EASY POPOVERS RECIPE
I make popovers at least once a week. They are so easy to make that you'll be doing it too! For years this has been my go-to popovers recipe.

Steps:
- Position rack on the lower half of your oven so that your popovers have room to rise. Place the un-greased popover pan in the oven to warm.
- In a food processor or blender, combine the eggs, milk and salt. Process for a few seconds until just combined. You should not see streaks of yolk.
- Scrape down sides of your blender or food processor bowl to get any flour off the sides. There should not be any big lumps in the batter.
- The batter should be slightly frothy on top, as shown in the photo above.
- Carefully remove heated popover pan from oven and spray well with PAM or other cooking spray.
- Fill each mold about 3/4 high.
- Place pan on lower rack in oven and bake for 20 minutes. Do not open the oven door.
- Do not open the oven door for first 10 minutes. After 10 min you can check periodically for doneness. Popovers are done when they are a deep golden brown.

BLUE CHEESE POPOVERS
I'm very excited to show you this new, and possibly slightly improved, popover recipe. While we may have tweaked the ingredient amounts a little bit, we are still going to be using our foolproof, cold-oven method for making these. The reason this technique is so fun to use, is that it's literally the opposite of everything every popover expert says you should do.

Steps:
- Whisk eggs, salt, cayenne, milk, oil, and flour together in a large measuring cup or mixing bowl just until blended.
- Cover the bowl with plastic wrap and allow to rest for 1 hour on the counter, or in the refrigerator for 2 to 3 hours, up to overnight.
- Grease 14 nonstick muffin cups with butter, and then mist with cooking spray.
- Whisk the batter for a few seconds and fill each prepared muffin cup 4/5 full. Sprinkle each evenly with blue cheese.
- Place the muffin pans into a cold oven with a drip pan set underneath. Set the heat to 450 degrees F (230 degrees C). Bake in the oven until popovers are well browned and fully puffed, about 30 to 35 minutes. Poke each popover with a knife to allow steam to escape. Serve hot.

TRADITIONAL POPOVERS
This recipe is for traditional popovers. They can be served plain, but my family prefers them with raspberry butter.

- Preheat oven to 425 degrees F (220 degrees C).
- Spray a popover pan with nonstick cooking spray. Place pan on center rack of oven and preheat for 2 minutes.
- Blend flour, salt, eggs, milk, and melted butter until it looks like heavy cream, about 1 to 2 minutes.
- Cut chilled butter into 6 even pieces. Place 1 piece of butter in each cup and place pan back in oven until butter is bubbly (about 1 minute).
- Fill each cup half full with batter and bake 20 minutes. Reduce heat to 325 degrees F (165 degrees C) and bake for another 15 to 20 minutes.

PRIME RIB ROAST AND POPOVERS
I like serving popovers or yorkshire pudding with a beef roast..along with small potatoes and gravy..this is a great meal to serve on special family occasions and too bad there are only 2 ends of roast slathered with the garlic rub. We should draw straws as to who gets them.

- 1. Pre heat oven at 350F..mix together the mustard and mashed garlic..rub it on both ends and top of roast.mix together the onion soup and water and pour into roasting pan add the roast and bake for 2 hours or meat thermometer reads 170F the roast will be pink inside {just cut a piece of meat and check if done enough} if too rare roast a little longer. when roast is done remove to platter and cover with foil til ready to serve..pore water into small pot and heat the broth and thicken with flour or cornstarch..most of the time I add 2 c f button mushrooms and simmer for 10 to 15 minutes..keep warm until ready to serve or cover and reheat when ready to eat.
- 2. POPOVERS...Preheat oven to 400F..using butter lightly but thoroughly grease six [6 OUNCE } oven proof custard cups or large muffin tins ..set aside and make the popovers...Combine all ingredients in blender container and blend until smooth por batter into prepared containers and bake for 45 70 50 minutes,,if using custard cups place them on a cookie sheet pan......when my children were little they liked to watch the popovers rise..serve with the gravy.
- 3. YORKSHIRE PUDDING....combine the 2 tables dissolved granules into a 10 inch pie plate. set pie plate in oven while you prepare the batter.combine the ingredients with electric mixer or blender.remove pie plate from oven and pour in the batter and bake for 25 minutes or deep golden brown serve immediately cut into pieces.and serve with the gravy.
- 4. I would sometimes serve the little potatoes..cook til just fork tender,,drain place into pie plate or baking pan and pour 1 or 2 table spoons olive or canola oil mix well to coat and bake at the same time the yorkshire pudding is baking until light brown and crispy..you will receive many compliments from your guests YUMMY..

- Preheat oven to 450 degrees F (230 degrees C). Grease and flour six 6-ounce custard cups.
- In a medium bowl beat eggs slightly, Beat in flour, milk and salt until just smooth; being careful not to overbeat. Fill custard cups 1/2 full.
- Bake at 450 degrees F (230 degrees C) for 20 minutes. Decrease oven temperature to 350 degrees F (175 degrees C) and bake for 20 minutes more. Immediately remove from cups and serve piping hot.

- Preheat oven to 450° F. Spray a 6-cup popover pan, six 6-ounce custard cups, or a standard muffin pan with cooking spray. Take care to spray the cups and the area between the cups. Set aside.
- In a medium bowl, beat eggs slightly. Beat in remaining ingredients just until smooth, taking care to not over mix. Mixture will be very thin and pourable, somewhat like heavy cream.
- Divide dough mixture between cups of popover pan (about halfway full for each cup). Bake 20 minutes without peeking. It's very important to keep the oven door shut and the heat inside!
- Then decrease oven temperature to 350° F and bake 16 to 20 minutes longer, until popovers are a deep golden brown. Immediately remove popovers from cups and, with a sharp knife tip, cut a small slit into each of the tops to release some of the steam and prevent sogginess. Serve immediately..
