1 1/2 cups red grapes, halved
1/2 cup walnuts, chopped small
1/3 cup green onions, sliced thin
1/2 - 2/3 cup Poppyseed Dressing

Steps:

  • Combine the chicken, grapes, walnuts, and onions in a medium size mixing bowl. Drizzle with poppyseed dressing and stir to coat.
  • Serve immediately in sandwiches, with crackers, or on top of a garden salad. Refrigerate any leftovers. Enjoy!

This chicken salad recipe with pine nuts and raisins has a honey mustard style dressing and is topped with onions and croutons. If you don't have olive oil spray, you can just use any non-stick cooking spray.

1 ½ cups cubed French bread
½ cup sour cream
⅓ cup mayonnaise
2 tablespoons lemon juice
2 teaspoons Dijon-style prepared mustard
2 teaspoons honey
1 tablespoon chopped fresh rosemary
⅛ teaspoon salt
¼ teaspoon ground black pepper
1 pound skinless, boneless chicken breasts
2 stalks celery, chopped
⅓ cup golden raisins
1 tablespoon lemon zest
6 leaves romaine lettuce
6 leaves Radicchio, raw
2 teaspoons lemon juice
1 teaspoon olive oil
3 slices red onion
⅓ cup pine nuts, toasted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a baking sheet with olive oil or non-stick cooking spray.
  • Prepare the croutons by spreading bread cubes over prepared baking sheet. Lightly spray cubes with oil or cooking spray and bake for 20 minutes or until golden brown. Remove from oven and cool.
  • Prepare the dressing by whisking together the sour cream, mayonnaise, lemon juice, mustard, honey, rosemary, salt and pepper. Cover and refrigerate until ready to serve.
  • Prepare the salad by placing the chicken in a pan and cover with water. Bring just to a boil, cover and reduce the heat to medium-low. Cook 10 minutes, or until chicken is cooked through. Remove from heat, drain and cool; dice or pull into shreds.
  • Combine the chicken with the celery, raisins and lemon peel.
  • When ready to serve, stir together the lemon juice and olive oil. Tear the lettuce into small pieces and toss with the lemon and oil mixture. Divide between plates and top with the chicken salad. Garnish with onion rings, a sprinkling of pine nuts and the croutons.

2 1/2 pounds boneless, skinless chicken breasts
4 celery stalks, finely chopped
4 cups seedless grapes, halved
2 cups slivered almonds
2 cups mayonnaise
1/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons poppy seeds
2 tablespoons dried dill
1 loaf white sandwich bread

Steps:

  • Boil the chicken in a large pot filled with water until done, about 45 minutes. Drain the chicken and set aside to cool. Once the chicken is cooled, dice into small pieces and place in a large mixing bowl. Add the celery, grapes, almonds, mayonnaise, salt, pepper, poppy seeds and dill. Mix until the salad is fully combined. Cut the crusts off of the bread and place a few tablespoons in between each sandwich, pressing to make it easy to pick up. Cut on the diagonal to make 2 triangles to serve.

3 uncooked chicken breasts, flattened
1/4 tsp each of ms. dash seasoning blend, onion powder, salt, lemon pepper (or black pepper)
3 Tbsp olive oil
1/2 c green seedless grapes, cut in halves
1 celery stalk, chopped
1/2 c pecan or walnut halves
8 oz can of pineapple chunks, drained
2 avocadoes, halved, peeled and seeds removed
1 bottle poppyseed dressing

Steps:

  • 1. Mix together seasonings: Mrs. Dash Seasoning Blend, onion powder, lemon pepper, and salt. Set aside. Prepare the chicken breasts by flattening with a mallet. Sprinkle the seasoning mixture over both sides of breasts.
  • 2. Heat olive oil in skillet. Brown chicken breasts lightly on both sides; lower heat and cook until done. Set aside and cool.
  • 3. Mix together grapes, celery, pecans, and pineapple. When chicken is cooled, chop and add to other ingredients. Add enough poppyseed dressing to comine all ingredients and generously fill the avocado halves. Serve on leafs of red lettuce with a freshly baked loaf of french bread, or sesame crackers.

1/4 teaspoon pepper
3/4 pound boneless skinless chicken breasts, cut into thin strips

DRESSING:
1/2 cup white vinegar
1/3 cup sugar
1 teaspoon dried minced onion
1 teaspoon ground mustard
1/2 teaspoon salt
1 cup canola oil
1 tablespoon poppy seeds
SALAD:
1 package (6 ounces) fresh baby spinach
2 cups sliced fresh strawberries
1 cup fresh sugar snap peas, trimmed
1 small red onion, chopped
1/2 cup pecan halves, toasted

Steps:

  • In a large bowl, combine limeade concentrate and pepper; add the chicken. Cover and refrigerate for 2 hours., Drain and discard marinade. In a large skillet, saute chicken in oil until no longer pink., Meanwhile, in a blender, combine the vinegar, sugar, onion, mustard and salt. While processing, gradually add oil in a steady stream. Stir in poppy seeds., In a large serving bowl, toss spinach with strawberries, peas, onion, chicken and 1/2 cup dressing. Sprinkle with pecans. Refrigerate leftover dressing.
