BAKED POLENTA WITH SAUSAGE

Baked Polenta with Sausage image

Rich, tomato-based casserole made with sweet Italian sausage, baked in a polenta crust and topped with mozzarella cheese. This is a great substitution for your typical pasta dish. Serve with a green salad and a loaf of Italian bread - doesn't get much better than this!

CREAMY POLENTA WITH ANDOUILLE SAUSAGE

Creamy Polenta with Andouille Sausage image

Provided by Bev Weidner

Categories     main-dish

Time 30m

Yield 4 servings

Number Of Ingredients 11

1 1/2 cups whole milk
1 tablespoon extra-virgin olive oil or canola oil, plus more if necessary
12 ounces andouille sausages (about 4 links total), sliced diagonally 1/4-inch thick
1 large green bell pepper (about 8 ounces), cut into 1/2-inch pieces
Kosher salt and freshly ground black pepper
1 1/2 cups tomatoes (about 8 ounces) cherry
1 cup quick-cooking polenta
2 tablespoons unsalted butter
1 cup shredded sharp white Cheddar (about 4 ounces)
1 scallion, thinly sliced
Hot sauce, for serving

Steps:

  • Bring the milk and 2 cups water to a simmer in a medium saucepan over low heat.
  • Meanwhile, heat the oil in a large cast-iron skillet over medium-high heat. Once the oil starts to shimmer, add the andouille and spread out into a single layer. Cook until browned on the first side, 2 to 3 minutes. Use tongs to flip the sausage pieces and cook until browned on the second side, 2 to 3 minutes more. Use tongs or a slotted spoon to transfer the sausage to a medium bowl and cover with foil to keep warm.
  • Add the bell pepper and a pinch of salt and pepper and cook, stirring occasionally, until tender and browned in spots, about 3 minutes. Add a drizzle more of oil if the pan seems too dry.
  • Transfer to a medium bowl and cover with foil to keep warm. Add the tomatoes and cook, without moving, until the tomatoes are browned on their bottoms and the skins on some are starting to burst, about 2 minutes; add a drizzle of oil if the pan seems too dry. Shake the skillet from side to side several times to turn the tomatoes and cook, shaking the pan frequently to keep the tomatoes moving, until the skins on all of the tomatoes have burst, about 2 minutes more. Transfer the tomatoes to the same bowl as the bell pepper, then season with salt and pepper and stir gently to combine.
  • By this time, the milk and water should have come to a simmer. Slowly whisk in the polenta, and a pinch of salt and pepper then continue whisking until the polenta has thickened and just pulls from the sides of the saucepan, about 5 minutes. Turn off the heat and stir in the butter and Cheddar until melted, about 1 minute. Season to taste with additional salt and pepper if needed. If you would like the polenta looser, whisk in 1/4 to 1/2 cup warm water.
  • Divide the polenta among 4 bowls and top with the andouille sausage, bell pepper and tomatoes. Garnish with the scallions and serve with hot sauce on the side.

CREAMY POLENTA WITH PARMESAN AND SAUSAGE

Creamy Polenta With Parmesan and Sausage image

Polenta is such a natural base for so many savory foods - more flavorful than either pasta or mashed potatoes, but somehow just as forgiving - that it's hard to pick a favorite topping. Having said that, I know what mine is: sausage. The fatty succulence of a banger combined with the lean graininess of the cornmeal is somehow perfect.

Provided by Mark Bittman

Categories     dinner, easy, main course

Time 1h

Yield 4 servings

Number Of Ingredients 7

2 tablespoons olive oil
4 good-quality sweet Italian sausages
1 cup medium-to-coarse cornmeal
Salt
1/2 to 1 cup freshly grated Parmesan cheese, or to taste
2 tablespoons butter
Freshly ground black pepper

Steps:

  • Put oil in a large skillet over medium-high heat. When oil is hot, add sausages and cook, turning occasionally, until well browned on all sides and cooked through, about 20 minutes. Set aside.
  • Meanwhile, put cornmeal in a medium saucepan along with 1 cup water and whisk well to make a slurry; continue whisking mixture to eliminate any lumps. Put pan over medium-high heat, sprinkle with salt and bring to a boil. Reduce heat to medium and continue to cook, whisking frequently and adding water as needed to keep mixture loose and free of lumps, between 3 and 4 more cups. If mixture becomes too thick, simply add a bit more water; consistency should be similar to sour cream's.
  • Polenta will be done in 15 to 30 minutes, depending on grind. Add cheese and butter. Taste and add salt, if necessary, and lots of pepper; serve topped with sausages.

ITALIAN SAUSAGES IN TOMATO SAUCE WITH CHEESY POLENTA

Italian Sausages in Tomato Sauce with Cheesy Polenta image

Provided by Eddie Jackson

Time 45m

Yield 4 servings

Number Of Ingredients 14

One 10-ounce package chicken sausage, such as Aidells® Whole Blends Italian Style Margherita Smoked Chicken Links
2 tablespoons extra-virgin olive oil
8 multicolored baby bell peppers, quartered
1 medium onion, chopped
1 medium zucchini, cut into 1/2-inch chunks
Kosher salt
1/2 cup dry white wine
2 cups crushed tomatoes
Pinch crushed red pepper flakes
3 cups loosely packed baby spinach
1 cup instant polenta
1/2 cup grated Pecorino Romano, plus a small wedge, for shaving
2 tablespoons unsalted butter, cut into pieces
1/2 cup fresh basil leaves, plus sprigs, for garnish

Steps:

  • Cut each sausage link into 4 pieces. Heat 1 tablespoon of the oil in a large skillet over medium heat. Add the sausage and cook until brown all over, about 4 minutes. Remove with a slotted spoon to a plate.
  • Add the remaining tablespoon oil to the skillet. When hot, add the peppers, onion and zucchini and season with salt. Cook, tossing, until the vegetables just begin to soften, about 4 minutes. Add the wine and reduce until syrupy, about 2 minutes. Add the tomatoes, red pepper flakes and 1/2 cup water. Bring to a simmer and cook until slightly thickened and the flavors have melded, about 10 minutes.
  • Return the sausage to the skillet, stir in the spinach and simmer until the sausage is heated through and the spinach is wilted, about 2 minutes.
  • Meanwhile, put 4 cups water and 1 teaspoon salt in a medium saucepan and bring to a simmer over medium heat. Whisk in the polenta. Simmer until thickened, about 5 minutes. Remove from the heat and stir in the grated Pecorino Romano and butter. Season with salt, if needed.
  • To serve, chop the basil leaves and stir into the sauce. Spoon the hot polenta into 4 shallow bowls. Top each with some of the tomato mixture. Use a vegetable peeler to shave more cheese over the top and garnish each serving with a basil sprig.
  • Party Version: Make the polenta following the directions above. Spread the finished polenta onto 2 parchment-lined baking sheets in a thin even layer and refrigerate until set, about 30 minutes.
  • Cut the polenta into squares (about 1 1/2 inches) and transfer to 2 parchment-lined baking sheets (or re-line the original baking sheets). Bake at 325 degrees F until crisp, about 35 minutes. (The polenta squares will continue to crisp up as they cool.)
  • Cut the sausage into thin rounds, then cook and remove following the directions above.
  • Chop the bell peppers, onion and zucchini a little more finely than called for above, then follow the directions for making the tomato sauce. Add the browned sausage (but not the spinach) to the skillet and simmer until heated through, about 2 minutes.
  • To serve, lay a spinach leaf on each polenta crisp. Top with a dollop of the tomato mixture and a sausage round. Shave a bit of the Pecorino Roman onto each and top with a basil leaf.

15-MINUTE CHEESY POLENTA WITH CHUNKY TOMATO RAGU

15-Minute Cheesy Polenta with Chunky Tomato Ragu image

This quick homemade tomato ragu is packed with vegetables and takes just a few minutes longer than warming up a jar of sauce. Finely chopping the vegetables in a food processor cuts down the cooking time tremendously. Serve it over quick-cooking creamy polenta for a complete meal that's ready in 15 minutes.

Provided by Food Network Kitchen

Categories     main-dish

Time 15m

Yield 4 servings

Number Of Ingredients 14

1 1/2 cups whole milk
Kosher salt
6 tablespoons extra-virgin olive oil
1/2 pound mild Italian sausage, casings removed
1 small yellow onion
1 1/2 cups baby carrots
2 cloves garlic
1 cup quick-cooking polenta
2 tablespoons unsalted butter
1 1/2 cups shredded Italian cheese blend
One 28-ounce can diced tomatoes
Pinch crushed red pepper flakes, or more to taste
6 cups spring greens mix
1 small lemon

Steps:

  • Place a large high-sided skillet over medium-high heat. Combine the milk, 3 1/2 cups water and a large pinch of salt in a medium saucepan, cover and set it over medium-high heat.
  • When the large skillet is hot, add 2 tablespoons of the oil and swirl the pan to coat. Add the sausage and cook, using a wooden spoon to break up the meat, until lightly browned in parts, about 3 minutes. Meanwhile, cut the onion into large chunks.
  • Add the onion, carrots and garlic to a food processor and pulse until finely chopped. Add 2 tablespoons of olive oil, the vegetables and a large pinch of salt to the pan with the sausage and cook until the vegetables are slightly softened, about 3 minutes.
  • By this time, the milk and water mixture should be at a strong simmer. Whisk in the polenta and lower the heat to medium-low. Cook, stirring frequently, until the polenta is thickened and creamy, about 3 minutes. Stir in the butter and cheese and season with additional salt if needed. Remove from the heat and cover to keep warm.
  • When the vegetables are slightly softened, stir in the tomatoes and red pepper flakes. Cook, uncovered, stirring occasionally, until the vegetables are completely tender and the juice from the tomatoes has reduced slightly, 6 to 8 minutes. Season to taste with additional salt and red pepper flakes if desired.
  • Divide the polenta (if the polenta is too thick, whisk in 1/4 to 1/2 cup warm water to thin it out) among 4 bowls and top with the chunky tomato ragu. Toss the greens in a large bowl with the remaining olive oil, a squeeze of lemon juice, and some salt and pepper and serve on the side.

POLENTA, SAUSAGE AND TOMATO LAYERS

POLENTA, SAUSAGE AND TOMATO LAYERS image

Categories     Bake     Dinner

Yield 6 portions

Number Of Ingredients 13

For polenta:
3 cups milk
1 tablespoon unsalted butter
1 teaspoon sugar
1/2 teaspoon salt
1 cup stone-ground yellow cornmeal
2 tablespoons unsalted butter, melted
For the layers:
1/2 cup (approximately .15 pound) Parmesan cheese, grated
1 tablespoon olive oil
4 Italian sausages (about 3/4 pound), coarsely chopped
1-1/2 cups tomato or pasta sauce
8 ounces mozzarella cheese (fresh is better, but not necessary), sliced 1/4-1/2 inch thick

Steps:

  • For polenta: 1. Combine the milk, butter, sugar and salt in a heavy saucepan and heat just to a simmer. 2. Slowly add the cornmeal in a thin stream, whisking constantly. Lower the heat and continue stirring with a wooden spoon until the mixture has thickened and leaves the sides of the pan, about 10 minutes. For the layers: 1. Preheat the oven to 375 degrees F. 2. Butter a 2-1/2 quart flameproof casserole or pyrex baking dish. 3. Add 1/4 cup of Parmesan to the polenta in the pan and stir thoroughly. Scrape the mixture into the casserole/baking dish. 4. Heat the oil in a medium-size skillet, and saute the sausage over medium heat, breaking up the pieces with a wooden spoon, until browned and cooked through, about 10 minutes. Remove the skillet from the heat. 5. Sprinkle 2 tablespoons of the remaining Parmesan over the polenta. Add the sausage, using a slotted spoon, in an even layer. Then spoon on the tomato sauce. Sprinkle with the remaining 2 tablespoons Parmesan, and top with the mozzarella in an even layer. 6. If using pyrex dish, cover with aluminum foil sprayed with Pam or greased with butter or olive oil. Bake until bubbling, 30 minutes. Then place the casserole under the broiler and cook until browned, about 3 minutes. Let it stand about 10 minutes before serving.

HERB AND TOMATO POLENTA

Herb and Tomato Polenta image

Provided by Katie Lee Biegel

Categories     side-dish

Time 45m

Yield 4 to 6 servings

Number Of Ingredients 13

1 tablespoon olive oil, plus more for drizzling
1 pint grape tomatoes
1 clove garlic, thinly sliced
Kosher salt and freshly ground black pepper
1/2 cup grated Parmesan
2 tablespoons unsalted butter
Cooked Polenta, recipe follows
1/4 to 1/2 cup milk, as needed
Zest of 1 lemon
4 to 6 leaves fresh basil, torn
Pinch of baking soda
Kosher salt
1 1/2 cups medium-grind stone-ground cornmeal

Steps:

  • Heat a large skillet over medium-high heat. Add the olive oil and tomatoes. Cook the tomatoes, stirring occasionally, until they start to blister and release some of their juices, 8 to 10 minutes. Toss in the garlic and season generously with salt and pepper. Cook another 1 minute, then remove from the heat.
  • In a saucepan over low heat, stir the Parmesan and butter into the Cooked Polenta, thinning with milk as desired. Turn off the heat, stir in the lemon zest, taste for seasoning and add salt if necessary.
  • Transfer the polenta to a serving bowl. Use a spoon to create a shallow well and top with the tomatoes, torn basil, some black pepper and a drizzle of olive oil.
  • Bring 6 cups of water to a rolling boil in a heavy-bottomed 4-quart saucepan over medium-high heat. Reduce the heat to the lowest possible setting, add the baking soda and 1 1/2 teaspoons salt and pour the cornmeal into the water in a very slow stream from a measuring cup, all the while whisking in a circular motion to prevent lumps.
  • Cook, vigorously stirring the polenta with a wooden spoon for about 10 seconds once every 5 minutes and making sure to scrape clean the bottom and corners of the pot, until the polenta has lost its raw cornmeal taste and becomes soft and smooth, about 30 minutes. If the polenta looks like it's drying out too quickly, continue cooking with the lid on. Cooked Polenta recipe courtesy of Jeff Mauro.

POLENTA AND SAUSAGES FOR A CROWD (POLENTA ALLA SPIANATORA)

Polenta and Sausages for a Crowd (Polenta alla Spianatora) image

Picture a golden circle of polenta, spread on a large board or platter, and topped with a rich tomato-y sausage-laden ragù. It's a traditional, somewhat theatrical way to eat polenta in Northern Italy, and it makes quite an impression when it's brought to the table. Known as polenta sul tavola or polenta alla spianatora, it is usually served with forks but no plates, with guests gathered around the table for a very casual family-style meal. You can make it when there's nothing in the house to eat except cornmeal and canned tomatoes, plus an onion or two.

Provided by David Tanis

Categories     dinner, grains and rice, sausages, main course

Time 1h20m

Yield 6 to 8 servings

Number Of Ingredients 15

2 cups medium cornmeal
Kosher salt and black pepper
8 to 10 cups boiling water or chicken broth
3 tablespoons extra-virgin olive oil, plus more for drizzling
1 medium onion, finely diced
1 1/2 pounds Italian fennel sausage, sweet or hot, in 2- to 3-ounce links
1 bay leaf
3 garlic cloves, minced
1 basil sprig, plus more leaves for garnish
1 cup dry red wine
1 (28-ounce) can crushed tomatoes with their juices
Red-pepper flakes, to taste
1/2 pound sliced wild or cultivated mushrooms (optional)
Chopped parsley, for garnish
Grated pecorino cheese, for garnish

Steps:

  • Prepare the polenta: In a heavy-bottomed pot, whisk together polenta, 2 teaspoons kosher salt and 8 cups boiling water over medium-high heat. Continue whisking as mixture comes to a boil and begins to thicken. Turn heat to low and switch from a whisk to a wooden spoon. Stir every 10 minutes or so, for about 40 minutes, adding a splash of water as necessary to keep polenta from thickening too much. It may take as much as 2 cups more liquid to achieve a smooth, pourable consistency. Taste polenta for salt and add pepper to taste. Stir well, cover and keep warm for up to 30 minutes.
  • As polenta cooks, prepare the topping: Add olive oil to a Dutch oven over medium-high heat. Add onions, season with salt and pepper, and cook, stirring, until softened. Add sausages and let brown on both sides, about 2 minutes per side. Add bay leaf, garlic and basil sprig, and cook for 1 minute more. Add wine, turn up heat, and let reduce by half.
  • Add crushed tomatoes and their juices and bring to a boil. Reduce heat to a simmer and cook for about 1 hour, until sauce has thickened somewhat. Taste and adjust with salt and red-pepper flakes. (If using mushrooms, sauté over high heat in a little olive oil, until lightly browned. Season with salt and pepper.)
  • To serve, rinse a large circular wooden board, about 18-inch diameter, with cool water. (Alternatively, use a large platter.) Pour polenta onto the board, and, using a spatula, quickly spread it into a circle about 3/4-inch deep.
  • Carefully ladle sauce over the polenta, leaving a 1-inch polenta border at the edges. Arrange sausages over the sauce. Top with mushrooms, if using. Sprinkle with basil, parsley and pecorino.
  • Place polenta in the center of the table, alongside bowls of grated pecorino. To serve the dish traditionally, offer guests forks but no plates and invite them to attack the polenta nearest their chair. Alternatively, cut polenta into large slices, and serve on dinner plates.
