FRESH PLUM KUCHEN



Fresh Plum Kuchen image

In late summer when plums are in season, this tender fruit-topped cake is delectable! The plum slices look so appealing arranged in circles on top. For variety, I sometimes substitute fresh pear or apple slices instead. -Anna Daley, Montague, Prince Edward Island

1/4 cup butter, softened
3/4 cup sugar
2 large eggs, room temperature
1 cup all-purpose flour
1 teaspoon baking powder
1/4 cup whole milk
1 teaspoon grated lemon zest
2 cups sliced fresh plums (about 4 medium)
1/2 cup packed brown sugar
1 teaspoon ground cinnamon

Steps:

  • In a small bowl, cream butter and sugar until light and fluffy. Beat in eggs. Combine flour and baking powder; add to the creamed mixture alternately with milk, beating well after each addition. Add lemon zest. Pour into a greased 10-in. springform pan. Arrange plums on top; gently press into batter. Sprinkle with brown sugar and cinnamon. , Place pan on a baking sheet. Bake at 350° for 40-50 minutes or until top is golden and a toothpick inserted in the center comes out clean. Cool for 10 minutes. Run a knife around edge of pan; remove sides. Cool on a wire rack.

This German/Austrian cake was very popular in my family and I still make it for my family. Although none of my relatives had a recipe for it written down, I found one for in Canadian Living magazine and adapted it to our tastes.

Number Of Ingredients 16

1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/4 cup granulated sugar
1/4 cup butter
1 egg, beaten
1/2 cup light cream
4 cups fruit, of your choice (e.g. blueberries, sweet cherries, chopped rhubarb, sliced peaches, apricots, plums or apples)
1 cup granulated sugar
1/4 cup all-purpose flour
1 egg, beaten
2 tablespoons butter, melted
1 cup all-purpose flour
3/4 cup granulated sugar
1/2 teaspoon baking powder
1/4 cup butter
2 tablespoons light cream

Steps:

  • In a bowl, mix together flour, baking powder and sugar; cut in butter finely.
  • Combine egg and cream; stir into dry ingredients, adding a little more cream if needed, to make a soft, sticky dough.
  • With floured hands, pat dough evenly into a lightly greased 12 x 8-inch or 9-inch square cake pan.
  • Filling: In a bowl, combine fruit, sugar and flour.
  • Combine egg and melted butter; gently mix into the fruit mixture.
  • Spread evenly over base in pan.
  • Topping: In a bowl, mix together flour, sugar and baking powder; cut in butter.
  • Stir in cream to make a crumbly mixture; sprinkle over the fruit.
  • Bake in a 325 degree F oven for 45 to 50 minutes or until golden brown.
  • To serve, cut into large squares.

This recipe is actually called "platz" in German (meaning "flat") and has been in my family since before I was born. The fresh fruits of summer make it a favorite, and it's simply wonderful warm out of the oven. 2 cups all-purpose flour
1/4 cup sugar
2 teaspoons baking powder
1/4 teaspoon salt
2 tablespoons shortening
1 large egg, room temperature
1 cup heavy whipping cream
6 fresh plums, sliced
TOPPING:
2/3 cup all-purpose flour
2/3 cup sugar
2 tablespoons cold butter
2 tablespoons heavy whipping cream

Steps:

  • Preheat oven to 350°. In a large bowl, combine flour, sugar, baking powder and salt; cut in shortening until mixture resembles fine crumbs. In another bowl, whisk egg and cream; add to crumb mixture, tossing gently with a fork until mixture forms a ball. , Press dough into a greased 13x9-in. baking dish. Arrange plums over crust., For topping, in a small bowl, combine flour and sugar; cut in butter until mixture resembles fine crumbs. Add cream, mixing gently with a fork until moist crumbs form. Sprinkle over plums. , Bake until a toothpick inserted in center comes out clean, 35-40 minutes. Cool on wire rack.

BASE
1/2 Cup Cream (or milk with 2 Tbsp of butter)
1/2 Cup Sugar
1 egg beaten
1 tsp baking powder
1 tap vanilla
1 1/3 Cups Flour (approx.)
FRUIT LAYER
3 cups sliced fruit (approx.) Tart plums or Rhubarb tastes great
1/2 Cup Sugar
2 tsp Minute Tapioca
CRUMBLE TOPPING
3/4 Cup Flour
1/2 Cup Sugar
1/2 Cup Butter

Steps:

  • 1) Mix together ingredients for base to form a soft dough. 2) Press dough into bottom of 9x13 baking pan to make a thin layer 3) Place plum halves cut side down, or other sliced fruit over dough 4) Sprinkle with sugar and minute tapioca 5) Mix together ingredients for crumble topping until crumbly in texture 6) Sprinkle topping over fruit layer 7) Bake at 350 for approximately 35 - 45 minutes, or until crumbs are lightly browned.

1/2 tsp salt
1/4 cup butter
1/4 cup lard
1/4 cup cold water(approx)
Filling:
4 cups quartered plums, (about 1-1/2 lb/750g)
1 cup granulated sugar
2 eggs
1 tsp vanilla
1/2 cup all-purpose flour
1 tsp baking powder
1 pinch salt

Steps:

  • Base: In large bowl, combine flour and salt. Using pastry blender, cut in butter and lard unto crumbly. Using fork, gradually stir in water until pastry holds together. Gather dough into ball. On pastry cloth and using stockinette-covered rolling pin, roll out pastry to fit 9-inch (2.5 L) square cake pan. Set aside. Filling: In bowl, combine plums with half of the sugar; spoon into base. In same bowl, beat eggs, vanilla and remaining sugar. In separate bowl, stir together flour, baking powder and salt ; stir into egg mixture. Drizzle evenly over plums. Bake in 425°F (220°) oven for 10 minutes; reduce heat to 350°F (180°C) for 30 to 40 minutes or until pastry is golden brown and fruit is tender when tested with point of knife.
