Tangy, sweet, hot, complex. easy to make. I started with a plum sauce and it morphed into something extraordinary. Hope you like it too.

Number Of Ingredients 13

3 cups washed pitted plums, with skins I used red but I suppose you could use other types as well. chop in food processor
1 (28 ounce) can chili sauce
1 cup brown sugar
1 cup white wine vinegar
2 fresh garlic cloves, diced and then crushed
1/2 cup white onion, minced
2 teaspoons jalapeno peppers, minced. i used canned
1/2 tablespoon sea salt
1 teaspoon dry mustard
1/2 teaspoon chili powder
1/2 teaspoon cayenne pepper
1/4 teaspoon ground black pepper
2 tablespoons olive oil

Steps:

  • Throughly chop plums in food processor then transfer into a cooking pot.
  • Add all remaining ingredients except olive oil stirring between additions.
  • Bring to a boil and reduce to a simmer.
  • simmer on stove for 15 minute or until the onions are translucent and it reaches a good saucy consistency.
  • Add the olive oil, stir and remove from heat.
  • After it cools down some you can put into a bowl or clean jars and transfer it into the refrigerator.
  • Will keep in fridge for up to two weeks.

Number Of Ingredients 12

5 plums
1 tablespoon minced fresh ginger
1 strip lemon zest (about 2x1/2in)
1 hot chili pepper, seeded (if you like it hot leave the seeds in)
2 scallions, both white and green parts finely chopped
1 large garlic clove, minced
3 tablespoons soy sauce
1 tablespoon molasses
2 tablespoons honey
1 tablespoon rice vinegar
2 teaspoons fresh lemon juice
1/2 cup water

Steps:

  • Combine all the ingredients in a saucepan and bring to a boil over medium heat. Reduce the heat to medium-low and simmer, uncovered, until the plums are very soft about 5 minutes. Transfer to a blender and puree then return to pan. Taste for seasoning and add additional soy sauce, honey or lemon juice if necessary to taste. The sauce will be sweet, sour and spicy.
  • Transfer to a bowl and serve warm or at room temperature. It's awesome with ribs or pork.

1 small onion, finely chopped
1 tablespoon vegetable oil
1 pound black plums (4), pitted and coarsely chopped
1 1/4 cups water
1/4 cup plum jam
2 teaspoons balsamic vinegar
2 teaspoons Dijon mustard
1/4 teaspoon black pepper
1/4 teaspoon salt

Steps:

  • Cook onion in oil in a 3- to 4-quart heavy saucepan over moderate heat, stirring occasionally, until golden, about 5 minutes. Stir in remaining ingredients and simmer, uncovered, stirring more frequently toward end of cooking, until plums fall apart and sauce is thickened, about 1 hour. Cool to room temperature. Serve with pork or chicken.

This is a recipe that was given to me by my next door neighbor who makes the most unbelievable smoked ribs....this is the sauce recipe that he uses to baste them..this makes the best tasting smoked ribs around!

1/3 cup flat beer
1/8 cup fresh lemon juice
1/8 teaspoon liquid smoke

1 tablespoon brown sugar
1/2 teaspoon onion powder
1 tablespoon chopped fresh garlic
1 tablespoon chopped shallots or 1 tablespoon finely chopped green onion

  • Baste on ribs once every half hour while smoking.

1/4 cup finely chopped shallot
1/4 cup maple syrup
2 1/2 tablespoons red wine vinegar

1/2 teaspoon fresh ground black pepper
1/4 teaspoon ground red pepper

Steps:

  • Bring all ingredients to a boil in a medium saucepan. Cover, reduce heat, and simmer 5 minutes.
  • Uncover and simmer 15 minutes or until thick, stirring occasionally.
  • Cool 10 minutes, then place mixture in a food processor. Process until smooth.

2 tablespoons olive oil
1/2 cup onion, finely chopped
4 garlic cloves, finely minced
1 (16 ounce) bottle chili sauce (or ketchup)
1/3 cup apple cider vinegar
2 tablespoons prepared mustard
2 tablespoons liquid smoke
2 tablespoons hot sauce (TRAPPEY'S Louisiana Hot Sauce)
1/4 cup light brown sugar
1/2 cup honey
2 tablespoons Worcestershire sauce
1 tablespoon celery seed
3 tablespoons horseradish (optional)

Steps:

  • In a med. saucepan, sauté the onion & garlic in 2 T. olive oil until lightly brown.
  • Add remaining ingredients & bring to a boil, over medium-high heat, stirring constantly. Set aside to cool.
  • -- use on ribs or chicken -- refrigerate any leftover sauce.

5 to 6 pounds pork spareribs
3/4 cup reduced-sodium soy sauce
3/4 cup plum jam or apricot preserves
3/4 cup honey
2 to 3 garlic cloves, minced

Steps:

  • Cut ribs into serving-size pieces; place with bone side down on a rack in a shallow roasting pan. Cover and bake at 350° for 1 hour or until ribs are tender; drain. , In a small bowl, combine the remaining ingredients; brush some of the sauce over ribs. Bake at 350° or grill over medium heat, uncovered, 30 minutes longer, turning and basting occasionally.
