- Microwave 6 ounces chopped bittersweet chocolate on 75 percent power until melted, about 3 minutes. Cut a frozen cheesecake into 1-inch cubes. Gently press a lollipop stick halfway into each cube. Dip in the chocolate and roll in sprinkles and/or coconut, if desired.
CHAI TEA LATTE POPS
Spicy chai tea gets a fun makeover in these simple and delicious ice pops. They're similar to the traditional Indian ice cream called kulfi - but with a chai tea twist.

Steps:
- Put the evaporated milk, chai tea and vanilla bean in a small saucepan over medium-high heat, stirring occasionally. Once the mixture starts to simmer, remove from the heat, cover and steep for 30 minutes.
- Pour the mixture through a fine-mesh strainer into a large bowl and whisk in the sweetened condensed milk and heavy cream. Pour the mixture into the pop molds and freeze until completely solid, at least 4 hours, preferably overnight.
- To unmold: run the molds briefly under warm water.
HEALTHY CHOCOLATE-CHIA PUDDING POPS
These pops are uber-fudgy, thanks to a combo of chia seeds and cocoa powder. If you don't have the patience to wait for the frozen version-no problem, the pudding is just as delicious.

- Combine the milk, chocolate, cocoa powder, agave and a pinch of salt in a medium saucepan and set over medium-low heat. Cook, whisking constantly, until the chocolate melts and the cocoa dissolves, 6 to 8 minutes. Pour the chocolate mixture into a medium bowl. Stir in the chia seeds and vanilla. Let cool to room temperature, about 1 hour.
- Cover and refrigerate the mixture until chilled and the chia seeds are plumped, about 1 hour more, stirring halfway through.
- Divide the mixture evenly among four 3- to 4-ounce ice pop molds. Freeze until solid, at least 8 hours and up to overnight. Let sit at room temperature for a few minutes before unmolding.
- The pops will keep in the freezer for up to 2 weeks.
