TUSCAN ARTICHOKE SALAD



Tuscan Artichoke Salad image

This bright & fresh artichoke salad is abundant in vegetables & Italian herbs! Each bite is filled with marinated artichokes, roasted red peppers, and paired with a simple herbed vinaigrette.

Number Of Ingredients 12

12 oz jar marinated artichokes, (drained of liquid)
1/2 cup roasted red peppers, (diced)
1 15 oz can garbanzo beans, (rinsed and drained)
1 cup cherry tomatoes, (halved)
1/4 cup red onion, (thinly sliced or diced)
1/3 cup olive oil
3 tablespoons red wine vinegar
2 teaspoons maple syrup ((or honey))
1/2 teaspoon garlic powder
1-2 Tablespoon fresh basil, chopped ((or 1 1/2 teaspoons dried basil))
2 teaspoons fresh oregano, chopped ((or 1 teaspoon dried oregano))
salt & black pepper

Steps:

  • Whisk dressing ingredients: in a liquid measuring cup or small bowl, whisk together all of vinaigrette ingredients together. Season with generous pinch of salt & black pepper to taste.
  • Toss salad with dressing: in a large bowl, arrange all of chopped vegetables. Drizzle with dressing and toss until coated, taste and adjust seasoning if needed and enjoy!

PORCINI, ARTICHOKE AND FOIE GRAS SALAD



Porcini, Artichoke and Foie Gras Salad image

Number Of Ingredients 13

4 medium artichokes
1 pound porcini mushrooms
5 tablespoons olive oil
8 ounces foie gras, 2 1/2 inch slices and cut in half to yield 4 pieces
4 cups mesclun
Coarse salt
Vinaigrette, recipe follows
1/4 cup walnuts, roughly chopped
1/4 cup lemon juice
1/4 cup soy sauce
1/4 cup truffle juice
3/4 cup olive oil
Salt and freshly ground pepper

Steps:

  • Remove the tough outer leaves of the artichoke and remove the choke with a spoon. Slice the artichoke hearts into thin slices (about 1/8-inch thick).
  • Clean the porcini mushrooms and remove the stems. Cut into "batonnets" slices that are 1 1/2 inch long by 1/4-inch thick.
  • In a saute pan saute the artichokes in 2 tablespoons olive oil, seasoning with salt and pepper. Cook until the artichokes are slightly caramelized. In another pan, saute the mushrooms in 3 tablespoons olive oil, seasoned with salt and pepper until they are slightly caramelized.
  • Lightly flour the foie gras on both sides. Sear in a medium hot, dry saute pan about one minute on each side.
  • To plate the dish, place one cup of greens on each plate. Evenly divide the artichokes and mushrooms and place on top of the greens. Top each with a slice of foie, sprinkling a line of coarse salt over the top of each foie piece. Spoon about 2 tablespoons of the Vinaigrette over each salad. Sprinkle with walnuts.
  • Combine the lemon juice, soy sauce and truffle juice. Whisk in the olive oil. Season with salt and pepper.

SHAVED FENNEL, ARTICHOKE, AND PARMESAN SALAD



Shaved Fennel, Artichoke, and Parmesan Salad image

2 large artichokes
2 lemons
2 large fennel bulbs
1/4 cup extra-virgin olive oil
1 to 2 tablespoons white truffle oil
salt and pepper
1 piece Reggiano Parmesan cheese (about 3 ounces)
About 1/2 cup Italian parsley leaves

Steps:

  • Pare the artichokes down to their hearts and scoop out the chokes with a spoon, dropping them into water acidulated with the juice of 1 of the lemons.
  • Cut off the feathery tops of the fennel at the base of their stalks and remove the outer layer of the bulbs. Slice the bulbs very thin with a mandolin or a very sharp knife. Remove the artichoke hearts from the water and slice them very thin the same way.
  • Assemble the salad in layers on a large platter or on individual salad plates. First make a layer of the fennel slices. Squeeze lemon juice evenly over the fennel and drizzle with salt and pepper. Then make a layer of the artichoke hearts, also slice very thin. Squeeze more lemon juice over them, drizzle evenly with another third of the oils, and season with salt and pepper. Cut thin shavings of the Parmesan with cheese slicer or a vegetable peeler and arrange them on top of the artichoke slices. Scatter the parsley leaves over the cheese, season with salt and pepper, squeeze more lemon juice over, and drizzle evenly with the rest of the oils. Serve immediately.

1 1/2 cups orzo pasta, uncooked
12 ounces marinated artichoke hearts (2 - 6 ounce cans)
1 tomatoes, seeded and chopped
1 cucumber, seeded and chopped
1 red onion, chopped
2 garlic cloves, crushed
1 cup feta cheese, crumbled
2 ounces black olives, drained (2 ounce can)
1/4 cup parsley, chopped
1 tablespoon lemon juice
1/2 teaspoon oregano, dried
1/2 teaspoon lemon pepper

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Drain artichoke hearts, reserving liquid.
  • In large bowl combine pasta, artichoke hearts, garlic, tomato, cucumber, onion, feta, olives, parsley, lemon juice, oregano and lemon pepper. Toss and chill for 1 hour in refrigerator.
  • Just before serving, drizzle reserved artichoke marinade over salad.

Juice of 1/2 lemon
6 large artichokes
1/4 cup olive oil
1/4 pound shallots, thinly sliced
2 tablespoons dry white wine
5 cups chicken stock
Bouquet garni (2 outer leek leaves; 1/2 rib celery, sliced; 4 sprigs parsley; 1 sprig fresh thyme; 1 bay leaf; 1/2 teaspoon each black and white peppercorns; and 6 coriander seeds tied in a square of cheesecloth)
2 fresh porcini mushrooms
1 tablespoon butter
1 ounce foie gras, fresh or canned, finely diced
3/4 cup heavy cream
Fine sea salt and freshly ground white pepper to taste

Steps:

  • Fill a bowl with cold water; add the lemon juice. Trim the artichoke stems. Bend back the tough outer petals until they snap off. Cut off the tops. Using a sharp-edged spoon, remove and discard the hairy chokes. Slice the artichokes and put in the water.
  • Drain the artichoke slices. In a soup pot, heat the oil over medium-high heat. Add the artichoke slices and the shallots, cover and sauté, stirring occasionally, until they begin to caramelize, about 15 minutes.
  • Deglaze the pan with the white wine. Add the stock and the bouquet garni and bring to a boil. Reduce the heat and simmer until artichokes are tender, about 20 minutes. Discard the bouquet garni. In a food processor, purée the mixture in batches; strain each batch through a fine sieve, pressing solids with the back of a spoon.
  • Slice each mushroom into thirds. Melt the butter in a small skillet. Add the mushrooms and sauté until golden. Set aside.
  • Reheat the soup over medium-low heat. Stir in the foie gras and the cream. Season with salt and pepper. Ladle into 6 bowls and garnish each with a mushroom slice.
