An easy cake that is moist and has a delightful streusel topping. I found this in a Pillsbury Kitchens' cookbook. My guests always enjoy it.

Ingredients

1 cup all-purpose flour
2/3 cup brown sugar, firmly packed
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 cup sour cream
1 teaspoon vanilla
1 egg
1 (16 ounce) can peaches, sliced, well drained
1/2 cup chopped walnuts or 1/2 cup pecans
1/2 cup coconut
1/3 cup brown sugar, firmly packed
2 tablespoons margarine or 2 tablespoons butter

Steps:

Heat oven to 375°F.
Generously grease the bottom only of an 8 or 9 inch square pan.
In medium bowl, blend the ingredients for the cake EXCEPT for the peaches. Blend at low speed until moistened. Beat 1 minute at medium speed.
Pour batter into prepared pan and arrange the peach slices over the batter.
In a small bowl, mix the topping ingredients until crumbly. Sprinkle over the peaches.
Bake at 375F for 35-45 minutes or until a toothpick inserted in the center comes out clean.
Cool 30 minutes. Cut into squares and serve warm with either ice cream or fresh whipped cream.

This is a recipe that my mother gave me several years ago, and we enjoy it often. I use canned peaches, but fresh would be nice.

Ingredients

3 egg, beaten
1 ¾ cups white sugar
1 cup vegetable oil
2 cups all-purpose flour
1 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon baking soda
2 cups fresh peaches - peeled, pitted, and sliced
½ cup chopped pecans

Steps:

Preheat oven to 375 degrees F (190 degrees C). Grease and flour a 9x13 inch pan.
In a large bowl, combine the eggs, sugar, oil, flour, salt, cinnamon, baking soda, peaches and pecans. Mix thoroughly by hand.
Pour into prepared 9x13 inch pan and bake at 375 degrees F (190 degrees C) for 50 minutes or until done.

On lightly floured work surface, unroll dough sheet. With fingers or rolling pin, roll out dough to form 14x10-inch rectangle. With pastry or pizza cutter, cut dough sheet into 12 small rectangles.
In small bowl, mix cream cheese, sugar and egg yolk until well blended. Spoon cheese mixture evenly on top of 6 of the rectangles. Top with chopped peach. Carefully top with remaining rectangles. With fork, press edges to seal. Place on ungreased cookie sheet.
