Recipe video above. This is how to make a great pesto pasta that's slick with pesto sauce without adding tons and tons of oil which makes it overly oily. The secret is using the pasta cooking water - it emulsifies with the oil in the pesto which makes it cling to every strand of pasta. A technique used in every Italian household! Make this with homemade pesto for the best flavour.

1 quantity homemade pesto ((Note 1))
300 - 350 g / 10 - 12 oz pasta of choice ((ziti, penne and spaghetti are my favourites, Note 2))
2 tsp salt
3/4 cup pasta cooking water
Parmesan, for serving

Steps:

  • Bring a large pot of water to the boil with the salt.
  • Add pasta and cook for the length of time per the packet.
  • Just before draining, scoop out 1 cup of of the pasta cooking water.
  • Drain pasta in a colander, leave it for a minute.
  • Transfer pasta to a bowl (do not use pasta cooking pot, too hot).
  • Add pesto and 1/4 cup of pasta water. Toss to coat pasta in pesto, adding more water if required to make pasta silky and saucy, rather than dry and sticky.
  • Taste, add more salt and pepper if desired.
  • Serve immediately, garnished with fresh parmesan.

Here's how to make the best pesto pasta, perfectly coated in sauce for maximum flavor! Add in juicy roasted tomatoes and fresh mozzarella for the perfect dinner.

2 lb small tomatoes (halved)
Kosher salt and black pepper
2 garlic cloves (minced)
Extra virgin olive oil
1 lb thin spaghetti
1 cup basil pesto (I used this homemade pesto recipe)
6 oz fresh baby mozzarella
Fresh basil (for garnish)

Steps:

  • Heat the oven to 450 degrees F and arrange a rack in the middle.
  • In a larger bowl, toss the tomatoes with kosher salt, black pepper, garlic and extra virgin olive oil. Transfer to a sheet-pan and bake in heated oven 25 to 35 minutes or just until the tomatoes collapse and develop some char (if you don't want them too soft, take the tomatoes out earlier). When ready, remove from the oven. (See notes)
  • While the tomatoes are roasting, cook the spaghetti in boiling water according to the package to al dente (about 10 minutes). Reserve ½ cup of the pasta cooking water. Drain the pasta.
  • Transfer the cooked spaghetti to a large bowl (same bowl used earlier for the tomatoes). Add the pesto and toss to coat. If you need to, add a little bit of the pasta cooking water to help mix it evenly. Taste, and if needed, add a bit of kosher salt and black pepper to season.
  • Add the roasted tomatoes and mozzarella to the bowl of pasta. Toss to combine. Serve warm. Garnish with fresh basil, if you like.

5 cups all-purpose flour
1 cup semolina flour
1/2 cup porcini powder
9 large farm eggs, beaten
Kosher salt
1 pound trumpet royale mushrooms or fresh porcini mushrooms, sliced
Extra-virgin olive oil
1 shallot, minced
3/4 cup madeira
3/4 cup creme fraiche
Kosher salt and freshly ground black pepper
3 cups arugula
6 ounces fresh goat cheese

Steps:

  • For the porcini pasta: Combine the all-purpose flour, semolina and porcini powder in a mixing bowl. Add the eggs. Knead the dough, wrap it in plastic and let it rest at least 30 minutes.
  • Roll the dough out with a pasta machine to desired thickness. Cut to desired noodle shape. (You will have enough pasta for about 12 servings; freeze half for another time.)
  • Cook half of the pasta in salted boiling water until cooked through, reserving a little of the pasta cooking water.
  • For the sauce: Meanwhile, cook the mushrooms, stirring, in oil until browned. Add the shallot and cook until aromatic, about 1 minute. Add the madeira and simmer until the liquid is reduced by half. Add the creme fraiche. Season to taste with salt and pepper.
  • Add the noodles to the sauce and toss; add a little pasta cooking water if necessary to get the sauce to coat the noodles. Toss again with the arugula. Transfer the noodles to plates and garnish with dollops of goat cheese. Drizzle with olive oil.

1 1/2 cups packed arugula leaves
1/2 cup fresh basil leaves
1/2 cup grated Parmesan
1/2 cup Diamond of California(R) Shelled Walnuts
1 garlic clove, minced
Zest and juice from 1 lemon
Kosher salt and freshly ground black pepper
1 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper
1 pound long fusilli pasta
2 tablespoons unsalted butter
2 tablespoons olive oil
1 large yellow onion, sliced (about 2 cups)
Two 8-ounce packages sliced cremini (baby bella) mushrooms
1/2 cup grated Parmesan, plus more for garnish
Juice from 2 lemons (about 1/3 cup), plus lemon zest, for garnish
3/4 cup roasted red peppers, diced

Steps:

  • For the walnut pesto: In a food processor, combine the arugula, basil, Parmesan, walnuts, garlic, lemon zest and juice, 1 teaspoon salt and 1/2 teaspoon pepper and pulse to blend. With the machine running, pour in the olive oil in a steady stream and process until smooth, stopping to scrape down the sides of the bowl as needed. Taste and adjust the salt and pepper if needed. Set aside. For the pasta: Bring a large pot of water to a boil and add salt. Add the pasta and cook until tender, stirring occasionally, about 11 minutes or according to the package directions. Drain the pasta, reserving 1 cup of the cooking liquid.
  • In the meantime, heat a large saute pan over medium heat. Melt 1 tablespoon butter, add the olive oil and then stir in the sliced onions. Season with salt and pepper and cook, stirring frequently, until the onions begin to brown or caramelize, about 10 minutes.
  • In the same pan, melt the remaining tablespoon of butter and add the mushrooms. Cook, stirring occasionally, until tender and brown, about 5 minutes.
  • Add the drained pasta to the pan, along with the walnut pesto, Parmesan, lemon juice and reserved cooking liquid. Season with salt and pepper. Garnish with the roasted red peppers, lemon zest and Parmesan.

One 14-gram package dried porcini mushrooms (about 1/2 cup)
3 fresh lasagna sheets (200 to 250 grams)
1/2 cup lightly packed fresh basil
1 tablespoon lightly packed tarragon
2 tablespoons finely grated Pecorino cheese
1 tablespoon finely chopped walnuts
1 small garlic clove, minced
2 tablespoons extra-virgin olive oil
Kosher salt
Freshly ground black pepper
2 tablespoons unsalted butter (28 grams)
1 medium shallot, finely minced
1/4 cup dry white wine
1 tablespoon unsalted butter (14 grams)
1/4 cup panko breadcrumbs
1/4 cup finely grated Pecorino cheese, plus more for serving
Zest of 1/2 a lemon
1 teaspoon finely chopped basil
1 teaspoon finely chopped tarragon
Kosher salt
Freshly ground black pepper

Steps:

  • For the pasta: Soak the dried porcini mushrooms in 1 cup hot tap water for 25 minutes to rehydrate.
  • Lay the lasagna sheets out on a cutting board and cut into long strips about 1 1/2 centimeters (3/4-inch) wide.
  • Meanwhile, in the bowl of a small food processor or a mortar and pestle, combine the basil, tarragon, Pecorino, walnuts and garlic and blitz to finely chop. Add the olive oil and season with salt and pepper and continue to blitz until well combined but still a bit textured.
  • Heat the butter in a sauté pan over medium heat and add in the shallot. Season with salt and pepper and cook until tender and just slightly golden, about 3 minutes.
  • Meanwhile, remove the porcini mushrooms from their liquid and reserve both. Gently squeeze the mushrooms to remove excess water and roughly chop. Add to the pan and continue to cook on medium heat until the mushrooms are lightly golden, about 2 to 3 minutes.
  • Add the white wine and cook for 2 minutes, or until most of the wine has been absorbed. Pour 1/2 cup of the porcini steeping liquid into the pan, being careful to leave any grit that may have settled at the bottom of the liquid behind and discard the rest. Simmer until the liquid has reduced by about half.
  • Place a large pot of water over high heat, season well with salt and bring to a boil. Cook the pasta for 2 to 3 minutes, or just until al dente. Reserving approximately 1 cup of cooking liquid, transfer the pasta from the pot directly into the mushroom mixture and stir in the herby pesto. Add a few tablespoons of the pasta cooking liquid to bring everything together and turn the heat down to low and allow the pasta to keep warm while you make the crunchy topping.
  • For the topping: Melt the butter in a small skillet over medium-high heat. Add in the panko and cook, stirring constantly, until golden and crisp, about 1 minute. Transfer the panko to a small bowl and allow it to cool slightly before tossing in the Pecorino, lemon zest and herbs. Then season to taste with salt and pepper.
  • Add a splash more of the pasta cooking liquid to the pasta if it seems a bit thick. Serve immediately sprinkled with the topping and additional Pecorino, if desired.

PASTA WITH DRIED MUSHROOMS AND TOMATO SAUCE

This meaty, savory pasta sauce is just one reason to keep dried porcini mushrooms on hand. Along with intense flavor, porcinis are an excellent source of riboflavin and niacin, and a good source of selenium and potassium. They also contain a powerful antioxidant called L-ergothioneine.

1 ounce dried porcini mushrooms (about 1 cup)
1 tablespoon extra virgin olive oil
1/4 cup finely chopped onion or shallot
2 to 3 plump garlic cloves, minced
Salt
1 (28-ounce) can chopped tomatoes in juice, coarsely pureed in a food processor fitted with the steel blade
1 teaspoon fresh thyme leaves, chopped, or 1/2 teaspoon dried thyme
Freshly ground pepper
3/4 pound fusilli or other pasta of your choice

Steps:

  • Place the mushrooms in a bowl or a pyrex measuring cup and cover with hot water. Let soak 15 to 30 minutes, until thoroughly soft. Line a strainer with cheesecloth and set it over a bowl. Drain the mushrooms and squeeze them over the strainer. Then rinse in several changes of water and chop coarsely. Measure out 1/4 cup of the mushroom soaking liquid.
  • Begin heating a large pot of water for the pasta. Heat the olive oil in a large, wide, heavy nonstick frying pan over medium heat and add the onion or shallot. Cook, stirring, until tender, 3 to 5 minutes. Add the garlic and stir together for minute, until fragrant, then add the mushrooms and stir together for a minute or two, until fragrant. Add the tomatoes and their juice, the mushroom soaking liquid you set aside, the thyme, and 1/2 teaspoon salt. Stir and turn up the heat. When the tomatoes begin to bubble, lower the heat to medium and cook, stirring often, until thick and fragrant, 15 to 20 minutes. Add a generous amount of pepper, taste and adjust seasonings. Keep warm.
  • When the pasta water comes to a boil, add a tablespoon of salt and the pasta. Cook al dente, following the timing directions on the package but checking a minute or two before the time on the package. Remove 1/4 cup of the pasta cooking water and stir it into the mushroom sauce. When the pasta is cooked through but still firm to the bite, remove another 1/2 cup water, drain the pasta and toss with the sauce in the frying pan if possible. If you wish to thin out the sauce or moisten the pasta further, add 1/4 to 1/2 cup of the pasta cooking water or more of the mushroom soaking liquid. Serve hot; pass the Parmesan at the table.
