1 tablespoon butter
¼ cup chopped onion
1 apple - peeled, cored, and sliced
2 (1/2-inch thick) pork chops
¾ cup applesauce
2 tablespoons brown sugar
½ teaspoon ground mustard
⅛ teaspoon ground cinnamon
½ teaspoon salt
ground black pepper to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Melt butter in a large skillet over medium heat; cook and stir onion and apple slices in the melted butter until tender, about 5 minutes. Transfer onion and apple to a bowl.
  • Place pork chops in the same skillet; cook over medium heat until pork chops are browned on both sides, about 5 minutes per side.
  • Mix applesauce, brown sugar, mustard, and cinnamon into onion and apple mixture.
  • Place pork chops in a 9x9-inch baking dish; season with salt and black pepper. Spoon applesauce mixture over pork chops; cover dish.
  • Bake in the preheated oven until pork chops are no longer pink in the center, about 30 to 45 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).

2 tablespoons olive oil
1 tablespoon chopped fresh thyme
salt and freshly ground black pepper to taste
4 pork chops
1 large apple - peeled, cored, and thinly sliced
1 tablespoon butter
½ cup apple juice
½ cup heavy cream
1 teaspoon cornstarch

Steps:

  • Combine oil, thyme, salt, and pepper in a shallow bowl. Add pork chops, brush with the marinade, and set aside for 15 minutes.
  • Heat a large skillet over medium heat and cook pork chops until browned on one side, 4 to 5 minutes. Turn and cook until lightly browned on the other side and juices run clear, 4 to 5 minutes. Transfer pork chops to a serving plate, cover, and keep warm.
  • Reduce heat and add butter to the skillet. Add apple slices and cook until they start to change color, 5 to 10 minutes. Transfer apples to the plate with the pork chops and keep warm.
  • Stir apple juice, cream, and cornstarch together in a bowl. Add to the skillet over medium-high heat. Bring to a boil while scraping brown bits from the bottom of the pan. Cook and stir until sauce starts to thicken, 2 to 3 minutes. Pour sauce over pork chops and apples.

4 pork loin chops
2 medium red cooking apples, peeled and quartered
1 medium onion, sliced
1/2 cup apple juice
1/2 teaspoon instant chicken bouillon granules
1/4 teaspoon dried thyme
1/2 cup heavy cream
salt and pepper

Steps:

  • Brown pork chops in oil over medium high heat, remove.
  • Add apples and onions, saute until apple is tender, remove apple and reserve.
  • Add apple juice, bouillon granules, thyme and pork chops, bring to a boil, reduce heat, cover and simmer 15 minutes.
  • Add apple and simmer until heated through.
  • Remove apple and chops to a serving platter.
  • Add cream, bring to a boil and cook until sauce is slightly reduced.
  • Season to taste and pour over chops.

This is down-home enough to make a comforting meal, and definitely up-scale enough to serve for a fancier occasion. Reducing the sauce in the skillet the chops themselves have cooked in provides a lot of good flavour. I served this with steamed new potatoes on the side because the sauce went perfectly with the potatoes as well. Parsleyed mushrooms were also on the table and it was a wonderful meal!

2 pork chops (cut 1-inch-thick)
salt and pepper
paprika or smoked paprika
olive oil (to coat skillet)
1 small red onion, minced
1/2 cup apple juice
1/2 cup heavy cream
1 garlic clove, minced very fine
2 teaspoons maple syrup
1 teaspoon Dijon mustard
1 teaspoon Worcestershire sauce
1/2 teaspoon curry powder
1 lemon, zest of
1 granny smith apple, peeled, cored, cut into thin slices and tossed in a little lemon juice (to avoid discoloration)

Steps:

  • For Sauce: Combine all sauce ingredients (except fresh apple) together and whisk until blended. Store in refrigerator until ready to use.
  • To make pork chops: Pat chops dry and season with salt and pepper. Heat oil in a heavy skillet over moderately high heat until hot but not smoking, then brown chops, turning over once, 5 to 6 minutes total. Transfer to a plate.
  • Pour off all but 1 tablespoon fat from skillet and reduce heat to moderate, then cook onion, stirring occasionally, until softened and golden brown, 2 to 4 minutes.
  • Return chops to skillet along with any juices accumulated on plate, then add sauce and simmer, covered and without turning, for another 5 to 6 minutes. Transfer chops to a clean plate. Keep sauce in skillet.
  • Add sliced apple to sauce and simmer, uncovered, stirring occasionally, until liquid is reduced, 4-5 minutes. Taste sauce and add salt and pepper to taste.
  • Serve, spooning sauce over chops.

2 pounds Golden Delicious apples, peeled and chopped
3 tablespoons sugar
1 tablespoon fresh lemon juice
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon dried sage
4 bone-in pork chops (1/2-inch thick; about 6 ounces each)
Kosher salt and freshly ground pepper
2 tablespoons vegetable oil
1/2 cup low-sodium chicken broth
2 tablespoons fresh lemon juice
2 tablespoons cold unsalted butter
Chopped fresh parsley, for topping

Steps:

  • Make the applesauce: Combine the apples, sugar and 1/2 cup water in a large pot. Bring to a simmer over medium-high heat. Reduce the heat to medium low, cover and cook, stirring occasionally, until the apples are very tender but still juicy, about 15 minutes. Remove from the heat and stir in the lemon juice. Mash the apples with a fork, or puree with an immersion blender or in a food processor for a smoother sauce. Transfer to a bowl and refrigerate at least 30 minutes.
  • Meanwhile, make the pork chops: Mix the paprika, garlic powder and sage in a small bowl. Season the pork chops with salt and pepper and rub all over with the paprika mixture. Heat a large nonstick skillet over medium-high heat and add the vegetable oil. Add the pork chops, reduce the heat to medium and cook until golden brown on the bottom, about 3 minutes. Flip and cook until browned on the other side and cooked through, 2 to 3 more minutes. Remove to a plate and pour off the drippings from the skillet.
  • Add the chicken broth and lemon juice to the skillet and scrape up any browned bits from the bottom of the pan. Add any juices from the plate of pork to the skillet and simmer until the sauce is reduced by half, 2 to 3 minutes. Stir in the butter until smooth. Transfer the pork chops to a platter and top with the pan sauce; sprinkle with parsley. Serve with the applesauce.

Apples just seem to go naturally with pork. 'Tis the season, so I thought I'd put this recipe on here for one of those cold nights, when you're looking for something filling and hearty - and simple!

4 medium pork chops
1/2 c chopped onion
1/2 c water
1 1/2 c applesauce
1 Tbsp lemon juice (or white wine, if you prefer)
1/2 tsp ground black pepper
1/2 c sour cream

Steps:

  • 1. Brown chops in large frying pan. Remove chops from pan, and trim off any excess fat.
  • 2. In the pork chop drippings, saute' onions. Add water to pan to deglaze the pan.
  • 3. Reduce heat, add applesauce,lemon juice, and pepper. Mix well.
  • 4. Return chops to the pan, and smother with the sauce. Cover, and cook gently on med-low, until chops are cooked through, approx. 35 - 40 minutes.
  • 5. Remove the chops to a warm platter. Add sour cream to the applesauce mixture in the pan, and heat through -- do not bring to a boil!
  • 6. Pour sauce over the chops, and serve. This is a great meal served with cooked cabbage, or brussels sprouts, or broccoli, or baked squash. A real "Fall" meal.
