Easy recipe for fried ripe plantains or platanos maduros fritos, a must-have side dish for so many Latin dishes.

2 ripe plantains
Oil for frying (can use avocado, sunflower, peanut oil)
Cheese for sprinkling or melting on top: You can use quesillo

Steps:

  • Wash and peel the plantains
  • Slice the plantains, the best way to slice them is either diagonally or cut the plantain in half and slice lengthwise. The plantain can also be sliced lengthwise full size, but the smaller diagonal or half slices are easier to manage.
  • Heat the oil over medium heat in a large frying pan and add the plantains
  • The plantains will cook very quickly, make sure to turn them before they burn and cook until golden on each side. You can use a spatula or a fork to turn them. If the plantain flesh is still pink or white inside it means that it is not yet fully cooked.
  • Thicker slices and less ripe plantains will need longer to cook, and maybe more oil.
  • Place the cooked plantains on a paper towel to drain any excess oil.
  • Serve warm

Use the pinton variety of plantain in this recipe (yellow with black spots) as it holds its shaped after cooked. Published in the June 2008 issue of "Cooking Light." I am a big plaintain fan but don't eat them often even though they are very easy to find in grocery stores here in Nebraska because of our Mexican population. This is a simple and easy way to prepare them that doesn't require frying. Posted for ZWT 4 - Central and South America.

2 plantains, yellow with some black spots
1 tablespoon canola oil
1/4 teaspoon kosher salt

Steps:

  • Peel plantains; cut each into thirds crosswise. Cut each piece into 4 (2-inch) lengthwise slices.
  • Heat oil in a large nonstick skillet over medium heat. Add plantains to pan; cook 3 minutes on each side or until lightly browned. Transfer plantains to a plate; sprinkle with salt.

6 plantains
3 tablespoons white sugar
1/4 teaspoon salt
2 tablespoons butter

Steps:

  • Peel plantains, cut into 1/2" slices. Toss with sugar and salt.
  • Saute in butter, over medium-high heat, about 5 minutes, or until lightly browned and tender.

  • First, cut the tips of the banana with a sharp knife, then make a slit alongside the plantain from top to bottom and remove the peel. This step is for whole fried bananas or sliced.
  • Slice plantain diagonally. As you can see, the top two pictures show a very ripened banana, and in the two pictures at the bottom is a firmer banana that will hold better when slicing.
  • Heat oil in a large nonstick frying pan over a medium-high heat. Wait until the oil is hot, but not smoking, and add the bananas. Fry the small slices for 4-5 minutes on each side until golden brown. Remove and place on a plate lined with paper towel to absorb any excess fat.
  • Whole fried plantains will take longer to cook. Gently turn them to make sure that every side is cooked completely. They will take about 15-18 minutes to cook. After they’ve been fried, remove and place on a plate covered with paper towels.
