches of my own when I make it for my husband and two children. The tender chops are fast to fix on a weeknight."

- In a large nonstick skillet, saute onion and garlic in butter until tender. add pork chops; brown on both sides. In a small bowl, combine the tomato sauce, wine or broth, oregano and pepper; pour over chops. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until tender.

Steps:
- In a large skillet, heat oil over medium heat. Brown pork chops on both sides. Remove; keep warm. In same skillet, cook and stir onion until tender. Stir in remaining ingredients., Return pork to skillet. Bring to a boil. Reduce heat; simmer, covered, 15-20 minutes or until tender. Let stand 5 minutes before serving. Serve with sauce.

These are a crowd pleaser! It spicy and tasty and the gravy goes great over rice. The recipe comes from "Olympic Celebrations, Southern Style" booklet from the Southern Living Cooking School. This is good down-home cookin'!

- Combine flour, salt, 1/4 teaspoon red pepper & 1/4 teaspoon black pepper; dredge pork chops in mixture. Heat 1 tablespoon oil in a large nonstick skillet; add pork chops and cook over medium heat until browned on both sides. Remove from skillet and set aside. Add remaining oil to skillet; add garlic and green onions. Cook, stirring constatnly, 3 minutes.
- Combine gravy mix and 1/2 cup milk; whisk until blended. Add tomatoes, remaining milk, water, remaining red pepper, remaining black pepper and thyme to skillet; bring to a boil. Add gravy mixture and stir until smooth, using a wire whisk. Arrange pork chops in skillet, turning to coat with sauce; cover, reduce heat and simmer 15 minutes.
- This recipe can be doubled if cooked in a duch-oven. It's okay if pork chops overlap one another.

- In large skillet, mix olive oil, garlic and red chile flakes land cook on medium low for 4 to 5 minutes. Add pork chops, salt, pepper and onions. Brown meat on both sides. Remove pork from pan and set aside. Add remaining ingredients except parsley. Bring mixture to a boil, then reduce heat and return meat to pan. Cover and cook for 15 minutes. - Put all ingredients in a oven proof dish preferably a clay dish if you have one.
- Make sure the chops are completely covered with the sauce.
- Put into oven for 1 hour- 1h 15 min at 200 degrees Celcius with the lid on the dish.
- Remember not to put the clay dish into a varm oven but to turn it on once the dish is in it.

This is just one of THOSE recipes, fool your friends into thinking you've been cooking all day and they have no idea how simple it is to make. I saw the original of this in a world cookbook 20 years ago, long since lost and now adapted to perfection.

- Rinse and pat dry chops. Smother chops with garlic and on a chopping board, dip in the flour WELL seasoned with salt and pepper (I always use marine salt because its healthier).
- In a large frying pan (that has a lid), on medium heat fry the chops in oil until slightly golden. Remove from pan. Add onions and a little more oil if necessary. When golden (not brown)add flour that remains from chopping board and mix in well. now return the chops to the pan, add about half a pint (300ml) of boiling water and stir. Now you add the stock cube, Tabasco and Worcestershire sauce and stir.
- Add the lid (a wok is ideal also for this) and simmer gently until chops are tender, around 45 minutes If necessary add more water to keep plenty of sauce. You can thicken with cornflour if you need to. I serve with veg and basmati rice ( see my recipe for this). Ideal with roast potatoes also.
- Its a dish made in heaven. My Spanish friends want to use it in their restaurant, but with chicken! I often use pork loins also, but the bones from the chops enhance the flavor.
