GRILLED VEGGIE PORK BUNDLES



Grilled Veggie Pork Bundles image

"We enjoy these colorful bundles on the deck along with rice and a tall glass of iced tea," Linda Turner Ludwig says from Columbiana, Ohio. For variety, try it with provolone cheese or red sweet peppers...or a substitute chicken breast for the pork chops.

Number Of Ingredients 8

4 bacon strips
2 boneless pork loin chops (4 ounces each)
1/8 teaspoon salt
1/8 teaspoon pepper
2 slices onion (1/4 inch thick)
2 slices tomato (1/2 inch thick)
1/2 medium green pepper, cut in half
2 slices Swiss cheese

Steps:

  • Cross two bacon strips to form an "X"; repeat. Sprinkle pork chops with salt and pepper; place over bacon strips. Layer with onion, tomato and green pepper. Wrap bacon strips over vegetables and secure with a toothpick., Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Prepare the grill for indirect heat, using a drip pan. Place pork bundles over the drip pan. Grill, covered, over indirect medium heat for 20-25 minutes or until a thermometer reads 160°. , Place cheese slices over bundles; cover and grill 1 minute longer or until cheese is melted. Discard toothpicks.

6 ounce ground pork
1½ teaspoon soy sauce
1½ teaspoon sesame oil
1 teaspoon ground ginger, such as watkins™
salt and freshly ground black pepper
1¾ cup finely chopped chinese (napa) cabbage
⅓ cup finely chopped fresh garlic chives or chives (about 1 ounce)
1 can refrigerated layered biscuits (8 biscuits), such as pillsbury™ grands!™ flaky layers

Steps:

  • Preheat the oven to 350 degrees F. Line a large cookie sheet with parchment paper.
  • In a medium bowl, mix the pork, soy sauce, oil, ginger, ⅛ teaspoon sea salt and ⅛ teaspoon pepper. Add the cabbage and chives; mix until well blended.
  • Separate the dough into 8 biscuits; separate each biscuit evenly into 2 layers, making 16 dough rounds. Spoon 1 rounded tablespoon of the pork mixture onto the center of each biscuit round; stretch the biscuit dough up and around the ball to cover completely. Pinch the edges together on top to seal. Place the bundles seam-side up 1 inch apart on cookie sheet.
  • Bake until golden brown, 16 to 22 minutes. Serve warm.

12 carrots pared and cut into quarters lengthwise
12 slices onions 1/4 -inch thick
6 sweet potatoes large, peeled and sliced 1/4 -inch thick
1/2 cup parsley chopped fresh
Salt and freshly ground pepper to taste
1/4 cup butter or margarine
2 tablespoons vegetable oil
12 pork chops 1-inch thick
12 slices pineapple slices canned, drained
* Part two.
3 tablespoons flour
1 1/3 cups beef broth or chicken broth (your own or canned)
Salt and freshly ground pepper to taste
1/2 teaspoon rosemary dried, crushed
1 cup half and half
Parsley sprigs for garnish

Steps:

  • Lay out 12 14-inch lengths of heavy duty foil and lightly grease. Place 4 strips of carrot on each layer with 1 slice onion and 1 or 2 slices potato. Sprinkle with 2 teaspoons parsley, salt, and pepper. Heat butter or margarine and vegetable oil in skillet brown chops on both sides. Place 1 chop on each vegetable bundle top with slice of pineapple.Sauce:*Brown flour in same skillet used for pork chops there should be enough grease left. Add broth and simmer, stirring. Add salt, pepper, and rosemary. Lower heat andstir in half-and-half simmer 3 to 4 minutes. Put 3 tablespoons sauce on top of each bundle. Bring long sides of foil together, over top, and loosely fold into tight seam fold up ends in same manner. Place on jelly roll pan and bake for 1 1/2 hours in a preheated 325° F oven. To serve, untwist bundle sufficiently to stick sprig of parsley in each bundle.

1 Pork tenderloin; sliced 1-inch thick
2 Tomatoes; sliced 1/4 inch thick
2 Sweet onions; sliced 1/4 inch thick
1 pounds Bacon slices (approximately)
Pepper
Garlic powder

Steps:

  • Slice the pork tenderloin into 1" or thicker pieces, then flatten with the side of a cleaver or rolling pin to 1/2" thickness. Cross two slices of bacon, forming an "X". Place one of the flattened tenderloin slices on top. Sprinkle with pepper and garlic powder (no need for salt!), then top with a slice of onion and a slice of tomato. Bring up the four ends of the bacon slices and secure on top with a single wooden toothpick. This should form a neat package. Place on a broiling pan so drippings can drain. Bake uncovered 50 - 60 minutes. OR Grill over medium low heat 20 - 30 minutes, but be prepared to dowse the flames -- that bacon drips like crazy!

THIS IS COMFORT FOOD! This is a easy weeknight dish. I serve it with a garden salad and some hot yeasty rolls, with butter. Made recently (2/22/2016) with Fresh green beans, it was divine! If you season lightly between the layers, it needs nothing else. ****Note: I cannot understand how they came out "raw". I see you cooked them 45 minutes, and probably threw frozen chops in. So I upped the time from 1 hour, usually plenty of time to 1.25 hours. After 1 hour 15 min. in the oven, sealed tightly in foil, at 375 degrees, they should be done. Make sure you preheat the oven first!

4 pork chops, bone in, thawed
1 large onion, sliced, and separated into rings
8 new potatoes, quartered (small, golf ball size)
8 carrots, peeled (I use whole carrots, thin ones, 1/2 to 3/4 inch diameter)
2 cups green peas, divided (I use extra peas, 3/4 cup in each)
10 1/2 ounces fat-free cream of mushroom soup
1/4 cup milk
salt and pepper

Steps:

  • Lay out 4 large (the long foil) heavy duty foil squares, large size foil. 2 foot by 2 foot Squares.
  • Divide onion rings (popped apart) evenly between the 4 squares, placing them in the middle in about a 5 inch circle. Surround the onions with 8 quarters of the potato. Season very lightly with salt and pepper.
  • Season each chop with salt and pepper and place 1 chop on top of onion and potatoes on each square.
  • Nest 1/2 cup of the peas between the carrots on top of the chop in each bundle. I use the carrots to corral the peas.
  • Mix soup and milk and divide equally, pouring over peas and carrots.
  • Season lightly again with salt and pepper.
  • Pull up corners and seal foil tightly. Tightly, no vents!
  • Place in 375 degree oven for 1 hour 15 minutes.
  • Remove from oven, carefully (using a knife or fork) tear hole in the top of the foil, and let the steam release for 5 minutes.
  • Carefully pour each bundle onto plate or pasta bowl and serve.
