GRILLED PLUM AND PORK KEBABS



Grilled Plum and Pork Kebabs image

Plums and pork are a perfect pairing for these delicious kebabs, and an Asian plum dipping sauce is the crowning touch.

1/4 cup tamari or soy sauce
1/4 cup rice vinegar
3 tbsp honey
3 tbsp hoisin sauce
2 tbsp sesame oil
1 clove garlic (minced or crushed)
1 3" knob of ginger (peeled and grated)
1/2 tsp red pepper flakes
1 lb pork tenderloin (cubed)
8 black or purple plums (halved and pitted)
1 red onion (quartered and divided into slices)
Chopped fresh cilantro or flat-leaved parsley (for garnish)

Steps:

  • Whisk first 8 ingredients together for the marinade, and pour into a zip lock bag.
  • Add pork and plums. Seal and refrigerate for at least an hour, or overnight.
  • Heat grill to high.
  • Divided between 8 soaked wooden skewers, or metal ones, thread pork, plums, and onion.
  • Lightly oil grill. Grill, covered, about 6 minutes, turning often, until pork is no longer pink inside.
  • Garnish with cilantro or parsley
  • Serve with Asian Plum Sauce for dipping.

A great sweet, spicy glaze for pork roast or chicken. Any leftover can be served with the meat as a dip.

1 tablespoon cooking oil
3 cloves garlic, minced
¼ cup finely chopped green onions
1 (12 ounce) jar plum jam
½ cup chile sauce
¼ cup white grape juice
1 tablespoon fresh lime juice
½ teaspoon ground allspice

Steps:

  • Heat the oil in a saucepan over medium heat. Add the garlic and green onions; cook and stir until green onions are wilted, about 3 minutes. Stir in the plum jam, chili sauce, grape juice, lime juice, and allspice. Bring mixture to a boil; reduce heat to medium-low, and simmer until sauce thickens, about 30 minutes.

4 to 4-1/2 pounds bone-in country-style pork ribs
1 bottle (12 ounces) chili sauce
1 jar (12 to 13 ounces) plum preserves or preserves of your choice
1/4 cup soy sauce
1/4 teaspoon hot pepper sauce

Steps:

  • Place ribs in two ungreased 13x9-in. baking dishes. Bake, uncovered, at 350° for 45 minutes; drain. , In a small saucepan, combine the remaining ingredients. Bring to a boil, stirring occasionally. Remove from the heat. Set aside 3/4 cup sauce for serving., Brush ribs with some of the remaining sauce. Bake, uncovered, until ribs are tender, 30-45 minutes, turning and basting frequently with remaining sauce. Serve with reserved sauce.

  • Meanwhile, stir vinegar and preserves into drippings; cook over medium-high heat, stirring constantly, 3 to 5 minutes or until slightly thickened. Remove from heat; stir in thyme. Pour over pork and plum mixture.
