BUTTER-POACHED CHICKEN WITH WINE SAUCE



Butter-Poached Chicken with Wine Sauce image

Poaching in a barbecue is a great way to treat more gentle meats such as chicken breast to get the smoke flavor but not dry it out.

Number Of Ingredients 7

1 pound butter
2 chicken breasts
2 cups white wine (such as a Chardonnay)
3 tablespoons whole grain mustard
2 cloves garlic (crushed)
1/2 cup heavy cream
salt and pepper (to taste)

Steps:

  • Preheat a BBQ or smoker to 200 degrees F (95 degrees C). Place a piece of plum wood in to add smoke to the chicken.
  • Place the butter in the skillet then place the skillet into the preheated BBQ. Leave until the butter is completely melted.
  • Add the chicken breasts to the butter. Cook and baste every 15 minutes until the chicken has an internal temperature of 165 degrees F (75 degrees C).
  • Remove the skillet from the heat and rest for 5 minutes in the butter to stop it from drying out.
  • Preheat a skillet over moderate temperature. Pour in the wine, it will steam a little and remove the 'boozy' flavor and alcohol. Bring to a simmer.
  • Add the mustard and garlic, then cook until the garlic has softened and becomes sweet and subtle.
  • Stir through the cream, mixing to incorporate well. If too thin leave on a very gentle heat to let it reduce to your desired thickness.
  • Taste the sauce and season with salt and pepper as needed.Tip: If you season before reducing the sauce it could cause it to become too salty.
  • Thinly slice the chicken and lay it on the serving plate. Spoon over the white wine mustard sauce then serve immediately.

  • Place all the ingredients in the saucepan and simmer for 20-25 minutes until cooked through.
  • Remove the cooked chicken and cool slightly.
  • Cut or shred the chicken for use in salads, sandwiches, casseroles, other recipes.

1 (32 fluid ounce) container chicken stock
32 fluid ounces water, or more if needed
1 yellow onion, peeled and slits cut into it
1 bunch celery, stalks (including leaves) separated
3 carrots
2 tablespoons tomato paste, or more to taste
1 tablespoon salt
5 whole black peppercorns
1 bay leaf
2 pounds skinless, boneless chicken breast halves, each cut in half

Steps:

  • Combine chicken stock, water, yellow onion, celery, carrots, tomato paste, salt, peppercorns, and bay leaf in a large pot; bring to a gentle simmer. Decrease heat to medium-low and simmer, checking the flavor occasionally, until vegetables are slightly tender, 30 to 45 minutes.
  • Bring stock to a boil and add chicken, pouring in more water if chicken isn't completely covered in liquid. Bring poaching liquid to a boil; remove pot from heat and cover tightly with a lid until chicken is no longer pink in the center, about 15 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

This is a modified version of Rachael Ray's Chicken a la King. It uses no condensed soups and is healthier than most a la kings. She serves it over some Grands biscuits that had paprika or cayenne sprinkled on top of them before baking. I served this over brown rice for health. She used pimientos as well, I replaced them with celery. You can put this on top of any starch.

1 cup dry white wine
2 cups fat free chicken broth
1 bay leaf
1 lb boneless skinless chicken breast
1 tablespoon extra virgin olive oil
2 tablespoons butter
8 ounces sliced white mushrooms
1/2 small white onion, diced
1 green onion, sliced (optional)
2 tablespoons flour
1 stalk celery, thinly sliced
1 cup frozen peas or 1 cup canned peas
2 tablespoons fresh parsley (optional)
salt
black pepper, freshly ground
4 cups cooked brown rice

Steps:

  • In medium skillet, bring white wine and broth and 1 bay leaf to a boil. Gently add in chicken breasts and let them poach uncovered for 10 to 12 minutes (until cooked through).
  • In another larger skillet, heat oil and butter over medium heat. When butter melts into oil, add mushrooms, celery, onion, and green onion. Cook five minutes, until tender. Add flour and cook another minute.
  • Pull chicken from broth and set on cutting board. Discard bay leaf. Ladle cooking liquid into the mushrooms, whisking it inches Add peas to the sauce. Season to taste. Dice chicken into bite-sized pieces and add to the sauce.

½ teaspoon dried tarragon

Steps:

2 chicken breasts (boneless, skinless; about 1 pound)
1 1/2 to 2 cups chicken broth (fat-free and low-sodium, or water)
2 teaspoons dried mixed herbs
1 bay leaf

Steps:

  • Gather the ingredients.
  • Place the chicken breasts in the bottom of a small, heavy-bottomed pot. Make sure they fit in a single layer. Cover the chicken with broth or water. Add the herbs and bay leaf.
  • Begin heating the pot over medium heat, giving the liquid an occasional stir. Once the water temperature reaches 175 to 180, reduce the heat to low so that the water maintains this temperature.
  • Partly cover with the pot lid and cook for 10 minutes.
  • Turn off the heat completely and allow the chicken to remain in the hot liquid for about 15 minutes or until the internal temperature of the breasts reaches 155 F.

1 carrot, roughly sliced
1 celery stick, roughly chopped
3 large garlic cloves
½ small bunch parsley
½ small bunch dill
4 skinless chicken breasts
1l cold water

Steps:

  • Tip the carrot, celery and garlic into a large saucepan. Tie the herbs together in a bunch with a piece of kitchen string, then add to the pan with the chicken breasts, water and 2 tsp salt (adding a little more water if it doesn't quite cover the chicken). Bring to the boil, then immediately lower to a simmer and cook over a very low heat for 10-12 mins, or until the juices run clear in the thickest part of the breast.
  • Remove the pan from the heat and scoop out the chicken breasts from the poaching liquid. Slice or tear the chicken into pieces and use in salads, soups or sandwiches.
