Steps:
- Heat 1 tablespoon vegetable oil in a skillet over medium heat, stir in garlic and onion, and cook a few minutes until the onion softens and turns translucent. Remove the onion, and place into a saucepan. Pour the remaining 1 tablespoon vegetable oil into the skillet, and place over medium-high heat. Add cubed pork, and cook until well browned.
- Meanwhile, pour 3/4 of the black beans along with 1/4 cup water into the bowl of a blender, and pulse until finely chopped, but not quite smooth. Pour whole beans and bean puree into saucepan along with pork cubes, chicken stock, chorizo, and bay leaves. Bring to a boil over medium-high heat, then reduce heat to medium-low, cover, and simmer 30 minutes. Season to taste with salt and pepper before serving.

TENDER PORK STEW WITH BEANS
Edamame adds a unique twist (and a great nutrition boost) to this delicious, tender pork stew. It makes a great supper on a cold evening. My family absolutely loves this stew and has insisted on having weekly since I first made it. It's just as tasty when served as leftovers. It's also a very adaptable recipe, so it is easy to adjust to suit your family's tastes. I hope you enjoy as much as my family does! Serve with rice!

- Season pork tenderloin with salt and black pepper.
- Heat olive oil in a large Dutch oven or heavy pot over medium-high heat. Add pork to hot oil and cook until browned, 1 to 2 minutes per side. Add onions, red bell peppers, and garlic to pork; cook and stir until onion is slightly tender, about 10 minutes.
- Stir tomatoes with green chile peppers, kidney beans, beef broth, green chile peppers, chili powder, basil, and cumin into pork mixture. Bring mixture to a boil, reduce heat to medium-low, cover Dutch oven, and simmer, stirring every 15 minutes, until pork is tender and falling apart, 1 1/2 to 2 hours.
- Stir edamame, corn, and carrots into stew; cook until heated through, about 5 minutes. Break pork into pieces using the flat edge of a wooden spoon creating a 'shredded' texture.

RED BEAN STEW WITH FRIED ONIONS AND CILANTRO
Based on lobio, a Georgian stew, this is a warming, thick mix of simmered beans seasoned with both raw and fried onions, garlic and plenty of cilantro. In Georgia, the stew is sometimes spiked with a sour plum sauce called tkemali, which you can find at specialty markets or online. But if you can't get it, pomegranate molasses (or even a good balsamic vinegar) will give the dish a similarly fruity tang. Note that the bean mixture will thicken as it cools, so be prepared to add a bit of water or broth upon reheating.

- In a large bowl, combine beans and 1 teaspoon salt. Add enough water to cover beans by 2 inches and let soak for at least 6 hours or overnight. Drain.
- Combine beans, 2 teaspoons salt, bay leaves and 6 cups water in a heavy pot or Dutch oven and bring to a simmer. Simmer very gently, partly covered, until beans are quite tender, 1 1/2 to 2 hours.
- Using a mortar and pestle, blender or mini food processor, grind garlic, cilantro, savory or oregano, pepper, coriander, fenugreek (if using), cayenne, and remaining 1/2 teaspoon salt into a rough paste.
- Set 2 tablespoons of chopped onion aside for final garnish. In a large skillet, heat oil over medium-high heat until very hot. Add remaining onions and fry until they turn brown at the edges, 7 to 12 minutes. Season with a pinch of salt.
- When the beans are done, drain and reserve cooking liquid. Return beans to pot and use a potato masher or sturdy spoon to mash them, gradually adding the cilantro-garlic paste and fried onions. When everything is well incorporated, stir in reserved cooking liquid until soupy. Taste and season with tkemali or pomegranate molasses, lemon juice and more salt, if needed.
- Garnish each serving with raw onions, cilantro, pomegranate seeds (if using), and a drizzle of tkemali or pomegranate molasses, if you like. Serve cheese on the side or crumbled on top.

- Blend tomatoes, chiles, garlic, chicken bouillon and half the onion in blender until smooth; set aside.
- Brown pork, in batches, in 6-qt. pressure cooker on medium-high heat 3 min. or until browned on all sides; keep warm on plate until all meat is browned. Return meat to pressure cooker. Add tomato mixture; lock pressure cooker lid in place. Place pressure regulator on vent pipe; cook 30 min. with pressure regulator rocking gently (low to medium heat). Remove from heat; let stand 10 min. or until pressure vent drops. Remove regulator, then lid. Add beans, wieners, remaining onions and half the cilantro; cook on medium heat 10 min.
- Top with remaining cilantro and sour cream. Serve with crackers.

- Stir together the flour, 1 teaspoon salt, pepper, and cumin in a large bowl. Place the cubed pork into the mixture, and stir well to coat the meat with the seasonings.
- Heat the olive oil in a large, heavy pan or Dutch oven over medium-high heat until the oil shimmers. Working in batches if necessary, place the meat into the hot pan in a single layer. Pan-fry the pork until brown on all sides, about 15 minutes. Remove the pork to a bowl, and cover to keep warm.
- Cook and stir the onion in the hot pan over medium heat, adding more olive oil if necessary, until the onion is translucent and beginning to brown, about 7 minutes. Return the meat to the pan and stir in the garlic, tomatillos, chiles, marjoram, chopped cilantro, and water. Check seasoning and add 1 pinch of salt to taste, if needed. Cover and simmer over low heat, stirring occasionally, until the meat is tender, about 1 hour. Skim excess fat off the stew before serving in bowls, garnished with a dollop of sour cream and a cilantro sprig on each bowl.

CREAMY PORK STEW
This creamy pork stew is one of my favorite cold weather dishes of all time. You can add squash, Brussels sprouts, cabbage, mushrooms, root vegetables--it's quite versatile. And if pork isn't your thing, this would be lovely with veal, beef, or chicken thighs. Serve on steamed rice, mashed potatoes, or noodles.

- Season pork chunks generously with salt and pepper. Toss to distribute seasonings evenly.
- Heat vegetable oil in pot over high heat. Brown pork in batches so meat isn't crowded, about 7 minutes total time per batch. Transfer pork to a plate. Cook onions in same pot; cook and stir until they start to turn translucent and edges get brown, 3 or 4 minutes. Add garlic; cook 1 minute. Stir in apple cider and apple cider vinegar.
- Raise heat to high. Stir in mustard and horseradish. Transfer browned pork pieces back to pot, along with accumulated juices. Pour in cream and chicken broth to cover. Add sage, thyme, rosemary, and bay leaf. Season with a pinch of salt. Bring to a simmer; reduce heat, cover, and simmer on low for 30 minutes. Add celery, carrots, black pepper and cayenne.
- Simmer uncovered on low until meat is tender, about 1 hour. Add green peas. Simmer another 10 minutes. Optional: for a thicker sauce, raise heat and simmer until sauce is reduced, 5 to 8 minutes.
- Garnish individual servings with apple strips and chopped fresh chives.
