- Cut a thin slice off top of roll; set aside. Hollow out center, reserving 1/2 cup of bread and leaving a 1/4-in. shell. Combine butter and celery seed; spread over inside of roll and on cut surface of top. Combine remaining ingredients and reserved bread; spoon into roll. Replace top.

- Preheat the oven to 350 degrees F (175 degrees C).
- In a large bowl, mix together the ground beef, crackers, milk, pepper, salt, garlic powder, and Italian seasoning. Form 6 or 8 large beef patties, and place in a 9x13 inch baking dish, or other shallow casserole dish. Pour the condensed soup evenly over the top of the patties, and sprinkle canned mushrooms over the top. Cover the pan with a lid or aluminum foil.
- Bake for about 45 minutes in the preheated oven, or until beef patties are well done.

CHEESEBURGER PO'BOY
This is my favorite of all the Po'boys. There's a place in town called Glynns and they make the best.

Steps:
- Pat your hamburger meat out into really thin oblong patties; fry until done.
- Cut open French bread; add your meat (you may need two pieces to span the size of your loaf.
- On bottom bread, add meat and 2 slices of cheese, pickles and onion.
- On top side, spread mayo; add lettuce and tomato, add ketchup.
- Close together and smear top of bread with butter.
- Place on a sandwich; grill and grill until cheese melts. If you don't have a sandwich grill, heat a cast iron skillet to very hot and place on top of sandwich until cheese melts.

PARKETTE'S FAMOUS KENTUCKY POOR BOY

- Crinkle-cut fries, tater tots or onion rings, optional
- Toast the buns and brush the cut sides with Parkette sauce. Stack all of the ingredients inside the bun and eat!!! Yum!! Serve with crinkle-cut fries, tater tots or onion rings, if desired. That's a big meal!
PORTOBELLO BURGER
Steps:
- Put the olive oil and balsamic vinegar in a pitcher. Add the basil, parsley, thyme, salt and pepper and whisk together. Pour the mixture into a resealable plastic bag. Add the mushrooms, seal the bag and toss around to coat. Grill immediately, or leave the mushrooms in the marinade for up to 2 hours.
- When ready to cook, heat a grill or grill pan to medium high. Cook the mushrooms until lightly charred and tender, 4 to 5 minutes per side. Toast the buns cut-side down until golden, a couple of minutes.
- Serve the mushrooms in the buns with sliced tomato, red onion, butter lettuce, mustard, mayonnaise and ketchup.

- Make mustard mayonnaise:
- In a bowl whisk together mayonnaise ingredients and reserve.
- Make crab burgers:
- In a small heavy skillet cook onion and bell pepper in butter over moderately low heat, stirring occasionally, until softened. In a bowl stir together onion mixture, crab meat, scallion greens, mayonnaise, egg, 1 tablespoon bread crumbs, Worcestershire sauce, cayenne, and salt to taste.
- Put remaining 1/2 cup bread crumbs in a small bowl and put a piece of plastic wrap on a work surface. Form one fourth crab mixture into a 3-inch patty (it will be soft) and coat with bread crumbs, transferring to plastic wrap. Make 3 more patties in same manner with remaining crab mixture and bread crumbs.
- In a 10-inch heavy deep skillet heat 1/4 inch oil over moderately high heat until hot but not smoking and fry patties until golden and cooked through, about 2 1/2 minutes on each side, transferring to paper towels to drain.
- Spread bread with reserved mustard mayonnaise and sandwich crab burgers and lettuce between bread.

- 1. Partially cook bacon, drain on paper towel. Pat beef on waxed paper to 12x7 1/2x1/4" rectangle. Sprinkle lightly with salt and lemon pepper. Top with cheese. Combine mushrooms, onion and pepper. Sprinkle evenly over meat. Roll up jelly roll style starting from short end. Cut into 1 1/2" slices. Wrap each with bacon and secure with toothpicks. Grill over med coals, 8 min per side. Serve.

- Leave it to New Orleans to come up with the coolest name for the sub sandwich! My Saints inspired burger is just that – a sub sandwich - or a Po Boy. I seared off a beef patty that I cover with Cajun spice for an extra kick. Once cooked, slip it into a good quality fresh French roll (the quality of the bread is critical), and top it with lettuce, pickles, onions, and tomatoes…of course, you can add just about anything you’d like. Of course you can top it with Ketchup, mustard and mayo, but my final add, is a bit of spicy Cajun mayo, which is super simple to make, and goes great with the burger. Enjoy New Orleans! Ingredients
- French submarine sandwich roll 1/3 pound of Ground beef Creole Seasoning (http://www.top50states.com/cajun-recipes.html) Swiss cheese Tomato Lettuce Onion Pickle spear Mustard Salt Ground black pepper Olive oil 2 Tablespoons of Cajun mayo Mayonnaise (¼ cup) Mustard (1 tsp) Paprika (2 dashes) Cayenne Pepper (pinch) Garlic (1 clove, minced) Worcestershire sauce (dash) Hot sauce (dash) Parsley (pinch) Lemon juice (½ lemon)
- In a small bowl, mix the above ingredients listed under “Cajun Mayo.” Split a sub sandwich roll, and remove some of the bread in the center. Form a 1/2-inch-thick beef patty to the shape of the bun, but slightly bigger, since the meat will shrink while it cooks. Sprinkle the patty on both sides with Cajun spice. Place a well-oiled pan over a medium-high heat. Sear the burger for about 2 minutes on one side. Flip the burger over and cook for about 30 seconds. Add cheese to the burger and cover the pan for about 90 seconds more, so the cheese will melt. Kill the heat, and put the burger on a plate to rest. Spread Cajun Mayo on a roll. Place the burger on the mayo on the roll. Add Lettuce, Onions, Pickles, and Tomato. Place the top slice of bread and cut the sandwich in half.
