PORK CHOP AND HASH BROWN CASSEROLE
Steps:
- Gather the ingredients.
- Heat the oven to 350 F.
- Grease a 9-by-13-by-2-inch baking pan or 2 1/2 to 3-quart baking dish.
- Heat the oil in a large skillet over medium heat. Add the pork chops and sprinkle lightly with seasoned salt. Sear the chops, turning to brown both sides.
- In a bowl, combine the soup, milk, sour cream, and pepper. Stir in the hash brown potatoes, half of the cheese, half of the French fried onion rings, the garlic powder, and butter.
- Spoon the hash brown mixture into the prepared baking dish.
- Arrange the pork chops over the potato mixture.
- Cover the pan tightly with foil and bake in the preheated oven for 40 minutes.
- Remove the foil and top with the remaining shredded cheese and fried onions. Bake, uncovered, for 5 minutes longer.

Steps:
- Place the sliced potatoes, 1 1/2 cups water, onions, and juice from pork roast in a 12" nonstick skillet.
- Bring to a boil, cover, and boil over medium heat for 10 minutes.
- Add garlic, scallions, olive oil, Tabasco, salt, Worcestershire and pork.
- Mix well and cook, uncovered, over high heat, stirring, for about 5 minutes.
- Most of the moisture will have evaporated by now and the mixture should be starting to sizzle. Since the hash will begin to stick at this point, use a heat-resistant spatula to scrape up the crusty bits sticking to the bottom of the pan and stir them into the uncooked mixture.
- Continue to cook over medium heat for about 20 minutes, stirring every 3-4 minutes.
- The mixture will brown faster in the last 10 minutes of cooking and should be stirred every 2-3 minutes.
- Turn out onto a large platter (or just bring the skillet to the table) and serve immediately.
- Garnish with fried egg on top, if desired.

- Preheat oven to 375 degrees F (190 degrees C).
- In a large skillet over medium high heat, brown pork chops on both sides and set aside.
- In a large bowl, combine the sour cream, soup and milk. Add the hash browns and chopped onion; stir to coat. Place mixture in a 13x9-inch baking dish and sprinkle the cheese over the top. Place the browned pork chops on top.
- Bake in the preheated oven for 50 minutes or until the potatoes are heated through and pork chops are fully cooked.

- Preheat oven to 350 degrees F (175 degrees C).
- Heat vegetable oil in a large skillet over medium heat. Season pork chops with seasoned salt. Cook pork chops in hot oil until browned completely, 2 to 3 minutes per side. Remove pork chops to a plate lined with paper towels to drain.
- Mix celery soup, milk, sour cream, salt, and pepper in a bowl. Fold hash brown potatoes, 3/4 cup Cheddar cheese, and about half the French-fried onions into the soup mixture; pour into a 13x9-inch baking dish. Arrange pork chops atop the mixture. Cover the dish with aluminum foil.
