PINEAPPLE PORK CHOPS

Pineapple pork chops are a breeze to make and unbelievably delicious. The seasoned pork chops are first seared then cooked in a simple sauce made of pineapples, honey, soy sauce, and garlic. The pineapples become caramelized and the chops are super tender.

4 boneless pork chops
1 teaspoon EACH: garlic powder and onion powder
½ teaspoon EACH: salt and pepper
1 tablespoon cooking oil
14 ounce can of unsweetened pineapple tidbits (juice and fruit)
2 tablespoons honey
2 tablespoons soy sauce (gluten-free or coco aminos, as needed)
3 cloves garlic (finely minced)
Minced cilantro (to serve)

Steps:

  • Season the pork chops on both sides with garlic powder, onion powder, salt, and pepper.
  • Heat the oil in a large, non-stick frying pan over medium-high heat. Add the pork chops and sear for 4-5 minutes, or until golden on one side.
  • While the chops are searing, add the pineapple tidbits, honey, soy sauce, and garlic to a medium-sized bowl.
  • Flip the chops over then pour the pineapple sauce into the pan. Continue to cook the pork chops until they reach an internal temperature of 145 degrees Fahrenheit and the pineapple sauce has reduced and thickened a little, about 10 minutes. If the pineapple sauce is getting too thick, add a splash of water.
  • Serve the pineapple pork chops with a little cilantro over the top.

1 tablespoon olive oil
4 boneless pork chops
1 (14.5 ounce) can chicken broth
2 tablespoons soy sauce
1 tablespoon vinegar
2 tablespoons brown sugar
2 tablespoons cornstarch
½ cup pineapple juice

Steps:

  • Heat the olive oil in a skillet over medium heat, and brown the pork chops about 5 minutes on each side. Remove chops from the skillet, and set aside.
  • Mix the chicken broth, soy sauce and vinegar into the skillet, and bring to a boil. Return the pork chops to the skillet, reduce heat, and simmer 20 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C). Remove chops from the skillet, reserving broth mixture, and set aside.
  • In a bowl, blend the brown sugar, cornstarch, and pineapple juice. Mix into the skillet with the chicken broth mixture. Bring to a boil. Serve with the cooked pork chops.

Steps:

  • Combine chipotle powder, garlic powder, cinnamon, and onion powder in a small bowl.
  • Pat pineapple rings dry.
  • Heat 1 teaspoon olive oil in a large, nonstick saucepan over medium-high heat. Add pineapple rings and red onion; sprinkle with 3 tablespoons reserved pineapple juice and brown sugar. Cook until pineapple is lightly browned, about 3 minutes per side. Transfer pineapple-onion mixture to a plate.
  • Pat pork chops dry and lightly season both sides with salt and pepper.
  • Heat remaining 2 teaspoons oil in the same saucepan over medium-high heat; swirl to coat pan. Add chops; cook until bottom is browned, about 3 minutes. Flip and sprinkle the chipotle mixture on top. Cook until other side is browned, about 3 minutes. Continue flipping and cooking until no longer pink in the center, 3 to 5 minutes more. 1 (8 ounce) can pineapple rings, juice drained and reserved
¼ cup brown sugar
¼ cup soy sauce
¼ teaspoon garlic powder
4 pork chops
1 pinch ground black pepper

Steps:

  • Mix together the drained pineapple juice, brown sugar, soy sauce, and garlic powder together in a large plastic zipper bag, and smush the bag a few times with your hands to mix the marinade and dissolve the sugar. Place the pork chops into the marinade, squeeze out any air in the bag, seal it, and refrigerate overnight. Reserve the pineapple rings.
  • Preheat an outdoor grill for medium heat, and lightly oil the grate.
  • Remove the chops from the marinade, shaking off excess, and grill until browned, the meat is no longer pink inside, and the meat shows good grill marks, 5 to 8 minutes per side. Brush several times with marinade and let the marinade cook onto the surface of the meat. Discard excess marinade. ¾ cup barbecue sauce (such as Sweet Baby Ray's®)
¼ cup ketchup (such as Heinz®)
2 tablespoons brown sugar
1 tablespoon soy sauce
2 teaspoons canola oil
1 teaspoon chili powder
¼ teaspoon ground black pepper
1 pinch Cajun seasoning
1 pinch Italian seasoning
3 (6 ounce) boneless pork chops
8 small red potatoes, quartered
1 head broccoli, cut into bite-sized pieces

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Tear 3 large sheets of aluminum foil.

1 boneless pork chop, per person
1 slice red onion, per person
1 slice green bell pepper, per person
2 slices canned pineapple, 2 slices per person (best in heavy syrup)
1 tablespoon teriyaki sauce, per person
1 tablespoon margarine or 1 tablespoon butter, per person
salt and pepper

Steps:

  • For each serving, lay a pork chop on a large square of heavy-duty aluminum foil.
  • Top each chop with the onion, green pepper, and pineapple slices.
  • Drizzle with the teriyaki sauce.
  • Top with the margarine and sprinkle generously with salt and pepper.
  • Wrap tightly in the foil, rolling ends to completely seal the package. Freeze or refrigerate.
  • When ready to eat, place packages directly in coals for 15 to 20 minutes. Check to see if the pork chop is cooked through; rewrap and cook a little longer, if necessary.
  • Or put in oven for 45min on 400 degrees.
